MY HOMEMADE TARTAR SAUCE
My husband challenged me to make my own version of tartar sauce. This is the result of his challenge. ;o) The seasoning amounts in the recipe are estimated because I don't measure anything. I think it's especially good with broiled Tilapia. Enjoy!

- In a small bowl, combine all ingredients.
- It is best to make this about an hour before you plan to serve it so the flavors can blend.
- Please note that we like a lot of onion in our tartar sauce so if you don't, you may want to adjust the amount used.
TARTAR SAUCE I
Simple tartar sauce for deep fried seafood. It is better if prepared several hours before you will be using it, but it can be used immediately. Store for up to 3 days in the refrigerator.

MOM'S TARTAR SAUCE
Some people think tartar sauce is no big deal. But I've tasted some pretty darn bad versions (and I have yet to try a store-bought version that tastes good), so here's my favorite: my mom's recipe. The most important thing about tartar sauce, in my opinion, is that it be not at all sweet, but savory and rich instead (if you like sweet tartar sauce, this isn't the recipe for you).

- Mix together the mayo, lemon juice, dill pickles (NOT sweet pickles), onion flakes, and chives (if using).
- Stir well.
- Stir in 3-4 drops of balsamic vinegar, taste, and add more if you like.
- Serve with any kind of fish.
- Refrigerate any leftovers in tightly covered container.
- Note: although Mom doesn't add the balsamic, herself, I love it and add it regularly. Just don't tell her. ;).

TARTAR SAUCE
I haven't purchased tartar sauce in many years. We do not like any hint of sweetness, preferring the combination of dill pickle, lemon, onion and Worcestershire to flavor the sauce. This will keep a long time in the refrigerator. Note to World Tour participants - this recipe is included in the British category. Similar sauce recipes (making the mayonnaise from scratch, of course) go back to Medieval times, and have been found in British books as early as 1685. It's also wonderful served with fish and chips, if you aren't very fond of malt vinegar.
