MY FAVORITE CHICKEN CASSEROLE
My great-aunt gave me this recipe as part of a wedding present, and it is absolutely one of our favorite recipes ever! It takes a little time to prepare, but it's well worth it!

Steps:
- Mix diced chicken and broccoli in 9" x 13" casserole dish.
- Top chicken and broccoli with grated cheese.
- In separate bowl, mix soup, eggs, onion, chicken broth, mayonnaise, and salt& pepper to taste.
- Pour mixture over broccoli, chicken& cheese in casserole dish.
- Melt butter; toss into stuffing mix.
- Spread stuffing mixture over casserole.
- Bake for 30 minutes in 350° oven.

MY FAVORITE CHICKEN CASSEROLE
Don't remember where this recipe came from, but I've been making it for years. Changed it up a little to suit our tastes as I do many recipes. Great for leftover turkey too. Can cut recipe in half if you want...just use an 8 X 8 baking dish but still use the full box of stuffing mix. Gives you more stuffing per serving which...

Steps:
- 1. Cook chicken breasts until tender (or use leftover chicken or turkey). Shred chicken using two forks or chop into small pieces. Melt butter in 9 X 13 baking dish. Place chicken on top of butter. Mix 2 cans Cream of Chicken soup with the milk. Stir in drained peas. Pour over chicken and butter mixture.
- 2. Mix boxed stuffing mix with the chicken broth. (I add a little chopped onion and celery in with the stuffing mix). Spread stuffing mixture over chicken mixture in baking dish. (If you like more stuffing, use 2 boxes stuffing mix and 2 cups chicken broth.)
- 3. Bake one hour at 350 degrees.
FAMILY FAVORITE CHICKEN CASSEROLE
Steps:
- Boil chicken breast until tender and cut into pieces. Cook rice as directed on box and drain.
- Mix all above ingredients except cheddar cheese in a bowl and add chicken. Pour mixture in a casserole dish and bake for 45 minutes.
- The last ten minutes of baking, add cheese for topping.

FAVORITE CREAMY CHICKEN CASSEROLE

Steps:
- Preheat oven to 350°. Cook noodles according to package directions. Meanwhile, in a large bowl, combine the remaining ingredients. Drain noodles; add to chicken mixture., Transfer to 2 greased 8-in. square baking dishes. Cover and bake 30 minutes. Uncover and bake 10-15 minutes longer or until heated through. Freeze option: Cover and freeze unbaked casseroles up to 3 months. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Cover and microwave on high for 10-12 minutes or until heated through and a thermometer inserted in center reads 165°, stirring twice.

MY FAVORITE MEXICAN CASSEROLE
This is super quick and delicious. The only thing I'd do differently is add some jalapeno peppers to make it spicier. It's a great way to use the bottom of the tortilla chip bag. Steps:
- Preheat oven to 350.
- Grease a 13x9" baking dish and scatter crushed tortilla chips evenly on the bottom.
- Combine the chicken, beans, corn, tomato sauce, salsa, onion, bell pepper, cilantro, garlic, sant, and pepper in a bowl.
- Place half the mixture evenly in the baking dish.
- Combine the cheeses and sprinkle half over mixture.
- Cover with the remaining half of the chicken-and-bean mixture and sprinkle the remaining cheese over top.
- Bake for 30 minutes.
- Let stand for 5 minutes before serving.
- Serve the garnishes in bowls so guests can top their portions with diced tomatoes, sour cream, and cilantro.
