THE BEST NO BAKE COOKIES

The BEST No Bake Cookies image

These Easy Peanut Butter Chocolate No Bake Cookies are a classic, loaded with oats and chocolate-peanut buttery goodness--perfect for a special treat!

Provided by Sally

Time 20m

Number Of Ingredients 7

2 cups sugar, white granulated* (see notes)
3 tablespoons cocoa
6 tablespoons butter
1/2 cup milk
1/2 cup peanut butter, regular, not natural* (see notes)
1 teaspoon vanilla
3 cups old-fashioned oats, or quick oats

Steps:

  • Combine sugar, cocoa, butter, and milk in a large saucepan and stir over medium-low heat until combined.
  • Turn heat to medium and cook, stirring occasionally, until mixture comes to a full boil. Boil for one minute, stirring occasionally. (Watch the clock closely--if you don't boil them long enough, they will not set. Boil them too long, and they will be dry.) Remove from heat.
  • Add peanut butter, vanilla, and oatmeal to mixture and stir until combined.
  • Drop by the tablespoon onto a baking sheet. Cool, then remove from sheet with a spatula, and store in an airtight container.

MY MOM'S NO-BAKE COOKIES

My Mom's No-Bake Cookies image

This is the recipe that my mom made for us while we were growing up. Now I make them and they are my go-to recipe when I want a quick sweet treat. *1/16/12: The current picture is of the batch that fellow JAP member, Bonnie Dare, made today. She added chopped pecans to the mixture. Thank you so much Bonnie for letting me...

Time 10m

Number Of Ingredients 8

1 1/2 c granulated sugar
1/3 c dutch-processed cocoa
pinch of salt
~~whisk the above ingredients together.
1/3 c butter
6 oz evaporated milk
1 1/2 c shredded or flaked coconut
2 c (to 2 1/2 c.) quick oats

Steps:

  • 1. Combine all ingredients together, except the coconut and oats, in a medium saucepan; start cooking the mixture over medium heat. Lower the heat; allow the mixture to cook for 5-7 minutes, stirring occasionally.
  • 2. Remove from the heat and add the coconut; stir until blended. Add the oats; stir until well blended. Drop by tablespoonfuls onto waxed paper. Allow to cool at room temperature. Once cooled, I place them in decorative muffin/cupcake papers and store them in an airtight container. *If you like a softer texture to the oatmeal, you can add it to the mixture during the last 2 minutes of cooking (Step 1).
  • 3. VARIATIONS ~ Peanut butter (add approx. 1/3 c. to mixture while cooking) ~ Raisins, cranberries or Craisins* ~ Nuts* ~ Other dried fruits, chopped* *You might need to decrease the amount of coconut when adding these variations.
