This is a no-knead bread that can be started at 4:00pm and turned out onto the dinner table at 7:00pm. It is not artisan bread, and it's not trying to be. It is peasant bread, spongy and moist with a most-delectable buttery crust.

4 cup Unbleached All-Purpose Flour
2 teaspoon Kosher Salt
2 cup Water
2 teaspoon Granulated Sugar
2 teaspoon Instant Dry Yeast
2 tablespoon Butter

Steps:

  • In a large mixing bowl, whisk together the Unbleached All-Purpose Flour (4 cup), Kosher Salt (2 teaspoon), Granulated Sugar (2 teaspoon), and Instant Dry Yeast (2 teaspoon).
  • Add the Water (2 cup).
  • Mix until the flour is absorbed.
  • Cover bowl with a tea towel or plastic wrap and set aside in a warm spot to rise for at least an hour.
  • Preheat the oven to 425 degrees F (220 degrees F). Grease two oven-safe bowls with Butter (2 tablespoon).
  • Using two forks, punch down your dough, scraping it from the sides of the bowl, which it will be clinging to. You want to loosen the dough entirely from the sides of the bowl, and you want to make sure you've punched it down.
  • Then, take your two forks and divide the dough into two equal portions. To do so, eye the center of the mass of dough, and starting from the center and working out, pull the dough apart with the two forks. Scoop up each half and place into your prepared bowls.
  • Let the dough rise for about 20-30 minutes on the countertop near the oven, or near a warm spot, until it has risen to just below or above the top of the bowls.
  • Bake for 15 minutes.
  • Reduce the heat to 375 degrees F (190 degrees F) and bake for 15-17 minutes longer.
  • Remove from the oven and turn the loaves onto cooling racks. If the loaves look a little pale and soft when you've turned them out onto your cooling racks, place the loaves into the oven, outside of their bowls, and let them bake for about 5 minutes longer.
  • Remove from oven and let cool for 10 minutes before cutting.

Notes: The bread: This is a sticky, no-knead dough, so, some sort of baking vessel, such as pyrex bowls (about 1-L or 1-qt) or ramekins for mini loaves is required to bake this bread. See notes below the recipe for sources. You can use a bowl that is about 2 qt or 2 L in size to bake off the whole batch of dough (versus splitting the dough in half) but do not use this size for baking half of the dough - it is too big. 4 cups (512 g) unbleached all-purpose or bread flour
2 teaspoons (10 g) kosher salt
2 cups (454 g) lukewarm water (made by mixing 1.5 cups cold water with 0.5 cup boiling water)
2 teaspoons (8 g) sugar
2 teaspoons (8 g) instant yeast, I love SAF Instant Yeast, see notes below
room temperature butter, about 2 tablespoons

Steps:

  • In a large mixing bowl, whisk together the flour, salt, sugar, and instant yeast (I love SAF Instant Yeast). Add the water. Mix until the flour is absorbed. (If you are using active dry yeast, see notes below.)
  • Cover bowl with a tea towel or plastic wrap and set aside in a warm spot to rise for at least an hour. (In the winter or if you are letting the bread rise in a cool place, it might take as long as two hours to rise.) This is how to create a slightly warm spot for your bread to rise in: Turn the oven on at any temperature (350ºF or so) for one minute, then turn it off. Note: Do not allow the oven to get up to 300ºF, for example, and then heat at that setting for 1 minute - this will be too hot. Just let the oven preheat for a total of 1 minute - it likely won't get above 100ºF. The goal is to just create a slightly warm environment for the bread.
  • . Grease two 1-qt or 1.5-qt oven-safe bowls (see notes below) with about a tablespoon of butter each. Using two forks, punch down your dough, scraping it from the sides of the bowl, which it will be clinging to. As you scrape it down try to pull the dough toward the center (see video below for guidance). You want to loosen the dough entirely from the sides of the bowl, and you want to make sure you've punched it down. Then, take your two forks and divide the dough into two equal portions - eye the center of the mass of dough, and starting from the center and working out, pull the dough apart with the two forks. Then scoop up each half and place into your prepared bowls. This part can be a little messy - the dough is very wet and will slip all over the place. Using small forks or forks with short tines makes this easier - my small salad forks work best; my dinner forks make it harder. It's best to scoop it up fast and plop it in the bowl in one fell swoop. Some people like to use flexible, plastic dough scrapers for this step.

  • Bake for 15 minutes. Reduce the heat to 375º and bake for 15 to 17 minutes longer. Remove from the oven and turn the loaves onto cooling racks. If you've greased the bowls well, the loaves should fall right out onto the cooling racks. If the loaves look a little pale and soft when you've turned them out onto your cooling racks, place the loaves into the oven (outside of their bowls) and let them bake for about 5 minutes longer. Remove from oven and let cool for 10 minutes before cutting.

1 cup lukewarm water
2 tablespoons granulated sugar
4 tablespoons vegetable oil or 4 tablespoons margarine

3 tablespoons fleichmans dry active yeast
8 cups water, lukewarm
15 -18 cups all-purpose flour
2 tablespoons granulated sugar

Steps:

  • In small bowl place the following ingredients:.
  • 1 cup warm water.
  • yeast and 2 tbsp white sugar (DO NOT STIR).
  • let stand for 10 minutes.
  • In large mixing bowl do the following steps.
  • Place 8 cups warm water in bowl.
  • Place remaining 2 tbsp sugar in water.
  • Place 4 tbsp margarine or veg. oil in water.
  • Place salt in water.
  • Add 6 cups flour one at a time and mix as you are adding. Making sure to remove any lumps. Should be smooth before adding next cup.
  • Pour Yeast mixture in other bowl that you set aside into mixture.
  • Mix until smooth.
  • Continue to add flour mixing thoroughly until dough is sticky and forms a ball (note you will have to use your hands to mix it after its too tough to mix with a spoon. It should take only about a maximum of 17 cups of flour.
  • Take dough out of bowl and place on a flat clean dry surface which was sprinkled with about 1/2 cup of flour. Knead dough with hands for about 15 minutes or so. Dough should be soft and feel light to to touch. TIP: To prevent the dough from sticking to your hands a lot rub vegetable oil on them or take a piece of margarine and rub it into your hands then continue to knead dough. DO NOT ADD MORE FLOUR! It will make your bread dough TOO HEAVY! if you do.
  • Separate dough in half. Place each half in a bowl. Place a light towel over it and let the dough rise for 1 hour or until doubled.
  • FOR BUNS: Take about the size of a baseball of dough in your hand roll into a ball and place it on an ungreased cookie sheet. Let rise for another 1/2 hour or until buns are double in size. For buns to rise tall place them close together almost touching. Bake at 375°F.
  • FOR LOAVES: Take a large amount of dough and roll into a roll dough should not take up more than half of the loaf pan. Make sure dough roll is even or you will end up with a lopsided loaf or narrow loaf. Let rise for 1 to 2 hours. Or until Dough is nicely formed above the rim of the loaf pan. Bake at 350°F for 45 minutes or until golden brown. To test to see if done knock on top of the loaf. If it sounds hollow it is completed baking. It will be a dark golden brown color when finished.
  • Take Loaves out of oven and take them IMMEDIATELY OUT OF THE PANS upside down. (If you leave them till cooled in pans what happens is the bottom crust gets soggy from the condensation). Brush melted butter over top of loaves to prevent from drying out.
  • Yield: 4 loaves 2 dozen buns.
  • Depends on size.
  • TIP: This bread dough is great for anything such as pizza crusts, cinnamon buns, take a bit and roll it out thin and place it in a frying pan with a little oil and fry it and serve with jam or peanut butter.

1 cup pitted, chopped plums
1 tablespoon all-purpose flour
½ cup margarine
1 cup white sugar
½ teaspoon vanilla extract
2 eggs
1 ½ cups all-purpose flour

⅓ cup plain yogurt
¼ cup brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x5-inch loaf pan with cooking spray, or line with parchment paper.
  • Sprinkle chopped plums with 1 tablespoon of flour in a bowl, and toss to coat. Set aside. In a large bowl, beat the margarine, white sugar, and vanilla extract with an electric mixer until light and fluffy. Beat in the eggs. In another bowl, sift together 1 1/2 cup of flour with salt and baking soda. Stir the dry ingredients into the egg mixture, alternating with yogurt until the mixture forms a smooth batter. Lightly stir in the flour-coated plums, and pour the batter into the prepared loaf pan. Sprinkle the top of the batter with brown sugar.
  • Bake in the preheated oven until a toothpick inserted into the center of the loaf comes out clean, 45 to 50 minutes. Remove from oven, and let cool in the pan 10 to 15 minutes before removing from pan for slicing.

My mother made this my whole while growing up. Never before had I tasted anything this good and never had anything since. It is the Hard sauce that makes it so different from other recipes. just try it once and you will be hooked for life and so will your friends and family.

2 cups milk
1/4 cup butter
4 cups white bread
1/2 cup sugar
2 eggs
1/4 teaspoon salt
5 tablespoons cinnamon
1/2 cup seedless raisin (optional)
1 cup butter, soft (not margarine)
2 cups powdered sugar
1 teaspoon vanilla or 1 teaspoon rum flavoring

Steps:

  • Heat oven to 350°F.
  • Scald milk with butter; set aside to cool.
  • In a large bowl place torn bread pieces, sprinkle with as much cinnamon as you like. Sprinkle 1/2 cup sugar, 1/4 tsp salt and 2 eggs (slightly beaten) over cinnamon sugar bread pieces. Mix gently.
  • Pour cooled scalded milk and butter over the bread mixture and add any optional items before pouring into greased loaf pan. Mixture should fill the bread pan.
  • Place the loaf pan in a large baking pan and fill with 1" of water (called a water bath).
  • Bread pudding is done when a knife inserted in center comes out clean. Oven temps may vary and so would the baking time.
  • Slice into 1" slices and serve warm. top with a dollop of the Hard Sauce(see below).
  • May be warmed in microwave for leftovers.

  • Beat butter until creamy. Gradually add powdered sugar and then vanilla until all mixed.
  • Spoon a dollop on a slice of warm bread pudding. Mmm--enjoy!

My mother's cornbread dressing has always been my favorite. I have yet to find a recipe this easy, or this tasty!

2 cups chopped celery
2 1/2 cups chopped onions
1 tablespoon butter
2 (8 ounce) packages cornbread mix
2 tablespoons sage

Steps:

  • Prepare corn bread as usual.
  • Crumble in a bowl and set aside.
  • In a saucepan, boil celery, onion and butter in enough water to cover - until the onions turn clear and celery is tender.
  • Mix the veggies (with the water) with the corn bread.
  • Add sage to taste ( I use a LOT of sage).
  • Spread into a 13x9 baking dish and cook at 350 degrees for 30 minutes.
  • Serve with cranberry sauce.

1 1/4 cups mashed bananas (4 to 5 Medium bananas)
1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1/3 cup unsalted butter, at room temperature
2/3 cup sugar (or Splenda, whatever you like)
2 eggs, separated (Large or Medium)
1 1/2 ounces milk
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons flax seeds
1/4 cup chopped walnuts (optional) or 1/4 cup pecans (optional)

Steps:

  • Cream together butter, sugar, & egg yolks until creamy.
  • Sift dry ingredients together (flour, baking soda, salt, cinnamon & nutmeg). Alternately add the dry mixture to the creamed butter mixture as well as the milk & mashed bananas. Beat the egg whites until a stiff peak forms and fold in with a wooden spoon, (make sure you only use a wooden spoon to do this - this is KEY), next - fold in the chopped nuts also stir in with the wooden spoon.
  • Bake in a loaf pan that you have sprayed with olive oil or non-stick spray and dusted lightly with flour at 350° for approximately 45 minutes - insert a toothpick in the center of the loaf to ensure it is not runny, if it is - allow to bake an additional 5-10 minutes.
  • Cool on a wire rack and serve with cream cheese or your favorite margarine.
  • Note: I love to wait a day and then toast a piece in my toaster oven - it is SO good when it gets re-heated and toasty with butter on it and a cup of coffee - YUM!

4 cups (1 lb. 2 oz) all-purpose flour* (do not use bleached all-purpose)
2 teaspoons kosher salt
2 cups lukewarm water**
1 tablespoon sugar
2 teaspoons active-dry yeast***
room temperature butter, about 2 tablespoons

Steps:

  • 1. In a large mixing bowl whisk the flour and the salt. Set aside. Grease a separate large bowl with butter or olive oil and set this aside. (This is optional actually - I now just let the bread rise in the same bowl that I mix it in. My mother, however, always transfers the dough to a greased bowl.) 2. In a small mixing bowl, dissolve the sugar into the water. Sprinkle the yeast over top. There is no reason to stir it up. Let it stand for about 10 to 15 minutes or until the mixture is foamy and/or bubbling just a bit - this step is just to ensure that the yeast is active. (See photo above.) Now, gently stir it up, and add to the flour bowl. Stir this mixture up with a spatula or wooden spoon. Mixture will be wet. Scrape this mixture into prepared greased bowl from step 1. (Or, if you're feeling lazy, just cover this bowl with plastic wrap or a tea towel.) 3. Cover bowl with a tea towel or plastic wrap and set aside in a warm spot to rise for at least an hour. (If you have the time to let it rise for 1.5 to 2 hours, do so - this will help the second rise go more quickly.) This is what my mother always does: Preheats the oven at its highest temperatureits lowest setting for just one minute, then shuts off the oven. UPDATE 01/05: Preheat the oven for a total of one minute - do not allow the oven to get up to 300ºF, for example, and then heat at that setting for 1 minute - this will be too hot. Just let the oven preheat for a total of 1 minute - it likely won't get above 300ºF. The goal is to just create a slightly warm environment for the bread. Next, she runs a tea towel under hot water and rings it out so it's just damp. Finally, she covers the bowl containing the bread with the damp tea towel and places it in the warm, turned-off oven to rise. It usually takes about an hour to double in bulk, but letting it rise for an hour and a half or up to two hours is fine. 4. Preheat the oven to 425ºF. Grease two oven-safe bowls (such as the pyrex bowls I mentioned above) with about a tablespoon of butter each. (My mother might use even more - more butter not only adds flavor but also prevents sticking).
