The original recipe called for the topping to be broiled, but I wanted to do some thing a little different, and I really like the way it turned out so wanted to share with you. I don't double the topping recipe.

1 c quick oatmeal
1 c brown sugar, firmly packed
1 clove white sugar
1 1/3 c flour
1/2 tsp salt
1 tsp soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
TOPPING
1 c nuts
1/2 c brown sugar
1/2 c white sugar
6 Tbsp butter--melted
1 c coconut
1/4 c cream ( i use canned milk)
1 tsp vanilla extract

Steps:

  • 1. Turn oven on 350* Grease and flour a 9 x 13 pan Put all ingredients in mixer bowl and mix together.
  • 2. These were not put in the recipe but must be added. Add 1/2 cup butter or margarine, 2 eggs and 1 1/2 cup boiling water---this will be very thin batter.
  • 3. Mix up the topping and drop into the batter with a tablespoon. leaving a space in between. when you have the topping all in the batter, put in oven and bake for 60 min. This is a great cake and each serving will have a bit of the topping in each one. It doesn't need to be frosted but you could serve with cool whip or Ice Cream.

It's funny how two families can come together with both serving the same delicious oatmeal cake! Both of my Grandmother's made this wonderful cake when I was young and I love making it for anyone & everyone now.

1 1/4 cups boiling water
1 cup quick-cooking oats
1 cup white sugar
1 cup brown sugar
8 tablespoons shortening
2 eggs
1 1/3 cups plain flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
1 teaspoon vanilla
12 tablespoons butter, melted
1/2 cup evaporated milk
2 egg yolks
2 cups brown sugar
2 cups grated coconut
1 cup pecans, chopped

Steps:

  • Pour boiling water over oats and let stand for 20 minutes.
  • Preheat oven to 350 degrees.
  • Cream, until light & fluffy, the white sugar, brown sugar and shortening.
  • Add eggs, mixing well.
  • Add oatmeal mixture, beat.
  • Add flour, cinnamon, baking soda and vanilla, again mixing well.
  • Pour into a well greased 9x13 inch casserole dish.
  • Bake for 30-35 minutes.
  • * Mix together ALL of the icing ingredients and spread over hot cake. Place back in the oven, for an additional 7-10 minutes.

My Grandma used to bake this cake, only to have the whole thing disappear. She finally found out my Grandpa was taking it to his shop and hiding it in a drawer to snack on as he worked. It looks complicated, but it isnt, and the flavor is worth it. Every time I eat it I think of my grandparents and smile!

1 cup oatmeal (quick cooking)
1 1/2 cups flour
1 1/2 cups hot water
1 teaspoon baking soda
1 cup packed brown sugar
1 teaspoon cinnamon
1 cup granulated sugar
1/2 teaspoon salt
1/2 cup shortening
1 teaspoon vanilla
2 large eggs
1 cup coconut
1 cup margarine
1/2 cup walnuts
3 tablespoons milk
1 1/2 cups packed brown sugar
1/2 cup uncooked oatmeal

Steps:

  • Pour hot water over oatmeal; set aside.
  • Cream together sugars and shortening, then add eggs.
  • Sift together dry ingredients and add to the wet.
  • Stir in oatmeal and vanilla.
  • Pour into greased 9 x 13 cake pan and bake for 1 hr and 10 minutes at 350° and then top with topping.
  • Topping: Combine butter, milk and sugar in a small saucepan.
  • Bring to a boil and continue to boil 1 minutes and add coconut, nuts and oatmeal.
  • Spread on cake and broil until brown (WATCH CAREFULLY IT WILL BURN FAST).

1 cup uncooked rolled oats (instant or regular, I used rolled oats)
1 1/4 cups boiling water
1/2 cup butter or 1/2 cup margarine
1 cup granulated sugar
1 teaspoon vanilla
2 eggs
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup butter or 1/4 cup margarine, melted
1/2 cup brown sugar
3 tablespoons cream or 3 tablespoons milk
3/4 cup flaked coconut
1/3 cup chopped nuts (optional)

Steps:

  • In a shallow bowl soak oats in boiling water for 20 minutes.
  • Meanwhile proceed by measuring butter and sugars into beater bowl and beating until light.
  • Beat in eggs and vanilla.
  • Sift and measure flour, sifting again with the soda and spices.
  • By this time the oats will be soaked and cool.
  • Remove beaters from creamed mixture and fold in soaked oats.
  • Sift flour mixture over and fold in.
  • Turn in a buttered 9x9" pan and bake at 350°F for 40-50 minutes .
  • Mix all the topping ingredients.
  • Do not remove cake from pan but while still hot spread topping over and put under the broiler until bubbly and tinged with gold.
  • Watch carefully.

My mother brought this recipe home from her Home Economic class (in the late 50's)and my Maw Maw has been making it ever since. My mom, aunts, cousins and myself all enjoy the recipe now. It's a moist cake with a delicious topping!

1 1/2 cups boiling water
1 cup quick-cooking oats
1 cup sugar
1 cup light brown sugar
1/2 cup shortening
2 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
6 tablespoons butter, melted
1/2 cup light brown sugar
1 teaspoon vanilla
1/4 cup evaporated milk
1 cup chopped pecans
1 cup shredded coconut

Steps:

  • Preheat oven to 350°F.
  • Pour boiling water over quick oats and let stand for about 15-20 minutes, while you begin mixing up the cake.
  • In a mixing bowl, combine sugar, brown sugar, shortening, and eggs, mixing well.
  • Sift together flour, baking soda, cinnamon, and salt; add to sugar mixture.
  • Add oatmeal and mix well.
  • Pour batter into a 9X13-inch greased cake pan.
  • Bake for about 30 minutes, or until cake tests done.
  • For topping, combine all topping ingredients.
  • Prick holes in the top of the cake with a toothpick or ice pick.
  • Spread icing over the top of warm cake.
  • Place cake under the broiler for just a minute or two until topping starts to brown.
  • (My oven browns quickly and only takes 1-2 minutes, so watch closely!).
