Categories     Dinner

Number Of Ingredients 18

4-5 pound (2-2.5 kg) pork loin roast, (trimmed of skin and fat)
1 1/2 tablespoons olive oil, (divided)
2 teaspoons paprika ((mild or smoked))
1 teaspoon brown sugar
1 teaspoon each garlic powder and onion powder
1/2-1 teaspoon red chili powder, ((optional))
2 teaspoons coarse salt
1/2 teaspoon black cracked pepper
1/2 cup (6-oz | 170 g) honey
1/2 cup (125 g | 4-oz) unsalted butter
6 cloves garlic, (finely chppped or minced)
3 tablespoons low sodium soy sauce
2 tablespoons rice wine vinegar, ((or cider vinegar))
Good pinch of salt
1/2 teaspoon cracked black pepper
1/2 cup low sodium stock (or broth), (beef or chicken)
1/2 cup water
4 teaspoons cornstarch (cornflour)

Steps:

  • Pat dry pork with paper towel. Combine 1 tablespoon of oil with rub ingredients. Season pork, rubbing the mixture into the meat.
  • Heat remaining oil (about 2 teaspoons) in a large pan or skillet over medium heat. Sear pork all over until golden browned, rotating the pork around to avoid spices burning.
  • Melt butter in the same pan the pork was in while scraping up any leftover bits in the pan. Add garlic and sauté for 1 minute until fragrant. Stir in remaining sauce ingredients; bring to a rapid simmer for 1 minute.
  • Place seared pork in a 6-qt (litre) slow cooker. Pour sauce over pork; cover with lid and cook on LOW heat setting for 4 - 5 hours.
  • Transfer pork onto serving dish and tent loosely with foil. Let rest for 10-15 minutes.
  • While pork is resting: pour juices from the slow cooker bowl into a pot large enough to fit the liquid. Bring to a simmer over medium-high heat.
  • Mix 2 tablespoons of the juices with 4 teaspoons of cornstarch (cornflour). Whisk cornstach slurry into sauce and let simmer for a good 5 minutes, or until thickend into a syrup-like consistency. (For a thicker sauce, repeat this step with 1 teaspoon cornstarch mixed with 2 teaspoons water. Add into sauce and cook until thickened (please note: sauce will thicken as it cools). Continue this step until reaching your desired consistency.)
  • Slice pork and serve drizzled with Honey Garlic Butter Sauce.
  • Preheat oven to 350°F (175°C).
  • Place seared/browned seasoned pork in a roasting pan.
  • Prepare sauce, as above. Reserve 1/2 cup sauce for basting. Pour remaining sauce over pork.
  • Add in 1/2 cup stock and 1/2 cup water around the pork.
  • Cover and roast for 20 minutes. Baste with half of the reserved sauce and continue roasting, uncovered, for a further 15 minutes. Baste again and roast for a further 10-15 minutes, until a meat thermometer registers 145°F (62.5°C) in the thickest part(If pan dries out while cooking (it shouldn't), add a little more water.)
  • Transfer pork onto serving plate and baste with pan juices. Tent loosely with foil and let rest for 10-15 minutes..
  • Scrape up any browned bits leftover in the pan, mixing them through the pan juices and pour juices into a pot. Whisk in cornstarch/stock and water mixture and bring to a simmer. Slowly add in 1/4 cup water, whisk, then add a nother 1/4 cup if needed, until reaching a honey-like consistency. (Please note: sauce will thicken as it cools).
  • Slice pork and drizzle with Honey Garlic Butter Sauce.

Categories     main-dish

Time 1h35m

Yield 6 to 8 servings

Number Of Ingredients 8

2 tablespoons Dijon mustard
1 tablespoon fresh thyme leaves, chopped
One 3- to 3 1/2-pound boneless pork loin roast (remove the string if your roast has been tied)
Kosher salt and freshly ground black pepper
1 tablespoon vegetable oil
2 medium red onions, each cut through the core into 8 intact wedges
2 cups hard apple cider
One 7-ounce bag mixed dried fruit or 1/4 cup each dried apples, dried apricots, dried pears, prunes and golden raisins

Steps:

  • Preheat the oven to 400 degrees F. Stir together the mustard and thyme in a small bowl. Season the pork roast all over with a generous amount of salt and pepper, then rub the top with the mustard-thyme mixture (leave the bottom and sides bare).
  • Heat the oil in a large, ovenproof skillet over medium-high heat. Add the onions and cook, undisturbed, until dark golden brown in spots, about 2 minutes. Turn the onion wedges over and cook for 2 minutes more. Pour in the cider, stirring to scrape up any bits stuck to the bottom of the skillet. Scatter the dried fruit evenly in the skillet and remove from the heat.
  • Put the roast in the skillet mustard-side up, then bake until an instant-read thermometer inserted in the middle of the roast reads 145 to 150 degrees F, about 1 hour (the roast will continue cooking once you remove it from the oven). Transfer the roast to a cutting board, tent with foil and let rest for 15 minutes.
  • Cut the roast into 1/2-inch-thick slices. Season the pan sauce, onions and dried fruit with salt and pepper and serve with the pork.

DAD'S BASIC MOIST PORK ROAST

Dad's Basic Moist Pork Roast image

This is the best and most basic way to ensure a juicy, perfectly-cooked pork roast every time. This recipe really requires a good thermometer -- either a $10 instant-read type or, even better, the type that pierces the meat and stays in place while connected to an outside-the-oven monitor. If you can swing that, then try your favorite marinade or rub on this recipe. Use your imagination on the rubs and marinades, but ensure you bring your roast directly from the fridge to the roasting pan -- Dad's recipe works best that way.

MY VERY OWN VERY AWESOME PORK LOIN ROAST

My Very Own Very Awesome Pork Loin Roast image

This is a very cozy way to make a pork loin. This is a favorite among my family and friends. The key to keeping the pork moist is searing it before it goes into the oven. I use basic vegetables but parsnips and other root vegetables can be added. The sauce adds a great flavor and the two mix perfectly.

Categories     One Dish Meal

Time 1h15m

Yield 4 serving(s)

Number Of Ingredients 17

1 lb pork loin
4 garlic cloves, slivered
5 tablespoons olive oil
1 lb red potatoes
4 large carrots
2 celery ribs
2 tablespoons butter
italian seasoning
garlic salt
herbes de provence
pepper
1/3 cup peach jelly or 1/3 cup jam
1/3 cup strawberry jelly or 1/3 cup jam
1 large orange, zest and juice
4 tablespoons sugar
3 tablespoons lemon juice
1/2 cup orange juice

Steps:

  • Start by preheating the oven to 350 Fahrenheit.
  • Chop the carrots and celery into 1 inch pieces, thicker ends may be cut lengthwise, and chop the red potatoes into quarters, halves if using mini red potatoes.
  • Toss to coat the vegetables in 2 tbl of the olive oil and place them at the bottom of a roasting pan with roasting rack. Add 2 tbl of cubed butter to vegetables.
  • Season the vegetables with Italian seasoning, pepper and garlic salt to taste.
  • Trim fat from loin if desirable, I leave the fat on so the vegetables have the favor of the pork. Make slits along the loin and insert slivers of 3 garlic cloves.
  • Season the loin with pepper, garlic salt and seasoning salt to taste.
  • Take remaining 3 tbl of olive oil and heat in a large skillet over medium heat. Add the last slivered garlic clove to the oil and brown. Once the garlic turns golden begin to remove it. If you leave the garlic in to long it will burn give a bitter taste.
  • Sear the loin in the skillet. You're going to do this for less than a minute per side. You want to just barely brown the meat. We do this to retain the juices during roasting.
  • Transfer the loin to the roasting rack and coat the top with Herbs De Provence.
  • Place into pre-heated oven for about 30-45 minutes. Measure the internal temperature for proper doneness, about 155-170.
  • While the pork is roasting the sauce can be prepared. Place all sauce ingredients into a medium sauce pan. Heat to a boil over medium heat.
  • Once sauce begins to boil stir constantly till it's reduced by 1/3 or about 10 minutes. Sauce will thicken when it cools a bit.
  • Once roast is done. Let set for about 10 minutes for juices to settle. Carve into slices and serve along side the roasted vegetables. Spoon sauce over pork slices and enjoy.
