2 slices sourdough bread
2 1/2 slices havarti cheese, (or to taste)
2 tbsp caramelized onions
Half of a roasted poblano pepper, (sliced thin)
2 tsp butter, (for cooking)

Steps:

  • Evenly arrange cheese over both slices of bread. Top with sliced poblano and caramelized onions, then cover with the other side of bread.
  • Place a skillet over medium heat and allow to heat. Add 1 teaspoon of the butter and swirl it around the pan as it melts.
  • Place sandwich in the skillet and cook for a few minutes until the bottom side is golden-brown to your liking.
  • Remove sandwich from the skillet and add the remaining 1 teaspoon of butter. Swirl so it melts.
  • Add the sandwich, cooked side up, back to the skillet and cook until the other side is golden-brown. Slice in half and enjoy.

1 Loaf Freshly Baked Homestyle White Bread (purchased or homemade)
1 1/2 cup freshly grated Cheddar cheese
1 cup freshly grated Havarti cheese
3 tablespoons unsalted butter, room temperature

Steps:

  • Using a serrated knife, slice the bread into 1/2" slices. You will need 8 slices total. Set aside until ready to use.
  • Mix together Cheddar and Havarti in a small mixing bowl. Set aside until ready to use.
  • Place a medium-sized skillet over medium-low heat and allow to come to temperature. On a large cutting board or work surface, spread 1 tsp of butter evenly across the surface of a slice of bread. Turn over and scatter with about 2 tablespoons of the cheese mixture across the unbuttered side. Spread 1 teaspoon of butter evenly across another slice of bread and place the unbuttered side atop of the cheese mixture. Repeat with remaining sandwiches. You should have 4 sandwiches total.
  • Place the sandwiches on the skillet, two at time, taking care not to overcrowd the pan. Cook for 3 minutes or until toasted and golden brown. Turn with a wide spatula and cook for an additional 3 minutes. Remove from the pan, cut across the diagonal, serve and enjoy.

1/4 c plus 3 tablespoons butter, softened and divided
2 granny smith apples, cored and thinly sliced
1 Tbsp sugar, to taste
1/2 tsp ground cinnamon
1/2 tsp ground cardamon
8 thick slices of french or italian bread
8 thin slices of havarti cheese

Steps:

  • 1. Melt 3 tablespoon of butter in a skillet over medium heat.
  • 2. Add sliced apples, sugar, cinnamon and cardamon and stir.
  • 3. Cook for about 7 minutes, stirring frequently until most of the apple juices are reduced and the apple is coated with a syrup.
  • 4. Remove the pan from the heat and set aside.
  • 5. Place four slices of bread on a griddle and top each with one slice of Havarti cheese, 1/4 of the spiced apples and another sice of cheese and top with remaining slices of bread. (If you don't have a griddle you can use a large non-stick fry pan) and grill one sandwich at a time.
  • 6. Butter sandwich tops. Turn over and butter again.
  • 7. Heat griddle or pan on medium heat and brown each side for 3 to 5 minutes or until golden brown and Havarti cheese begins to melt.
  • 8. Remove sandwiches from grill and cool 5 minutes before serving.

  • Adjust toaster oven cooking rack to the lowest position. Place an ungreased baking sheet inside the toaster oven and preheat to 450°F on the "Bake" setting. diced Havarti cheese: 1-1/3 cups
crisply cooked bacon, crumbled: 8 slices
Granny Smith apple, chopped: 1 medium
mayonnaise: 1/4 cup

Steps:

  • Butter one side of each piece of sourdough bread and set aside.
  • In a medium bowl, combine the Havarti, bacon, apple, and mayonnaise and mix.
  • Make sandwiches with the filling and the buttered bread, placing the buttered side out.
  • Preheat a nonstick skillet over medium low heat for a few minutes. Add the sandwiches, press down with a spatula, and cover the pan. Cook for 2 to 4 minutes on each side, turning once, until the bread is golden brown and the cheese has melted.

4 Slices Thick Crusty Bread (I like French Bread)
2 Tbsp Butter (Softened)
1/8 Tsp Dried Thyme
1/8 Tsp Dried Rosemary
1/8 Tsp Sea Salt
1/2 Small Apple (Gala, Fuji or Honeycrisp work well)
4 Stripes Bacon (Cooked)
3 Ounces Mozzarella Cheese
2 Slices Havarti Cheese

Steps:

  • Combine thyme, rosemary and salt into a small bowl and set aside.
  • On one side of bread spread butter and sprinkle with dried herbs and spices. Repeat this on the other three slices of bread.
  • Flip all the slices of bread over and lay sliced mozzarella on one slice and Havarti on the other side. Repeat this for the second sandwich.
  • Place cooked bacon on top of mozzarella cheese. I use two slices per sandwich, but you could add more if you wish.
  • Slice half of a small apple into thin slices using a pairing knife or mandoline slicer. I like to try and get mine 1/8-1/4 of an inch thick. Place sliced apple in a single layer on the opposite slice of bread you put the bacon on.
  • Drizzle honey over top of the bacon and apples, and bring the two slices together forming your sandwich. Repeat with the second sandwich.
  • Add your prepared sandwiches to a greased warm skillet. I like to cook mine on low heat for 5 minutes then flip and cook an additional 5 minutes on low. For the last minute on each side I crank the heat up and cook each side just until the outside of each slice of bread is crispy. If your cheese is not melted after 10 minutes, slowly increase the heat and watch it until melted.
  • Once sandwiches are finished, remove from skillet, slice and serve with additional honey (optional) and enjoy!

½ teaspoon freshly ground black pepper

Steps:

  • Butter one side of each bread slice. Heat a skillet over medium heat. Add one bread slice to the skillet, butter-side down. Mound the cheese evenly over the bread. Cover the pan and cook until the cheese is mostly melted, about 3 minutes. Place a layer of onion over the cheese, then top with apple slices and kale leaves.
  • Spread 1 to 2 spoonfuls of chutney over the kale, but not entirely to the edges. Place the second bread slice over the chutney, butter side up. Using a spatula, carefully flip the sandwich and gently press down.
