Pork Stew is rich, hearty comfort food, that's sure to chase away the winter blues with it's tender chunks of meat and veggies in a rich and flavorful broth.

Steps:
- Cut pork into 1-inch chunks (or a little larger).
- Heat a large soup pot or dutch oven on the stove over medium-high heat. Melt 1 tablespoon each oil and butter. Add pork, onions and celery and brown for several minutes on all sides; pork does not have to be cooked all the way through.
- Add garlic, dried thyme, rosemary and bay leaves and cook for about a minute, then add broth and tomatoes (with the juice). Bring to a boil, reduce heat to low and simmer for about an hour or until pork is tender.
- Add potatoes, carrots, and green beans to the stew and bring to a boil. Reduce the heat to low again and cover. Simmer for an additional 15-20 minutes or until vegetables are tender and broth is slightly thickened.
- To thicken the stew: In a small bowl, whisk together cornstarch and water or broth with a fork until smooth. Stir in the cornstarch slurry and simmer, uncovered, for 5-10 minutes or until thickened. Stir in fresh minced parsley.

- cut the pork into cubes.
- finely cut the coriander leaves.
- cut the onions.
- cut the tomatoes into cubes.
- cut the green pepper into cubes.
- crash the garlic.
- finely cut the spinach.
- in a hot pan add the oil then add the onions till translucent.
- add garlic and stir for one minute. then add the tomatoes and pepper till well.
- cooked. add the cubed pork and stir. wait for about 5 mins then add the coriander stir then the spinach. let it cook for 20 mins enjoy.

PORK AND SPINACH MEATBALLS
These tasty little morsels can be made ahead of time and then just reheated when you're ready. Serve them as a main course, with a bowl of tzatziki. You could also top the dish with some finely sliced spring onions.

- Place the couscous in a bowl and cover with 150ml boiling water.
- Cover and leave to"cook".
- Heat the oil in a frying pan and add half the onion plus all of the garlic, rosemary and lemon zest.
- Cook, stirring often, for about 10 minutes.
- Spread out the contents of the pan in a mixing bowl and leave to cool.
- Trim the stalks from the coriander, then chop the leaves and fine stalks.
- Add half the coriander to a mixing bowl and combine with the egg and pork as well as some salt and pepper, if desired.
- Add the couscous too.
- Use your hands to mix everything together, forming it into a ball.
- Rinse your hands, then pinch off small pieces and form into individual balls about the size of a cherry tomato.
- Transfer to a plate as you go.
- When done, cover with clingfilm and chill in the fridge.
- Now make the sauce.
- Dissolve the chicken stock cubes in 1 1/2 litres of boiling water.
- Heat the butter in a large pan.
- Stir in the remaining onion and cook until lightly browned.
- Sift the flour over the top, stir until it disappears, then add the hot stock.
- Stir constantly as it comes to a boil.
- Lower the heat and cook gently for five minutes.
- Then add in the spinach and remaining coriander.
- Cook for five more minutes, then juice the lemon into the pan.
- Drop the chilled meatballs into the simmering sauce.
- Return to a simmer and cook, covered, for 15 minutes.
- Shake the pan every so often to make sure the meatballs are covered.
- When the meat is cooked through serve over rice.

- In a large skillet, heat oil over medium-high heat. Sprinkle pork chops with salt and pepper; add to skillet. Saute until a thermometer reads 145°, about 5 minutes per side. Remove to a serving platter; squeeze juice from lemon over chops. Tent with foil; let stand at least 5 minutes before serving., For garlic spinach, heat oil over medium-high heat in same skillet. - Heat the olive oil in a skillet over medium heat. Sprinkle pork on all sides with salt, pepper, and garlic powder, and lightly coat with cornstarch. Place pork in the skillet, and cook until lightly browned but not done. Transfer to a slow cooker. Place potatoes, green bell pepper, red bell pepper, onion, and corn in the slow cooker.
- In a bowl, mix the tomatoes, cream of mushroom soup, milk, broth, and Italian seasoning. Pour into the slow cooker.
- Cover, and cook 1 hour on High. Reduce heat to Low, and continue cooking at least 1 hour.

- Toast the sesame seeds in a dry pan over medium heat for 3 to 4 minutes, shaking the pan gently, until seeds are golden brown; remove from the pan at once to prevent burning.
- Trim the ends from the spinach, roughly chop the leaves and wash to remove the grit.
- Combine the garlic, spring onion, cayenne pepper and pork, mixing well. Heat the oils in a pan and stir-fry the pork quickly in three batches over very high heat until golden brown. Remove the meat and set aside.
- Add the soy sauce, sugar and spinach and toss lightly. Cover and cook for 2 minutes or until the spinach is just soft. Return the pork to the pan, add the sesame seeds, toss well and serve immediately.

- Chop the meat into smallish cubes. Chop the onion finely. Heat the oil in a large, deep, thick-bottomed pot (Dutch oven, for instance) and cook the onion for about 1 minute. Add the meat cubes, stir well, cover, turn down the heat and cook for about 10 minutes.
- Add half of the tomato puree, vegetable broth, and about ¼ teaspoon salt to the meat. Cover again and continue stewing on low heat for about 30-40 minutes or until the meat is very tender. Stir from time to time and add very little extra water if you think it might get too dry.
- In the meantime wash the spinach and remove the stalks. Chop the spinach roughly. Add to the pot. Leave for a couple of minutes until wilted, add the remaining tomato puree, then stir well and cover again. Continue cooking for about 10 minutes or until the spinach is cooked but not mushy.
- Chop the garlic finely and add it to the pot during the last five minutes of the cooking time. Adjust the taste with the lemon juice and salt and pepper. Serve with bread or potatoes or rice.
