Mâche and Radicchio Salad With Beets and Walnut Vinaigrette image

Of all the greens I worked with this week, mâche has the sweetest, mildest flavor. It goes nicely with the bitter radicchio, sweet beets and the nutty vinaigrette. Mâche is so delicate that it takes very little dressing.

Number Of Ingredients 13

1 tablespoon plus 2 teaspoons sherry vinegar
1 teaspoon balsamic vinegar
Salt to taste
1/2 teaspoon Dijon mustard
1 very small garlic clove, puréed
4 tablespoons extra virgin olive oil
1 tablespoon walnut oil
2 medium beets, roasted, peeled and sliced thin in half-moons
1 4-ounce (or 5-ounce - they vary) bag of mâche, rinsed and spun dry
1 small radicchio, outer leaves removed, quartered and cut crosswise into thin slivers (chiffonade) (about 2 cups chiffonade)
1/4 cup broken walnuts
1 tablespoon chopped fresh tarragon (optional)
1/2 ounce shaved Parmesan (about 2 tablespoons)

Steps:

  • Mix together the dressing ingredients.
  • Place the sliced beets in a medium bowl and toss with 2 tablespoons of the dressing.Place the sliced beets in a medium bowl and toss with 2 tablespoons of the dressing.
  • In a large salad bowl combine the mâche, radicchio, walnuts and tarragon, if using. Toss with the remaining dressing. Add the beets and Parmesan and toss again, or arrange the beets and Parmesan on top of the greens, and serve.

1 yolk from a large hard-boiled egg
2 3/4 teaspoons white-wine vinegar
1 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup olive oil
16 cups loosely packed mâche (lamb's lettuce; see above)

Steps:

  • Crumble yolk into a blender, then add vinegar, mustard, salt, and pepper and blend until combined well. With motor running, add oil in a slow stream, blending until combined well.
  • Toss mâche with vinaigrette just before serving.

300 grams lamb's lettuce
80 milliliters Chicken broth
2 Tbsps White vinegar
4 Tbsps olive oil

ground peppers
120 grams Smoked bacon
1 tsp butter

Steps:

  • Peel and rinse potato, dice into small cubes. Cook in chicken broth for about 10 minutes or until tender. Rinse and spin dry mache lettuce. Puree potato with chicken broth and add vinegar and olive oil.
  • Season with salt and pepper. Cut bacon into thin strips. Heat butter in a pan and cook bacon for about 3 minutes or until crispy. Arrange lettuce on plates and drizzle with warm potato vinaigrette. Garnish with bacon and serve.

This tasty vinaigrette comes from the Cookin' Cajun Cooking School in New Orleans. We love it, especially made with Steen's Louisiana Cane Vinegar. Serve it over salad greens, chopped purple cabbage and chopped golden peppers for a "mardi gras" salad.

Kosher salt and freshly ground black pepper
1/4 cup pine nuts or slivered almonds, toasted

Steps:

  • In a large bowl, combine the greens, parsley, basil and other herbs. Put the vinegar in a small bowl and, whisking constantly, slowly drizzle in the olive oil in a thin stream. Season the vinaigrette with salt and pepper.
  • Dress the salad with the vinaigrette, tossing to coat the leaves. Sprinkle the nuts on top and serve.

2 tablespoona fruity extra virgin olive oil
4 -6 teaspoons fresh lemon juice
1 medium pink grapefruit
1 medium avocado, sliced

  • For the mustard vinaigrette:.
  • In the salad bowl, mix mustard well with oil; add juice and continue to blend until thoroughly blended.
  • For the salad:.
  • Peel, section and de-membrane the grapefruit and place in salad bowl.
  • Add sliced avocado and a few handfuls of mache leaves or greens.
  • Toss gently.
  • Salt to taste.
  • Sometimes I simply halve the grapefruit and scoop out the sections with a grapefruit spoon. This is messier and less attractive than carefully removing all the membranes of each grapefruit section, but it saves a little time.
