The goodness of crisp salad ingredients comes through when topped with this simple homemade dressing. It tastes so fresh. Mom made it for our family when I was growing up, and now I serve it to my grandchildren. -Barbara Hyatt, Folsom, California

Number Of Ingredients 10

1 cup sugar
1 tablespoon ground mustard
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika
1/2 cup hot water
1/4 cup vinegar
2 garlic cloves, halved
1/4 cup canola oil
Mixed salad greens and shredded red cabbage

Steps:

  • In a 1-qt. jar with a tight-fitting lid, combine the first five ingredients. Add the water, vinegar and garlic; shake until sugar is dissolved. Add oil; shake well. Store in the refrigerator. Just before serving, remove garlic from the dressing. Drizzle over salad greens and red cabbage.

Excellent on a salad topped with blue cheese, dried cranberries, mandarin oranges and pecans but good on any green salad. I have made it with Splenda and even though it isn't quite as good IMHO, it is still a nice dressing. (The servings amount is a guess)

2/3 cup sugar (if you prefer a tarter dressing, cut back on the sugar some) or 2/3 cup Splenda sugar substitute (if you prefer a tarter dressing, cut back on the sugar some)
1/2 cup red wine vinegar
1 cup extra virgin olive oil (no substitutes)
1/4 teaspoon onion powder
1 teaspoon paprika
1 teaspoon salt

Steps:

  • To prepare dressing, warm wine vinegar slightly.
  • Add sugar and stir to dissolve.
  • If you don't warm the vinegar, you will have trouble getting the sugar to dissolve.
  • Allow to cool.
  • Add onion, paprika and salt.
  • Stir well.
  • Add olive oil and blend.
  • I prefer to put it in a bottle and shake it.
  • Pour over salad and enjoy!

3 tablespoons extra virgin olive oil ((or a more neutral-flavored oil like grapeseed, canola, or vegetable))
1 tablespoon white wine vinegar ((or balsamic, apple cider vinegar, rice, sherry, or other wine vinegar))
Pinch kosher salt
A turn of freshly ground black pepper
1-2 tablespoons fresh chopped herbs
A finely minced garlic clove
2 teaspoons finely minced or grated ginger
2 teaspoons finely chopped shallots, scallions, or onion
2 tablespoons finely grated or crumbled Parmesan ((Pecorino Romano, Gorgonzola, or feta are delicious too))
Pinch of crushed red pepper flakes (or 1 tablespoon horseradish or 1/4 teaspoon Sriracha)
1 teaspoon Dijon mustard
1/2 - 1 teaspoon sugar or honey

Steps:

  • Add all of the ingredients to a small mason jar, screw on the lid, and shake until blended. You can also whisk the ingredients together in a bowl or whirr them together in a blender.
  • Taste and adjust seasonings if desired. Add to salad, toss, and serve.
  • Keep leftover dressing in a sealed jar in the refrigerator for 2 - 3 days.
