Number Of Ingredients 4

3 teaspoons dried thyme
1 teaspoon powdered sumac
1 teaspoon toasted sesame seeds
1/4 teaspoon kosher salt

Steps:

  • Put all of the ingredients into a spice grinder and pulse until a powder is formed, about 30 to 45 seconds. Store in an airtight container for up to 2 months.

My Own Za'atar image

Unable to find sumac, I found some websites that recommend substituting lemon zest. This is what I decided on after loking at many recipes.

1/2-1 tablespoon finely grated lemon zest

Steps:

  • Grind the toasted sesame seeds with a mortar and pestle.
  • In a bowl, combine all ingredients well.
  • Store in a tightly capped jar in the refrigerator.

Za'atar, the Middle Eastern spice mixture is so delicious we suggest doubling the recipe and using the extra for a snack: Dunk some bread (such as pita) in flavorful olive oil and then in the za'atar.

2 tablespoons minced fresh thyme
2 tablespoons sesame seeds, toasted
2 teaspoons ground sumac*

Steps:

  • Stir together all ingredients in a small bowl.
  • Available at Middle Eastern markets and by mail order from Kalustyan's (212-685-3451).

A combination of unbleached all-purpose and bread flours are required for this recipe. For the za'atar spice mix, you can make your own za'atar or look for it in ethnic food stores. Prep time depends on how long you allow the rise.

1 tablespoon instant yeast
2 cups lukewarm water (l00 - 110 degrees)
2 teaspoons granulated sugar
2 tablespoons extra-virgin olive oil
2 cups unbleached all-purpose flour
5 cups unbleached bread flour
1 3/4 teaspoons kosher salt
2 -3 tablespoons za'atar spice mix (can use Za'atar or any other)
1/2 cup olive oil
1/4 cup lemon
1/2 teaspoon salt

Steps:

  • For The Bread: Whisk together the yeast, water and sugar. Stir in the oil, the all-purpose flour and most of the bread flour, then the salt. Mix to form a soft dough. Knead the dough for 8 to 10 minutes, till it's elastic and supple, adding additional flour as needed.
  • Place the dough in a large, well-greased bowl, cover with plastic wrap and a tea towel, and let rise until doubled. Alternatively, allow the dough a long, cool rise in the refridgerator, several hours or overnight. Bring the dough to room temperature before shaping; it'll rise as it warms up.
  • Divide the dough into 8 pieces. Stretch or roll the pieces into irregular slabs, and let rest for 15 minutes, covered with a tea towel. Spread some lemon/olive oil/za'atar mixture onto each piece of dough.
  • Rub grill with vegetable oil. Preheat the grill to its hottest temperature. Place the flatbreads gently on the grill. Cover and bake for 1 to 2 minutes, then check for doneness. Allow to bake until the tops begin to brown. Brush with additional topping if desired and remove from the grill.
  • For The Za'atar Topping: Mix topping ingredients with a whisk until well blended. Set aside until ready to use.

2 tbsp cumin
2 tbsp sesame seeds
2 tbsp dried oregano
2 tbsp sumac

Steps:

  • Lightly toast the cumin seeds in a dry pan, just until they start to release their aroma. Grind them to a fine powder using a pestle and mortar then stir in all the other ingredients plus 2 tsp salt and 1 tsp freshly ground black pepper. It is now ready to use in your recipes, but will keep in a clean jar or airtight container for a month.
