I never have enough sauce from just a jar alone. I also like the taste of fresh ingredients. I like to combine both in this recipe! The red wine makes all the difference. Serve on favorite noodles with mozzarella cheese and mushrooms on top.

2 tablespoons butter
1 tablespoon extra-virgin olive oil
1 (8 ounce) package sliced fresh mushrooms
1 cup red wine, divided
1 pound ground beef
1 cup diced yellow onion
1 cup diced tomatoes
½ cup chopped red bell pepper
½ cup chopped green bell pepper
¼ cup minced garlic
2 tablespoons oregano
2 tablespoons basil
1 tablespoon rosemary
1 (6 ounce) can tomato paste
1 (28 ounce) jar spaghetti sauce

Steps:

  • Melt butter with olive oil in a small skillet over medium-high heat. Cook and stir mushrooms in butter mixture until softened, 2 to 3 minutes. Add 1/4 cup red wine; bring to a simmer, reduce heat to medium-low, and cook until the mushrooms are very dark and shrunken in size, about 20 minutes.
  • Heat a large pot over medium heat. Cook and stir ground beef, yellow onion, diced tomatoes, red bell pepper, green bell pepper, and garlic together until the beef is completely browned, about 10 minutes; season with oregano, basil, and rosemary. Stir 3/4 cup red wine and tomato paste into the beef mixture. Pour spaghetti sauce into the pot; stir. Return mixture to a simmer and continue cooking until the flavors blend, 10 to 30 minutes.

Doctored-Up Store Bought Marinara Sauce, Tastes Like Homemade image

Pasta is a staple food for any kitchen. It is inexpensive and filling. Not many of us have time to start marinara sauce from scratch so this recipe allows you to use a store bought sauce and then add your own spin to it. It is easy to make and freezes well. I use it for anything from spaghetti, manacotti, lasagna to chicken parmesan.

1 Prego spaghetti sauce (I use their Four Cheese marinara sauce, or your favorite jarred sauce)
1 (4 ounce) can sliced mushrooms (drained)
1 (14 1/2 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
1/8 teaspoon oregano
1/8 teaspoon bay leaf
1/8 teaspoon basil
1 pinch garlic salt
1/2 teaspoon sugar
1/8 teaspoon cinnamon (our family secret ingrediant, trust me!!)
1/8 teaspoon minced garlic (to taste)
1 tablespoon minced onion (to taste)
salt and pepper (to taste)

Steps:

  • Combine all ingredients in a large sauce pan.
  • Bring to a boil and then simmer for 20-30 minutes.
  • Serve over your favorite pasta dish.

KICK BUTT SPAGHETTI SAUCE (OUT OF A JAR!)

This is a conncoction I came up with tonight; I used hints and some 'secret' ingredients I've gathered from here and there. My husband could not believe it was out a jar - I had to show him the jar to prove it. Go ahead and try this...you know you want to and believe me, I'll never tell it started with a jar!! Enjoy!

1 1/2 tablespoons olive oil
1 tablespoon butter
1/2 cup chopped onion
1/2 cup sliced mushrooms
1 tablespoon minced garlic
26 ounces spaghetti sauce
1 teaspoon fennel
2 teaspoons italian seasoning
1/2 teaspoon dried oregano
salt & pepper, to taste

Steps:

  • In a large skillet or saucepan, melt butter with olive oil over medium-low heat.
  • Add chopped onion, mushrooms and garlic; saute until soft.
  • Add spaghetti sauce and seasonings, stir well.
  • Simmer over low heat for at least 10 minutes, but the longer the better. Remember to stir occasionally to make sure it doesn't scorch.
  • Serve over cooked spaghetti.

I've made this spaghetti sauce several times when we've had guests over for dinner parties. Always great the first, second and third time around.

1 lb ground beef (or 4 Italian sausage links cooked and cut into bite size pieces)
2 (14 1/2 ounce) cans diced tomatoes
1 (6 ounce) can tomato paste
1 (15 ounce) can tomato sauce
1/3 cup merlot (or red cooking wine)
1 teaspoon cayenne pepper (or to taste)
3 garlic cloves, crushed
1 small onion, finely chopped
1 zucchini, diced
1/2 green bell pepper, diced
1/2 red bell pepper, diced
1/2 large carrot, shredded
10 ounces button mushrooms (whole or sliced)
1 -2 teaspoon salt (or to taste)
1 teaspoon pepper (or to taste)
1/2 tablespoon oregano, ground
1/2 tablespoon basil, ground
2 teaspoons thyme
2 teaspoons sugar

Steps:

  • Brown ground beef and onion and drain.
  • Add zucchini and peppers to ground beef and cook for about 2 minutes stirring well.
  • Add wine to ground beef mixture and simmer for another 2 minutes, stir well.
  • Add rest of ingredients to hamburger mixture.
  • Simmer for 1-2 hours.
  • Serve on penne pasta or spaghetti noodles.
  • This can also be made in the crock pot. Cook the first three steps on the stove and add to the crock pot when completed. Add all other ingredients to crock pot, cover and cook for 6-8 hours.

26 ounces tomato and basil pasta sauce (jar ready- made )
2 tablespoons olive oil
1 sweet onion
4 garlic cloves
1 (14 1/2 ounce) can diced tomatoes
1 (14 1/2 ounce) can tomato sauce
1/2 cup red wine

Steps:

  • Chop onions and garlic.
  • Saute onions and garlic in olive oil until browned .
  • Mix everything together in a deep nonstick pot.
  • Bring to boil ( use no more than medium heat) stirring often.
  • Turn down low and simmer at least 30 minutes -- stirring often -- you can simmer prepared, cooked, meatballs in the sauce too.-- it is easy to make your own meatballs. The sauce with thicken up as you cook and the alcohol will cook off.
  • Serve over your favorite pasta.

I sometimes use jarred, store-bought spaghetti sauce but just have to make it 'mine'. My favorite is the Gia Russa Brand Traditional Sauce but others will work. This is what I do.....................................

1 (20 ounce) jar gia russa traditional spaghetti sauce
2 garlic cloves, chopped
1 tablespoon olive oil
1/2 cup butter
10 leaves fresh basil
salt and pepper, as needed
frozen meatballs, of your choice

Steps:

  • Saute the garlic in 1 tablespoon of olive oil until aromatic but not browned. Add the butter to melt, then the sauce, basil and spices. Heat thoroughly for about 10 minutes. At this point you can add frozen store bought meatballs and heat till warmed throughtout. Serve over your favorite pasta.
  • I prefer Trader Joe's Turkey Meatballs but any brand will do.

  • Heat one tablespoon of olive oil in the skillet over medium high heat. Add the turkey sausage and break apart with the back of a spoon or fork. Cook for 3-4 minutes or until mostly cooked. Transfer the meat to a bowl and set aside.
  • Return the skillet to the heat and add 1 1/2 teaspoons of olive oil. Add the mushrooms and cook in a single layer, turning occasionally until the mushrooms have shrunk by about half and have browned.
  • Add the remaining 1 1/2 teaspoons of olive oil and stir in the onion, bell pepper and carrots. Saute for 3-4 minutes or until softened.
  • Add the garlic, crushed fennel seed, basil, oregano and red pepper flakes and stir to combine. Cook for one minute or until the garlic and herbs are fragrant.
