1/4 cup canola oil
1 jalapeno pepper, seeded and finely chopped
1 small or medium red onion, 1/4 finely chopped, the remainder thinly sliced
1 garlic clove, minced or grated
1 (15-ounce) can black beans, drained
1 teaspoon ground cumin, 1/3 palmful
Salt and pepper
1/2 cup mango chutney
2 limes
2 tablespoons hot sauce
3 tablespoons honey
A handful of fresh cilantro, finely chopped
1/2 medium head of red cabbage, shredded
4 mahi-mahi fillets, 6 ounces each
1 tablespoon grill seasoning, such as McCormick's Montreal Steak Seasoning
8 corn tortilla taco shells (hard shell)
8 flour tortillas
1 cup creme fraiche

Steps:

  • Heat a tablespoon of the oil in a skillet over medium heat and add the jalapeno, finely chopped red onion, and garlic. Cook 3 to 4 minutes, then add the beans and cumin and mash together. Season the beans with salt and pepper and fold in the chutney. Reduce the heat to low to keep warm, stirring now and then to keep them from burning. If the beans dry out before you are ready to use them add a splash of water.
  • Zest one of the limes and set aside. Combine the juice of both limes, the hot sauce, honey, 2 tablespoons of the canola oil, salt, and pepper with the sliced onions, cilantro and shredded cabbage. Toss to combine.
  • Heat an outdoor grill to medium or preheat the broiler. Season the fish with the remaining tablespoon of oil, 2 teaspoons of lime zest and the grill seasoning. Cook the fish on the grill with the lid closed or under the broiler for 8 minutes total, until cooked through, turning once.
  • Crisp the taco shells and blister the tortillas on the grill or in the oven. Glue the softened flour tortillas onto the crisp taco shells with a few spoonfuls of mashed black beans. Fill each tortilla-wrapped taco shell with half a piece of fish, flaked, and top with some cabbage slaw and creme fraiche. Serve 2 tortilla-wrapped tacos per person.

My Texas Fish Tacos image

These tacos are plain incredible. We were expecting them to be good but were overwhelmed by the impact of all the flavors when the ingredients were mixed together. The marinade for the fish would be fun to try in other fish dishes as well. We think it would be good to use on the grill or even on a plank. The hint to squeeze the heated lime on the taco really hits the spot! Don't forget.

4 tablespoon(s) Old Bay seasoning
- olive oil to coat pan
1 pound(s) white fish 1 inch wide by 3-4 inch long, like bass or cod
TO ASSEMBLE
10 - 8-inch tortillas
1 cup(s) shredded white cabbage
1 cup(s) shredded red cabbage
1 cup(s) chopped cilantro
1/2 cup(s) thinly sliced red onion
2 - avocados, sliced

Steps:

  • SAUCE: In a medium bowl, mix together yogurt and mayo. Gradually stir in fresh lime juice until consistence is slightly runny, then add jalapeno, capers, oregano, cumin, and cayenne.
  • FISH: In a medium bowl, combine the lime juice, tequila, cumin, salt and pepper. Mix throughly. Add fish and toss to coat; marinate for 10 minutes.
  • After marinating, coat fish with flour and Old Bay. Heat just enough oil to coat the bottom of the pan and lightly fry your fish until golden brown.
  • Place fried fish on paper toweling to drain.
  • Drizzle the same pan with additional olive oil once again and cook tortillas until limp but not crispy. HINT: Use two tortillas for each taco so they aren't as messy to eat.
  • Add your toppings and enjoy! HINT: Take a whole lime and put it in the microwave for about 8 seconds. The lime will be oh-so juicy! Squeeze it all over the taco once you have it ready to eat! YUM YUM!

There are already a lot of fish taco recipes on Zaar. But this one is a little different than the others. I found this recipe on the Internet somewhere. We really like it. I serve it with Recipe #232299, instead of the cabbage and sauce that are suggested.

oil (for frying, peanut oil recommended)
1 lb shark fillets or 1 lb other firm fish, such as mahi mahi
steamed tortilla
3/4 cup flour
1/2 teaspoon baking powder
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper
salt and pepper
1 egg yolk
4 -6 ounces beer
1/2 cup mayonnaise
1 tablespoon cilantro
1/2 lime
lime, for squeezing
2 cups shredded cabbage
1 ripe avocado, sliced

Steps:

  • Batter: In a medium bowl, mix the flour, baking powder, spices, beer and egg yolk. If the mixture is too thick, add a bit more beer, but don't let it get watery. You want it thick to coat the fish.
  • Cover the batter and refridgerate for at least 3 hours. It can sit over night. Variation: whip up an egg white and fold it into the batter just before dipping the fish. (I've never added the egg white -- sounds interesting.).
  • Sauce: If you will be using the sauce for a condiment, combine all the ingredients. Use enough lime juice to make it "saucy".
  • Fish: Cut the fish into pieces that will fit well into the taco after they are fried. I usually cut mine about 1 inch by 1 inch by 3 inches.
  • Heat a good 1/2 inch of oil to about 375 degrees. Once the oil is hot, dip the fish into the batter to get it well coated, one piece at a time. Do not put too many pieces into the pan at once. Only cook a few at a time. While the batter is still thick on the fish and dripping, drop it into the oil and fry it about 4-5 minutes, turning to the other side about halfway through.
  • To serve: Serve with steamed tortillas. You can serve with the sauce, cabbage, lime and avocado as suggested above (put fish into taco, add avocado, cabbage, top with sauce and a squeeze of lime). Or lately we just serve with Spicy Chipotle Slaw inside the tortilla with the fish. Usually two pieces of fish per taco.

1 lb mahi mahi or 1 lb catfish
2 medium limes, halved
1 medium garlic clove, finely chopped
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
2 tablespoons vegetable oil, plus more for oiling the grill grates
kosher salt
fresh ground black pepper
1/2 small cabbage, green cored and thinly sliced or 14 ounces cabbage
1/2 medium red onion, thinly sliced
1/4 cup fresh cilantro, coarsely chopped
soft corn tortilla
sliced avocado, for garnish (optional)
guacamole, for garnish (optional)
salsa, for garnish (optional)
sour cream, for garnish (optional)
hot sauce, for garnish (optional)

Steps:

  • Place the fish in a baking dish and squeeze a lime half over it. Add the garlic, cumin, chili powder, and 1 tablespoon of the oil. Season with salt and pepper and turn the fish in the marinade until evenly coated. Refrigerate and let marinate at least 15 minutes. Meanwhile, make the slaw and warm the tortillas.
  • Combine the cabbage, onion, and cilantro in a large bowl and squeeze a lime half over it. Drizzle with the remaining 1 tablespoon oil, season with salt and pepper, and toss to combine. Taste and add more salt and pepper if necessary; set aside.
  • Warm the tortillas by heating a medium frying pan over medium-high heat. Add 1 tortilla at a time, flipping to warm both sides, about 5 minutes total. Wrap the warm tortillas in a clean dishcloth and set aside while you prepare the fish.
  • Brush the grates of a grill pan or outdoor grill with oil and heat over medium-high heat until hot. Remove the fish from the marinade and place on the grill.
  • Cook without moving until the underside of the fish has grill marks and is white and opaque on the bottom, about 3 minutes. Flip and grill the other side until white and opaque, about 2 to 3 minutes more. (It's OK if it breaks apart while you're flipping.) Transfer the fish to a plate.
  • Taste the slaw again and season as needed with more lime juice. Slice the remaining lime halves into wedges and serve with the tacos. To construct a taco, break up some of the cooked fish, place it in a warm tortilla, and top it with slaw and any optional garnishes.

Now that we live in Colorado I have to make all our favorite seafood and Mexican dishes to our liking! Serve with creamy slaw and add avocado slices or any favorite taco toppings.

¼ cup olive oil
¼ cup chili powder
2 teaspoons Mexican oregano
2 teaspoons cumin seeds, toasted and ground
1 teaspoon ground chipotle chile powder
1 teaspoon salt

1 lime, zested and juiced
1 ½ pounds tilapia fillets
½ (8 ounce) package cream cheese, softened
2 tablespoons plain yogurt
2 cloves garlic, minced
1 chipotle pepper in adobo sauce, or more to taste
½ teaspoon ground cumin
2 tablespoons olive oil
12 (6 inch) corn tortillas, warmed

Steps:

  • Mix 1/4 cup olive oil, chili powder, Mexican oregano, cumin, chipotle powder, salt, coriander, lime zest, and lime juice together in a gallon-sized zip-top bag. Add tilapia and toss gently until well coated. Marinate for 30 minutes to 2 hours.
  • Meanwhile, combine cream cheese, yogurt, garlic, chipotle in adobo, and cumin for spread in a bowl. Set aside.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Coat a grill basket with 2 tablespoons olive oil; place fish into the prepared basket.
  • Cook the fish on the preheated grill just until it flakes easily with a fork, about 10 minutes.
  • Serve on warm tortillas with chipotle spread.

  • Trim and discard stems of 2 jalapeños, cut in half lengthwise, then coarsely chop. Coarsely chop three-quarters of 1 bunch of cilantro leaves with tender stems.
  • Transfer jalapeños and chopped cilantro to a blender or food processor. Add ⅓ cup vegetable oil and 2 garlic cloves. Blend on high speed until a coarse purée forms. Scoop out and transfer 2 Tbsp. sauce to a medium bowl (you’ll be building your pico de gallo in this.) Pour remaining sauce evenly over fish, spreading with the back of a spoon.
  • Bake fish until it flakes away with light pressure from the tines of a fork in the thickest part, 18–25 minutes, depending on the thickness of fillet and what type of fish you’re using. Start checking on the early end of things so it doesn’t overcook!
