2 eggs
⅔ cup milk
2 teaspoons salt
¼ teaspoon ground black pepper
3 slices bread, crumbled
1 ½ pounds ground beef
1 onion, chopped
1 cup shredded Cheddar cheese
½ cup shredded carrot
¼ cup brown sugar
¼ cup ketchup
1 tablespoon prepared yellow mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk eggs, milk, salt, and ground black pepper in a large bowl. Add crumbled bread and stir until dissolved. Mix ground beef, onion, Cheddar cheese, and carrot into bread mixture; transfer mixture to a 9x5-inch loaf pan. Combine brown sugar, ketchup, and mustard in a small bowl; spread over meat mixture.
  • Bake in the preheated oven until no longer pink in the center, 1 to 1 1/4 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

This is my family's favorite meatloaf. It is seasoned with tomato and onion and comes out very moist and flavorful. Recipe is from Campbell's Kitchen.

1 (10 3/4 ounce) can Campbell's condensed tomato soup
2 lbs lean ground beef
1 (1 1/4 ounce) envelope dry onion soup mix
1/2 cup dry breadcrumbs
1 egg, beaten
1/4 cup water

Steps:

  • Mix thoroughly 1/2 cup tomato soup, beef, onion soup mix, bread crumbs and egg.
  • Shape firmly into 8x4 inch loaf baking pan.
  • Bake at 350°F for 1 1/4 hour or until done.
  • Mix 2 T drippings, remaining tomato soup and water in saucepan; heat through.
  • Serve with meatloaf.

We opted for an all-beef meatloaf rather than the traditional mix of beef, veal and pork because we wanted that satisfying big beef flavor. Milk adds richness and tenderizes the meat, preventing it from getting tough or dry. We also cook the onion instead of adding it raw as many recipes suggest, which imparts a welcome sweetness and eliminates that harsh raw onion flavor.

2 large eggs, lightly beaten
1/3 cup milk
3 tablespoons Worcestershire sauce
Kosher salt
1/4 cup olive oil
1 large onion, chopped
2 cloves garlic, finely grated
1 tablespoon thyme leaves, chopped
Freshly ground pepper
1/2 cup ketchup
2 pounds 80/20 ground beef chuck
1/2 cup panko

Steps:

  • Arrange a rack in the center of the oven and preheat to 450 degrees F. Line a rimmed baking sheet with foil.
  • Whisk the eggs, milk, Worcestershire sauce and 2 teaspoons salt in a large bowl until completely combined. Heat the oil in a large skillet over medium-high heat. Add the onion, garlic, thyme, 1/2 teaspoon salt and 1 teaspoon pepper and cook, stirring occasionally, until the onions are tender and lightly golden brown, 8 to 10 minutes.
  • Add 3 tablespoons of the ketchup and cook until most of the moisture has evaporated and the mixture is thick and brick red colored, 3 to 4 minutes. Remove the skillet from the heat and let the onions cool slightly. Then add them to the beaten eggs and mix to combine.
  • Add the beef to the egg and onion mixture. Break up the meat with a fork or wooden spoon, and then mix to thoroughly combine; you don't want to see any lumps of raw beef. Add the panko and mix to combine. Stir the meat vigorously with a wooden spoon for about 7 seconds; it will become more homogenous and tackier.
  • Transfer the meat to the prepared baking sheet and shape into a 9-by-5-inch loaf. Smooth the top and evenly spread the remaining ketchup over top. Bake for 5 minutes, and then reduce the oven temperature to 350 degrees. Continue to bake until an instant-read thermometer inserted into the center of the loaf registers 150 degrees F, 30 to 35 minutes. Allow the meatloaf to rest for 20 minutes before slicing.

A variation on Samantha19f2001's "I hate meatloaf, but...", recipe. I loved hers, but didn't have a use for the extra soup and my husband loves the topping I made. So this recipe combines the best of both for my household.

1 lb pork sausage (bulk not links)
2 eggs
1 cup breadcrumbs
1 (10 1/2 ounce) can condensed cream of mushroom soup
1/4 cup ketchup
2 teaspoons Worcestershire sauce
1/2 cup ketchup
4 tablespoons brown sugar
4 teaspoons dry mustard

Steps:

  • Turn oven on and set at 350 degrees.
  • Mix the first 7 ingredients together thoroughly. Using your hands is the best way to get it done. Form meat into a loaf shape and place in a baking dish.
  • Place the meatloaf in the oven bake for 60 minutes.
  • While meatloaf is in the oven, mix the final 3 ingredients together.
  • After the 60 minutes, remove the meatloaf from the oven and spread the ketchup topping over the loaf.
  • Place back in the oven for 15 minutes.
  • Note: Make sure meat is cooked. You don't want to eat rare pork. Also, the meatloaf serves up easiest if you let it rest a few minutes before slicing.

1 carrot, coarsely chopped
1 rib celery, coarsely chopped
½ onion, coarsely chopped
½ red bell pepper, coarsely chopped
4 white mushrooms, coarsely chopped
3 cloves garlic, coarsely chopped
2 ½ pounds ground chuck
1 tablespoon Worcestershire sauce
1 egg, beaten
1 teaspoon dried Italian herbs
2 teaspoons salt
1 teaspoon ground black pepper
½ teaspoon cayenne pepper
1 cup plain bread crumbs
1 teaspoon olive oil
2 tablespoons brown sugar
2 tablespoons ketchup
2 tablespoons Dijon mustard

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
  • Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
  • Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
  • Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
  • Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
  • Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.

1 onion, chopped
1 clove garlic, minced
1 (8 ounce) can tomato sauce
2 tablespoons chopped parsley
1 1/2 lbs ground beef

1/4 teaspoon pepper
4 slices bacon

Steps:

  • Preheat oven to 350 degrees.
  • In a medium skillet heat oil over medium heat.
  • Add onion and garlic and cook until softened.

2 lbs ground venison
1 1/2 cups tomato-based barbecue sauce
1 teaspoon seasoning salt or 1 teaspoon sodium-free seasoning
1 1/4 cups quick oatmeal (not instant)
3 tablespoons minced onions
1/4 cup Egg Beaters egg substitute or 1/4 cup egg substitute
1 tablespoon wheat germ (for Vitamin E only) (optional)
1 tablespoon ground flax seeds (for nutritional value only) (optional)
1/2 cup bull eye barbecue sauce

Steps:

  • Preheat oven to 350 degrees.
  • Spray glass or metal baking pan with non-stick baking spray.
  • Place all ingredients, except venison, in large bowl and mix well.
  • Add the venison and mix well.
  • Form into two loaves and place them in baking dish.
  • With your fingers or handle of wooden spoon, make about 10-12 holes in top of meatloaf.
  • Pour the sauce over the top of meatloaf, letting some sauce run into the holes and a little run down the side of the meat loaf.
  • Bake uncovered for 1 hour or until meat is browned on the outside.
  • Cool 15 minutes before removing from pan.
  • This is equally good made with lean ground beef.

2 large portobello mushrooms (about 6 ounces), cut into chunks
1 medium onion, cut into wedges
1 medium carrot, cut into chunks
1 celery rib, cut into chunks
3 garlic cloves, halved
1 tablespoon olive oil
2 tablespoons tomato paste
2 large eggs, lightly beaten
1-1/4 pounds ground beef
3/4 pound ground pork
1 tablespoon Worcestershire sauce
1 tablespoon reduced-sodium soy sauce
1-1/4 teaspoons salt
3/4 teaspoon pepper
GLAZE:
1/2 cup ketchup
2 tablespoons tomato paste
2 tablespoons brown sugar
1 teaspoon ground mustard

Steps:

  • Preheat oven to 350°. Combine bread and stock; let stand until liquid is absorbed. , Meanwhile, pulse mushrooms, onion, carrot, celery and garlic in a food processor until finely chopped. In a large skillet, heat oil over medium heat. Add mushroom mixture; cook and stir until vegetables are tender and liquid is evaporated, 5-6 minutes. Stir in tomato paste; cook 1 minute longer. Let stand 10 minutes before slicing., Freeze option: Shape meat loaf on a plastic wrap-lined baking sheet; wrap and freeze until firm. Remove from pan and wrap securely in foil; return to freezer. To use, unwrap meat loaf and bake as directed, increasing initial baking time to 2 hours. Mix together glaze ingredients; spread over loaf. Bake until a thermometer inserted in center reads 160°, 15-25 minutes longer. Let stand 10 minutes before slicing.
