RAO'S FAMOUS MEATBALLS

I saw this on the Today Show. I made them one night and now my family asks for them at least once a week. They may seem labor intensive but they are most certainly worth the effort. You can serve them with spaghetti or on their own. Hope you enjoy them as much as we do!

Yield 14-16 meatballs

Number Of Ingredients 12

1 1/2 lbs ground beef
1/2 lb ground veal
1/2 lb ground pork
4 large garlic cloves (3 minced and 1 reserved for frying)
2 tablespoons parsley
2 large eggs
1 1/2 cups water
2 cups pecorino romano cheese, grated
1 cup plain breadcrumbs
salt and pepper
2 cups cooking oil or 2 cups olive oil, for frying
tomato sauce, of your choosing. (But really good in a tomato-basil sauce.)

Steps:

  • In a large bowl, place the meat and rub the minced garlic into it.
  • Press the meat in the bowl.
  • Add in this order: Salt, pepper, parsley, 2 eggs and water. Then sprinkle the cheese over the top as if you are going to cover the water. Finally, sprinkle the breadcrumbs over the cheese.
  • Mix from the outside of the bowl to the middle, folding it inches Do not overmix!
  • After the ingredients are mixed, start to roll the meatballs in your hands, about 6 ounces per meatball.
  • After your meatballs are rolled, take a 10 inch frying pan and add your oil and the reserved whole clove of garlic and heat. When the clove starts to brown, the oil is ready.
  • Fry the meatballs, cooking and flipping until golden brown, about 4 1/2 to 5 minutes per side.
  • Remove the meatballs after frying and put on a paper towel lined plate to absorb excess oil.
  • (If you want you can bake the meatballs on a lightly greased tray at 350 degrees-the taste is totally different than frying).
  • Add the meatballs to your tomato sauce to finish cooking.
  • Let simmer for at least 45-60 minutes.
  • Serve with the sauce.

Here it is, my mom's FAMOUS Meatball recipe! This is THEE most requested of her for anything, anywhere! Whenever there is a shower, birthday, christening, etc., someone is asking for 150 to 200 of her famous meatballs. :) Of course, she always says yes! She is not one for "exact" measurements (a little of this, a dash of that), so I tried the best I could to adapt her recipe. Of course, these are best served with My Mama Iuliucci's "Don't Skip a Step" Spaghetti Sauce recipe #26947, but I have used jazzed-up jarred sauce and they are still great. However, meat-a-balls like these deserve a homemade sauce, in my humble opinion!

Number Of Ingredients 10

2 lbs lean ground beef
8 -10 slices white bread, broken into small 1/2 inch pieces (or you can use rolls or any stale bread you have and want to use up)
2 eggs, slightly beaten
1/2 teaspoon garlic powder (or to taste)
1 teaspoon italian seasoning (or to taste)
2 teaspoons parsley flakes (or to taste)
1/4-1/2 cup grated parmesan cheese (or Locatelli)
1 -2 teaspoon salt
1/4-1/2 teaspoon black pepper
olive oil (for frying) or vegetable oil (for frying)

Steps:

  • Mix all ingredients gently in a large bowl until well combined.
  • Roll meatballs 1 1/2- 1 3/4" in diameter.
  • Heat about 1/4" of oil over medium heat in a large frying pan.
  • Fry meatballs in oil, rolling frequently, until evenly browned and juices run clear.
  • Drop meatballs in your favorite sauce (I highly recommend My Mama Iuliucci's"Don't Skip a Step" Spaghetti Sauce recipe#26947) and let simmer for awhile to flavor sauce or just serve with your favorite pasta and sauce.
  • Tip: You can also bake or broil these if the frying part is too much of a hassle-- I use my broiler pan if I bake them, so the fat drips down and away from the meatballs.

My Dad made wonderful tasting meatballs, now I am not claiming that this is the exact recipe, but this is how he told me he made them. Problem is they never quite tasted as good as his. But everyone that has these seems to love them this way. I'm happy with that.

3 lb of ground hamburg
1/2-1 lb of ground pork, or buy italian sausage links and take meat out of casings
2 eggs
1/2 c milk
tablespoon of jarred garlic and juice, or use fresh your choice
1 large green pepper
1 large onion
bread crumbs, seasoned or plain
parmesan cheese
ITALIAN SPICES , QUANTITY IS HARD AS I ADD TO TASTE: GARLIC POWDER, OREGANO, PARSLEY, PEPPER TO TASTE.

Steps:

  • 1. Well I have never written down the recipe for this so I will do the best I can. Start with cutting up half a pepper and half of a white onion and one egg and a little milk in your blender, blend til all is liquid.
  • 2. Pour the egg and pepper mixture into a bowl and add the seasoned bread crumbs. Let sit ` now the mixture should be thickened but not to thick, this is how your meatballs will come out, if to runny the meatballs will fall apart, if to thick the meatballs will be dry so get it just right by adding more milk or an egg or if to wet more breadcrumbs.
  • 3. Add your Italian seasoning to this mixture, I have shown what I add, but the amounts will be to your taste, add your hamburg. Put about a 1/2 cup of Parmesan cheese in the meatball mixture and put some in a bowl to roll your meatballs in when you brown them, makes them crispy on the outside.
  • 4. In a large skillet (I use my cast iron one) saute' some peppers and onions in olive oil, and a little chopped garlic ( I use the jar in liquid) remove when soft but not to browned. Now add more olive oil and start adding your rolled up meatballs that have been dipped in the grated Parmesan and quickly brown them.
  • 5. Now you can put them right in your sauce. Let all simmer for an hour at least or more. I also sprinkle some Parmesan in the sauce, a little sugar (to keep the acid down)

DAD'S SWEDISH MEATBALLS

My father used to make these tender meatballs every year for Christmas when I was a kid. Now I carry on the tradition, and everyone still loves them.

1 egg, lightly beaten
1/2 cup milk
1 cup soft bread crumbs
1/2 cup finely chopped onion
1 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon pepper
1 pound ground beef
1/2 pound ground pork
1/4 cup butter, cubed
DILL CREAM SAUCE:
2 tablespoons all-purpose flour
1 cup heavy whipping cream
1 cup beef broth
1 teaspoon salt
1/2 teaspoon dill seed

Steps:

  • In a large bowl, combine the first seven ingredients. Crumble beef and pork over mixture and mix well. Shape into 1-1/2-in. balls. In a large skillet, cook meatballs in butter in batches until a thermometer reads 160°. Remove and keep warm., In a small bowl, combine the sauce ingredients until blended. Stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with meatballs.

Found this in a local newspaper from years ago. They taste like ones my mom used to make. They are "famous" and a favorite of my husband and son. I put them in my homemade spaghetti sauce. UPDATE: After reading your comments I decided to increase the ground beef to 2#lbs [instead of 1#lb]

2 lbs ground chuck
1 -2 garlic clove, minced
1 teaspoon parsley flakes
1/4 teaspoon oregano
2 eggs
1 cup plain breadcrumbs
1 cup milk (the recipe called for non-fat but i use 2%)
1/2 medium Spanish onion, chopped fine (or use onion powder)
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Combine all ingredients.
  • Shape into balls (i use my Pampered Chef med scoop) Place in baking pan.
  • Bake@ 325* deg.
  • for 20-30 min, until done.

I grew up on these meatballs. My dad use to make them all the time and now I do for my family and friends and everyone loves them. We make a lot so we can have spaghetti one night and the meatball subs the next! To be honest I made the measurements as best I could but it goes by your own judgment. Once the eggs and bread crumbs are mixed you just shake the spices over the meat to cover evenly.

1 teaspoon onion powder

Steps:

  • Place the ground beef ( 7% fat is best ) in a large mixing bowl.
  • Preheat oven to 375°F.
  • Then place eggs and bread crumbs in and mix well with your hands.
  • Then put in all spices. The best thing to do is sprinkle them over the mixture evenly. I made the measurements the best I could, but I have never really measured before. I only went by my own judgment.
  • Using a broiling pan so that the grease drips down inside of it, roll your meatballs according to size.
  • Bake for about 20 minutes, turning the meatballs half way through.

1 1/2 lbs ground beef
1 cup dry Italian seasoned breadcrumbs
3/4 cup grated romano cheese
2 eggs
2 garlic cloves, minced
1 tablespoon milk
1/4 cup chopped fresh basil
1/3 cup chopped fresh basil
2 tablespoons olive oil
2 garlic cloves, minced
1 (6 ounce) can tomato paste
2 (28 ounce) cans crushed tomatoes
1/2 teaspoon sugar

Steps:

  • Combine first 6 ingredients with 1/4 cup basil. Shape into 16 meatballs.
  • In nonstick skillet, heat 1 T. oil over medium heat. Add half of meatballs; cook, turning once, until browned, 3 minutes per side. Remove from pan. Repeat with remaining oil and meatballs. (Stop at this point if you are making your own sauce, add meatballs to your sauce and cook for 45 minutes or so).
  • To skillet add garlic. Cook until lightly browned,1 minute. Stir in tomato paste. Fill paste can halfway with water; stir into mixture.
  • In pot over medium heat combine crushed tomatoes and paste mixture. Stir in sugar and remaining basil. Bring to simmer; add meatballs. Partially cover; cook until meatballs are no longer pink inside, 45 minutes.

These pineapple meatballs are a favorite for any occasion. I made 14 pounds of meatballs for my sister's graduation party, and I only had 1 medium container left. My mother made sloppy joes, and needless to say, they had a lot of leftovers because everyone loved these meatballs. Guaranteed favorite!

1 green bell pepper, sliced
½ cup brown sugar
2 tablespoons cornstarch
2 tablespoons soy sauce

Shuler's is a very well known restaurant in Michigan with great food. It's nice to have a few of their recipes! Found in March 30, 2004, Detroit Free Press with this quote: "Schuler meatballs are tender, not chewy or crispy. To achieve this, use fresh bread crumbs. A couple slices of tender white bread processed in the food processor should do the trick." I've not made this yet.
