1 pound large shrimp (21-25 per pound), peeled and deveined, tails left on
¼ cup all-purpose flour
½ teaspoon garlic powder
½ teaspoon salt
2 large eggs
1 ½ cups sweetened shredded coconut
½ cup panko bread crumbs
8 tablespoons light olive oil, or any high-heat cooking oil
Reynolds® Parchment Paper
¼ cup sweet chili sauce
¼ cup apricot preserves or apricot fruit spread

Steps:

  • Rinse shrimp in cold water and pat dry with paper towels.
  • Set up 3 shallow bowls. In the first, stir together 1/4 cup flour, 1/2 teaspoon garlic powder and 1/2 teaspoon salt. In the second, add eggs and lightly beat with a fork. In the third, combine 1 1/2 cups coconut flakes and 1/2 cup panko bread crumbs.
  • Dredge shrimp in flour, dip in beaten egg and then finally dip in coconut crumb mixture using your hands to press the mixture onto the shrimp. Transfer to a Reynolds® Parchment Paper lined baking sheet and repeat with remaining shrimp. Once all of the shrimp are breaded, saute right away.
  • Place a large non-stick pan over medium heat and add enough oil to generously cover the bottom. Once oil is hot, add shrimp and saute 2 to 3 minutes, flip and saute another 2 minutes until golden brown on both sides and shrimp is firm and pink. Cook in batches and don't overcrowd the pan.
  • Stir together the sweet chili sauce and apricot preserves and serve with coconut shrimp.

1 cup orange marmalade

Steps:

  • Preheat oven to 400 degrees F.
  • Rinse off thawed shrimp and pat dry, set aside.
  • In a medium mixing bowl combine flour, cornstarch, salt, and white pepper.
  • Then add in water and 2 Tablespoons vegetable oil. Whisk together until well blended. Set aside.
  • Heat 2-3 inches oil in a large pot until oil reaches 325 degrees F.
  • Place coconut on a small cookie sheet or pan.
  • Dip each shrimp in the batter and then roll in the shredded coconut.
  • Fry shrimp in hot oil just until they start to turn golden brown.
  • Place fried shrimp on a large cookie sheet and bake in preheated oven 5 minutes to finish cooking.
  • While shrimp is baking, make the Marmalade Dipping Sauce by combining the orange marmalade, Dijon mustard, honey, and hot sauce in a bowl.
  • Serve shrimp with the marmalade dipping sauce.

1 1/2 cups cornstarch, divided
2 cups plain breadcrumbs
2 cups sweetened flaked coconut
1 cup Coco Lopez (cream of coconut)
2 tablespoons powdered sugar
1 lb of raw shellled deveined and butterflied shrimp
1/3 cup sour cream
1/3 cup crushed pineapple (drained)
1/2 cup Coco Lopez

Steps:

  • *Caution when making this recipe make sure that the oil is not too hot, for the shrimp will burn on the outside and be raw inside.
  • In a large plate, place 1 cup corn starch and set aside.
  • In a bowl combine 1 cup pina colada mix and powdered sugar and stir until well combined.
  • In another large plate, combine bread crumbs, 1/2 cup cornstarch and coconut whisk around to blend together.
  • Dip and coat each shrimp in the cornstarch. Then dip and coat each shrimp in the pina colada mix, then dip and coat it in the bread crumb mixture. Repeat it one more time, by dipping them in the pina colada mix and then the bread crumb mix.
  • Bring oil to a boil and temperature of 375 degrees. Then place each shrimp in and let boil until golden brown.
  • Do not overcrowd pan to avoid a drop in temperature.
  • Place on colander to drain.
  • Assemble dipping sauce in a small bowl by combining sour cream, coco lopez and pineapple and mix well.Serve and Enjoy!

Steps:

12 shrimps ( , butterflied )
1/8 tsp. ground white pepper
1/4 tsp. salt
1/4 tsp. sugar
1/4 cup cornstarch
1 egg
1 tbsp. coconut milk
1/3 cup desiccated coconut
1/ cup breadcrumb

Steps:

  • Peel and devein the shrimp, but keep the tail. Use a knife to cut the back and spilt the shrimp. Slightly flatten the meat gently.
  • Marinate shrimp with salt, pepper and sugar. Set aside.
  • In a small bowl, mix egg with coconut milk.
  • Spread cornstarch, then mix breadcrumb and coconut well.
  • Dip the shrimp in starch, egg and mixture of breadcrumb and coconut. Heat oil until hot. If you stick in one chopstick, fine bubble forms immediately (the temperature should be around 160 degree C). Place 5-6 shrimp in for each batch. Fry for 8-12 seconds or until golden brown. Got this recipe from a Family Circle magazine years ago. I am so glad I found it, it is one of my favorite recipes and is always a hit!! Note: Servings and yields are estimated as it depends on what size shrimp you use.

1 (7 1/4 ounce) bottle Chinese duck sauce
1/4 cup ketchup
1 tablespoon low sodium soy sauce
1 1/2 pounds.- shrimp, large or 1 medium size shrimp
3/4 cup blanched whole almond
7 ounces about 2 2/3 cups sweetened flaked coconut, divided
1/2 cup all-purpose flour
2 eggs, lightly beaten
1/4 teaspoon salt
vegetable oil (for frying)

Steps:

  • Dipping Sauce:.
  • In small bowl combine all ingredients. Stir till smooth. If makeing ahead of time and refrigerating, return to room temp before serving.
  • Coconut Shrimp:. Buy shrimp cleaned and with the tails Left On --
  • 1. Rinse shrimp in cool water and pat dry.
  • 2. In food processor, combine almonds and 2/3 cup of coconut. Pulse till finely ground.
  • 3. In medium size shallow dish, blend together almond-coconut mixture, remaining coconut and flour.
  • 4. In small bowl whisk together eggs and salt. Set up assembly line for coating shrimp.
  • 5.Dip a few pieces in eggs, allowing excess to drip back in bowl. Then coat in in coconut mixture gently pressing with hands to help it adhere.
  • 6. Place on waxed paper lined bakeing sheet. At this point You can cover in plastic wrap and store till ready to fry. (I have done it to this point about 5 hours in advance with no problems).
  • 7. Heat oil to 375 degrees on deep fry thermometer, if you don't have a thermometer, fry a 1 inch bread cube. It should crisp up golden brown in 30 - 40 seconds.
  • 8. Fry shrimp a few at a time, 1 to 2 minutes, till golden brown.
  • 9. Remove with slotted spoon and let drain on paper towels.
  • Serve warm shrimp with dipping sauce and Enjoy!

1.5 lb large shrimp (raw, peeled, deveined, tail on)
3 tbsp corn starch
3/4 cup coconut
3/4 cup panko bread crumbs
2 tbsp unsweetened coconut cream
3 tbsp unsweetened coconut cream
3 tsp sugar
1/2 cup sour cream
4 oz crushed pineapple (drained but save the juice)
1 tbsp pineapple juice
1 tsp Malibu Rum (optional)
splash lime juice

Steps:

  • Please note - pour out the coconut cream into a bowl and mix together. It separates and there's a solid portion and a liquid portion. You can microwave it for 30 seconds so they mix together more easily.
  • In a small bowl whisk 2 tablespoons cream of coconut, sugar and sour cream until well combined.
  • Stir in the crushed pineapple. Whisk in the lime juice, Malibu Rum and pineapple juice to thin it out a little.
  • Refrigerate until ready to serve. You can make this in advance as well.
  • Cover a large baking sheet with parchment paper.
  • Season the shrimp with salt and pepper.
  • Add ½ the cornstarch and ½ the shrimp to a large ziploc bag. Close the bag and shake it up gently to coat the shrimp.
  • In a large shallow bowl mix the coconut flakes and panko crumbs together. Remove half of them to a separate bowl.
  • Working with a few of the corn starch coated shrimp at a time, dunk them into the coconut cream, let the excess drip off then coat them with the coconut-panko mixture (adding more to the bowl as needed) patting it on with your hands to help it stick.
  • Place them on the baking sheet. Continue until they're all coated.
  • Repeat with the remaining cornstarch and shrimp until they're all coated.
  • Cover them with plastic wrap and refrigerate until ready to cook.
  • Set each of the shrimp in the air fryer so they're not touching
  • Spritz with olive oil spray
  • Air Fry at 400 for 7 minutes - flip
  • Spray and air fry 7 min more
  • In a Dutch oven or deep-sided frying pan fitted with a splatter screen heat about 1 + ½ inches of oil over medium heat to 350 degrees F.
  • Fry the shrimp in batches of 6 - 8 shrimp about 3 minutes or until golden.
  • Drain on paper towels or a wire rack.
  • Serve warm with pina colada dipping sauce.

2 tablespoons crushed pineapple (drained)

Steps:

  • Mix together pina colada mix, water, crushed pineapple, coconut, and powdered sugar in a saucepan.
