Number Of Ingredients 10

1-1/2 cups all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
2 large eggs, room temperature
1/4 cup butter, melted
1 teaspoon vanilla extract
Optional: Mixed fresh berries, whipped cream, maple syrup and butter

Steps:

  • In a large bowl, whisk together the first 5 ingredients. In another bowl, whisk remaining ingredients; stir into dry ingredients just until moistened., Preheat griddle over medium heat. Lightly grease griddle. Pour batter by 1/4 cupfuls onto griddle; cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is golden brown. Serve with toppings as desired.

This has been the pancake recipe for my family since I was able to eat them. I don't know where my mother got this recipe but it's the best I've ever had. They rise up nice and high. I sometimes add vanilla and spices like cinnamon and nutmeg. Very tasty!!

1 3/4 cups all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 eggs
3 tablespoons vegetable oil or 3 tablespoons canola oil
1 1/2 cups milk
1/2 teaspoon vanilla extract

Steps:

  • In large bowl, stir together flour, sugar, baking powder and salt.
  • In another bowl, whisk eggs, oil, milk and vanilla.
  • Add liquid to dry mixture and whisk.
  • Don't overmix; batter should be lumpy.
  • Heat a heavy griddle or fry pan which is greased with a little butter or oil .
  • The pan is hot enough when a drop of water breaks into several smaller balls which 'dance' around the pan.
  • Pour a small amount of batter (approx 1/4 cup) into pan.
  • When bubbles appear on surface and begin to break, turn over and cook the other side.
  • Enjoy!

This developed from my quest for yummy pancakes that even I loved. I'm not a huge fan of pancakes, but I LOVE these fluffy (not too fluffy!) and sweet (not too sweet!) babies. I hope you try them and enjoy them, too!

nonstick cooking spray
1 1/4 cups all-purpose flour
1 egg
1 cup buttermilk
1/4 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon vanilla (or 1/2 scraped bean)
1/4 cup oil

Steps:

  • Combine all ingredients in a blender until smooth.
  • Pour about 2/3 - 1/2 cupful of batter onto a preheated griddle or skillet sprayed with non-stick spray.
  • Turn when plenty of bubbles appear on the surface of the pancake.
  • Enjoy with your choice of syrup or fruit!

I thought I would try to preserve it here. The recipe has been increased from the original to better provide for our very large family.

6 teaspoons baking powder
1 1/2 teaspoons salt
3 tablespoons sugar
2 eggs, beaten
2 1/2 cups milk
1/2 cup oil

Steps:

  • Heat griddle while mixing batter.
  • Mix dry ingredient thoroughly.
  • Combine egg with milk and oil.
  • Add to dry ingredients and stir until combined. Batter will be lumpy.
  • For each pancake, pour about 1/4 cup batter onto hot griddle. Cook until edges become slightly dry and bubbles form on top. Turn and brown the other side.

2 Tbsp salad oil

Steps:

  • Sift together dry ingredients. Combine egg, milk, and salad oil in a bowl. Add to dry ingredients. Stir until moistened.
  • Spoon pancake batter onto prepared griddle or large skillet.
  • Cook 1 to 2 minutes; turn and cook until golden brown. Repeat using remaining batter.

1 1/4 cups flour
3 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
1 beaten egg
1 cup milk
2 tablespoons salad oil or 2 tablespoons melted shortening

Steps:

  • Sift together flour, baking powder, sugar, and salt.
  • Combine egg, milk and salad oil; add to dry ingredients stirring just until flour is moistened (batter will be lumpy).
  • Use a 1/4 cup measuring cup for 4-inch pancakes, or use a Tablespoon for dollar-size pancakes.
  • Makes about 12 dollar size or 8 4-inch pancakes.
