Puffed Wheat Treats image

A delicious snack similar in preparation and style to Rice Krispie Squares, but tastes nothing like them. Although, they taste nothing like them.

Number Of Ingredients 6

1/3 cup butter
1 cup brown sugar
1/2 cup molasses
1/2 cup corn syrup
1/2 teaspoon vanilla
12 cups puffed wheat cereal

Steps:

  • Boil butter, brown sugar, molasses, and corn syrup for 5 minutes.
  • Add vanilla.
  • Prepare puffed wheat in a large bowl. Butter a 12x9 pan.
  • Add boiling syrup to puffed wheat and stir well.
  • Quickly press mix into baking dish and press down with the spoon.
  • Cool, cut, and enjoy!

WHOLE GRAIN GRANOLA

This recipe for a not-too-sweet, olive-oil and honey-enriched granola can be used as a template. Vary the types and amounts of puffed and rolled (also called flaked) grains, coconut and nuts to suit your taste, as long as you use eight cups altogether. And feel free to add chopped dried fruit at the end, stirring it into the granola mix while it's still warm. If you want to add spices, stir a mix of ground cinnamon, ginger, and cardamom into the honey mixture before baking. It's easy to make this recipe your own.

2 1/2 cups puffed kamut (or use other puffed whole grains, such as barley or wheat)
2 cups rolled barley (or use rolled oats, rolled spelt, rolled triticale or rolled rye)
1 1/2 cups raw (untoasted) nuts, such as whole almonds, walnuts or pecans, or a combination
1 cup unsweetened coconut chips or shredded coconut
1 cup raw pepitas (pumpkin seeds)
2/3 cup honey
1/2 cup extra-virgin olive oil
1/3 cup dark brown sugar
1 1/2 teaspoons kosher salt

Steps:

  • Heat oven to 300 degrees. Mix all ingredients together and spread out on two baking sheets lined with parchment paper.
  • Bake until golden brown all over, about 35 to 50 minutes. Stir the granola as it bakes at least 2 or 3 times, making sure to stir around the edges. Cool completely before storing airtight.

3 tablespoons melted unsalted butter, plus more for iron
3 large eggs
1 1/2 cups plain, low-fat yogurt

Steps:

  • In a large bowl, whisk together flours, oats, salt, baking powder, and baking soda. In another bowl, whisk together brown sugar, butter, eggs, and yogurt until smooth. Stir egg mixture into flour mixture and mix well to combine. Let batter sit 15 minutes.
  • Heat waffle iron according to manufacturers instructions; brush with melted butter. Pour 1/2 cup batter onto iron and close; cook until waffle is golden brown and crisp, about 3 minutes. Transfer to a wire rack set on a baking sheet and place in low-temperature oven to keep warm; repeat with remaining batter.

Yes, it is worth your while to make English muffins from scratch. Not only is the texture lighter and crisper, homemade muffins taste better, too - yeasty, wheaty, complex. You will need to sear these muffins on the stove top before baking. That's what gives them their unique crunch on their bottoms. This recipe does not require muffin rings, but if you have them and would like to use them, go right ahead. Just add a few minutes onto the baking time to accommodate the muffins' increased thickness. Then fork-split them, toast and serve with plenty of butter. After all, that's what those crevices are made for.

Number Of Ingredients 10

2 teaspoons/7 grams active dry yeast (1 packet)
4 tablespoons/60 grams unsalted butter
1/2 cup/120 milliliters plain yogurt
1/2 cup/120 milliliters warm whole milk
1/2 tablespoon/7 milliliters honey
1 teaspoon/5 grams fine sea salt
1 cup/125 grams whole-wheat flour
1 cup/125 grams all-purpose flour
1/2 teaspoon/4 grams baking soda
Cornmeal, preferably coarse, as needed

Steps:

  • In a small bowl combine yeast and 1/3 cup warm water (80 milliliters) and let rest until yeast has dissolved, about 5 minutes.
  • Melt 2 tablespoons butter and put it in a large bowl. Whisk in yogurt, milk, honey, salt and the yeast mixture.
  • Add flours and baking soda to bowl and beat thoroughly with a spoon or rubber spatula until well combined. Cover bowl and let rest in a warm spot for 1 to 1 1/2 hours, or until dough has doubled.
  • Heat oven 350 degrees. Lightly dust a small baking sheet with cornmeal.
  • Place a large skillet over medium heat and melt 1 tablespoon butter. Using a large ice cream scoop or 1/2 cup measuring cup, drop batter into skillet to form round muffins about 4 inches in diameter, mounding the batter in the center. (You may need to coax the dough a little with your fingers, so be careful of the hot pan, and don't worry if they're not perfectly circular.) Repeat until you have 3 muffins, leaving the rest of the batter for a second batch. Reduce heat to low. Cover skillet with lid or baking sheet and cook 3 to 5 minutes, until bottoms are golden brown. (Be careful not to let them burn.)
  • Uncover skillet and flip muffins using a spatula. Cover again and cook 2 to 4 minutes or until the other sides are golden brown. Place muffins on prepared baking sheet. Repeat using remaining batter and another tablespoon of butter.
  • Bake muffins for 6 to 9 minutes, or until puffed and cooked through. Split the muffins with a fork and toast before eating.

2 1/2 cups whole wheat flour, preferably pastry flour
3/4 to 1 cup sugar, depending on sweetness of fruit
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup mashed or puréed banana, sweet potato, apple, zucchini, cooked or canned pumpkin, or other fruits or vegetables
1 egg, beaten
1/2 cup buttermilk

Steps:

  • Preheat oven to 375 degrees and grease two 6-cup muffin tins or fill with liners. In a large bowl, mix together the flour, sugar, baking powder, baking soda and salt. In another bowl, whisk together the melted butter, banana, egg and buttermilk. Fold wet mixture into dry mixture and stir until just combined.
  • Fill muffin tins or liners; bake for about 25 to 30 minutes, or until muffins are puffed and turning golden brown on top. Serve warm if possible.

2 cups plain yogurt
1/2 cup canned crushed pineapple (packed in its own juice instead of packed in syrup)
1 (12 ounce) can pineapple juice concentrate (concentrate, thawed) or 1 (12 ounce) can pineapple-orange juice (concentrate, thawed)

Steps:

  • Drain the can of crushed pineapple so all the juice runs out.
  • Put all the ingredients in a medium-sized bowl and mix them together.
  • Spoon the mixture into the paper cups. Fill them almost to the top.
  • Stretch a small piece of plastic wrap across the top of each cup.
  • Using the popsicle stick, poke a hole in the plastic wrap. Stand the stick straight up in the center of the cup.
  • Put the cups in the freezer until the mixture is frozen solid.
  • Remove the plastic wrap and peel away the paper cup and enjoy.
