- Preheat the oven to 350˚F. Lightly spray a 9x13 inch baking dish with cooking spray and set aside.
- In a large bowl, mix together the cheese, salsa, onion, sour cream, soup, pepper and olives until fully combined. Fold in the hash browns.
- Pour into the prepared baking dish and bake in the preheated oven for 50 minutes. Sprinkle the top with cherry tomatoes and parsley, and cook for an additional 10 minutes.

- Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with 1 tablespoon of the butter.
- Melt the remaining 4 tablespoons butter in a large saucepan over medium-high heat. Add the garlic powder, onion, 1/2 teaspoon salt and a few grinds of pepper and cook until the onion is softened, about 5 minutes. Add the flour and cook, whisking, until sizzling all over and light golden, about 2 minutes. Whisk in the half-and-half and chicken broth, return to a simmer and cook until thickened, about 1 minute. Remove from the heat and stir in the sour cream and 1 1/2 cups of the Cheddar. Add the hash browns and toss until coated in the sauce. Add salt and pepper to taste.

- Preheat the oven to 400 degrees F. Line a baking sheet with foil and coat with nonstick spray; set aside.
- Cook the bacon in a large nonstick pan over medium heat until golden brown, about 5 minutes. Transfer with a slotted spoon to a plate lined with paper towels. Spoon 2 tablespoons of the bacon fat into a small bowl and reserve. Leave the remaining bacon fat in the pan.
- Increase the heat under the pan to medium high, add the olive oil and hash browns and cook, stirring occasionally to break apart the potato strands and brown them evenly, until golden brown, about 15 minutes. Transfer to a plate.
