1 lb ground beef (15% fat)
1 medium onion (finely diced)
1 tsp salt
1/2 tsp ground cumin
1/4 tsp black pepper
2 garlic cloves (minced)
24 oz marinara sauce
1/4 cup water
1 tsp granulated sugar
12 oz spaghetti (to serve)

Steps:

  • Place a pot or dutch oven over medium heat, add 1 lb ground beef and sautee, breaking it up with a spatula until no longer pink (5 minutes).
  • Add chopped onion, 1 tsp salt, 1/2 tsp ground cumin 1/4 tsp pepper and sautee until onions are soft.
  • Add garlic and sautee another 1-2 minutes until fragrant then pour in 1 jar of marinara sauce, 1/4 cup water and 1 tsp sugar. Cover and simmer over low heat 20 minutes.
  • Meanwhile, cook 12 oz of spaghetti in salted water to desired doneness according to package instructions then drain. Serve sauce with cooked pasta.

1 pound pork sausage
2 ounces sliced pepperoni sausage
1 green bell pepper, chopped

Steps:

  • In a large stockpot cook the ground beef, sausage, pepperoni, green bell pepper, red bell pepper, garlic, onion, carrots and celery. Cook until beef is no longer pink. Drain into a large colander to drain grease.
  • To the large saucepot, add the mushrooms, tomato sauce, tomatoes, tomato paste, bouillon cubes, bay leaves, thyme, oregano, basil, crushed red pepper, black pepper, sugar, and beef broth and stir well. Pour the meat mixture into the pot. Bring to a boil, reduce heat and cover. Simmer for 2 hours.

I think we can all agree homemade is best, but not always possible! Homemade spaghetti sauce from scratch is actually one of those things that's really not hard to make, but it can take a little time to simmer before all the flavors really come together. That's why I created this Semi-Homemade Spaghetti Sauce recipe!

1 tablespoon olive oil
1/2 onion (diced)
1 or 2 carrots (cut into small dice)
1 or 2 celery ribs (cut into small dice)
2 cloves garlic (minced)
1 pound ground beef
salt (to taste)
pepper
1/2 cup red wine (optional)
1 26 ounce jar spaghetti sauce
basil (fresh, for serving)
oregano (fresh, for serving)
Parmesan cheese (freshly grated, for serving)
whole-wheat pasta (cooked, for serving)

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the onion, carrot, and celery and cook while stirring until soft but not brown, 4 to 5 minutes.
  • Stir in the garlic and cook for another minute.
  • Add the ground beef to the pan and turn the heat up to medium high. Brown the meat while breaking it up with a spatula.
  • Drain off the fat and discard (I do this by putting the lid over top then tilting it to empty the grease through a small crack into a coffee mug or other heat-proof container). Season with salt and pepper.
  • Add the red wine to the pan (if using) and cook until almost completely boiled off.
  • Pour in the sauce and bring to a light simmer.
  • Serve over noodles and garnish with fresh basil or oregano and Parmesan cheese.

5 pounds ground beef (I used ground round)
3 tablespoons olive oil
2 large yellow onions, diced
6 cloves garlic, minced
Two 28-ounce cans crushed tomatoes
One 14-ounce can crushed tomatoes
One 6-ounce can tomato paste
1 jar good store-bought marinara sauce (you can use another jar if you like the sauce to be more saucy than meaty)
2 tablespoons sugar
2 teaspoons kosher salt
1 teaspoon ground oregano
1 teaspoon ground thyme
1/2 teaspoon crushed red pepper, optional
4 bay leaves
1/4 cup finely minced fresh parsley or 3 tablespoons parsley flakes, plus more for serving
8 fresh basil leaves, chopped
1 whole rind from 1 wedge Parmesan, optional
1/2 cup grated Parmesan, optional, plus more for serving
2 pounds spaghetti, cooked al dente and tossed with olive oil, for serving

Steps:

  • In a large pot over medium-high heat, brown the ground beef until totally browned. Remove the meat from the pot with a slotted spoon and put into a bowl. Set aside.
  • Discard any grease in the pot, but do not clean the pot. Drizzle in the olive oil. When it is heated, throw in the diced onions. Stir it around for 1 1/2 minutes, and then add the garlic. Stir and cook for an additional minute.
  • Add the crushed tomatoes, tomato paste and marinara sauce. Stir to combine, and then add the sugar, salt, oregano, thyme, crushed red pepper (if using) and bay leaves. Stir, then add the cooked ground beef and stir to combine. Place the lid on the pot and allow to simmer for 1 hour, stirring occasionally. Add a little water or some low-sodium broth if it needs more liquid.
  • After an hour, add the minced parsley, basil and the Parmesan rind if using (or grated Parmesan if you prefer--or both!). Stir to combine, and then put the lid back on and allow it to simmer for another 30 minutes or so. Discard the bay leaves before serving.
  • Serve a big bowl of oiled noodles and the spaghetti sauce so guests can serve themselves. Top each serving with minced parsley and grated Parmesan (or Parmesan shavings) and serve with a big piece of garlic-cheese bread.
  • Amen.

2 lb ground beef or use 3 pds of ground beef and omit sausage
1 lb sausage links, uncooked. any kind, i have used sweet italian, beef, etc. (or can use already cooked as well, just brown them before adding them to the sauce)
4 jar(s) traditional ragu (24 oz) each
2 1/2 Tbsp garlic powder
1 tsp salt
1/2 tsp pepper
2-3 Tbsp fresh basil, chopped or can use dried basil leaves, just use 1 1/2 tbls
1 tsp oregano, dried (optional)
parmesan cheese, shredded (optional)
THIS IS FOR A LARGE GROUP AND CAN BE HALVED. I FREEZE HALF FOR ANOTHER DAY.

Steps:

  • 1. Preheat your oven at 350 degrees. You will need a large, deep pan. Fry your ground beef until no longer pink. Drain off the fat. ***At the same time I boil my sausages for 10 minutes and then put them in a oven proof pan and bake them at 350 degrees for 15 minutes or until the outside is nice and brown. Turning them half way through. Once cooked, cut them into nice size chunks.
  • 2. Add to your ground beef - the Ragu. All the jars. I put a little water in each jar, with the lid on and shake it and pour it into the pan to get all the sauce out. The water will cook out. Add the cut up sausage to the sauce.
  • 3. Add to the sauce all of the rest of the ingredients and let simmer, stirring occasionally for at least an hour. I let it simmer for 2 hrs. If it looks too thick for you, add a little water to the sauce. Your house will smell amazing!
  • 4. I love to serve this sauce over angel hair pasta and sprinkle shredded parmesan cheese on top plus I always serve garlic bread with it. YUM!!

Once the sausage is slightly brown (there may still be a bit of pink, it's okay!), add the onions and mushrooms. Using the back of a fork, crush any of the large tomato chunks to help smooth out the sauce. The saltiness of your sauce may vary depending on the seasoning used in your sausage. The first time you make this sauce I recommend using 1/2 teaspoon of salt, and then increasing the salt to your desired taste after the sauce simmers.
  • Simmer the sauce, covered, over low heat for about 20-25 minutes. This allows the flavors to "marry" together, and also thickens the sauce if you used tomato paste. I like to check on my sauce at the 15 minute mark, just to make sure it's not getting too thick. If you find your sauce is getting too thick for your liking, add a small amount of water (or more wine ;)). Before serving the sauce, give it a taste and adjust the salt to taste. If you find your sauce is a bit too acidic (depending on the tomatoes), add a pinch or two of sugar.
  • Serve the sauce over spaghetti noodles, and top with freshly grated parmesan cheese and extra basil. The sauce will last in the fridge for 3-4 days.
