GRANDMA'S OLD-FASHIONED PEANUT BUTTER COOKIES

Loaded with peanut butter, soft & chewy, rolled in sugar, and fork-pattern adorned ~ Grandma's old-fashioned Peanut Butter Cookies are the stuff childhood cookie memories are made of.

Number Of Ingredients 9

1 c. unsalted butter, softened
1 tsp. vanilla extract
1 c. light brown sugar
1 c. granulated sugar
2 eggs
1 c. creamy peanut butter
3 c. all-purpose flour
2 tsp. baking powder
1/8 tsp. salt

Steps:

  • Place butter and vanilla extract in a mixing bowl; beat with a stand mixer or electric mixer at medium speed until fluffy, about 2 minutes. While continuing to beat, gradually add brown sugar and granulated sugar; beat until well combined.
  • Add eggs, one at a time, beating after each addition until incorporated. Add peanut butter and beat until combined.
  • Add flour, baking powder, and salt; mix on low speed until just combined.
  • Roll dough into 1-inch balls; place on a cookie sheet. Flatten with a fork dipped in granulated sugar; repeat with the fork turned perpendicular to the first marks to create a cross-hatch pattern.
  • Bake at 375 degrees for about 9 minutes, or until very lightly browned.
  • I like my peanut butter cookies soft, so I watch them closely while baking and take them out of the oven as soon as they are lightly browned.

They don't have the normal peanut butter fork crossing...but more of a crackled sugar type cookie... My husband comes from a huge family - and these are one of the cherished recipes!!

1 cup brown sugar, firmly packed
1 cup white sugar
1 cup Butter Flavor Crisco
1 cup creamy peanut butter (Skippy)
1/2 teaspoon salt
2 large eggs
1 teaspoon vanilla
2 teaspoons baking soda
2 cups flour (1/4 cup more if needed)

Steps:

  • Cream together the sugars, Crisco, peanut butter.
  • Add the eggs and vanilla.
  • Sift the dry ingredients together and add gradually until blended well.
  • Roll into tablespoon size balls.
  • Roll cookie dough balls into sugar.
  • Place on cookie sheets- do not mash with fork in normal "peanut butter cookie" fashion!
  • Bake at 350° oven for 11-13 minutes.

1 well-beaten egg (extra-large egg yields best results)

Steps:

  • Preheat oven to 350-degrees.
  • Combine all ingredients in mixing bowl.
  • Mix well with a spoon.
  • Shape dough into 1-inch round balls.
  • Place 2 inches apart on cookie sheet.
  • Press balls flat with fork dipped in extra sugar.
  • Bake for 12-15 minutes.
  • Cookies should not be too brown.
  • Remove from oven and allow to cool on cookie sheet for one minute, then remove to wire racks.

Steps:

  • 1. Mix all ingredients in a large bowl. Grease cookie sheet and roll dough in balls and set on cookie sheet.
  • 2. Put cookies in the refrigerator for 1 hour.
  • 3. After the hour has past, preheat oven to 375°F and take cookies out of the refrigerator. Bake for 10 to 12 minutes. Eat and enjoy.

1 cup shortening
1 cup peanut butter
1 cup sugar
1 cup packed brown sugar
3 large eggs, room temperature
3 cups all-purpose flour

Steps:

  • Preheat oven to 375°. In a large bowl, cream shortening, peanut butter and sugars until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Combine flour, baking soda and salt; add to creamed mixture and mix well. , Roll into 1-1/2-in. balls. Place 3 in. apart on ungreased baking sheets. Flatten with a fork or meat mallet if desired.
