Make roasting easy with this Mustard Crusted Roast Beef, simple to make, big on flavor, and the perfect recipe for any holiday meal.

3 lb Top Round Roast or Top Sirloin Roast*
1 tsp salt
½ tsp ground black pepper
3 Tbsp Dijon mustard
2 garlic cloves, (crushed)

Steps:

  • Preheat your oven to 450F.
  • Season the roast with salt and pepper. In a small bowl, mix together mustard and crushed garlic. Rub the roast with the garlic-mustard mixture.
  • Place the roast on a rack in a roasting pan and place in the oven for 15 minutes.
  • After 15 minutes, reduce the heat to 325F and continue roasting for an additional 35-45 minutes, until an insta-read thermometer inserted into the center of the roast reads 120-125F. (This will give you a medium rare ending roast.)
  • Remove the roast from the oven and let it rest for 10 minutes. After resting, the internal temperature should read around 135F.
  • Carve and serve immediately.

Incredible flavor on this eye round roast by encrusting it with Dijon mustard.

2.5 pound eye round roast (I used a smaller one, 2.5lbs, but you can go 3 to 4 lbs)
3/4 cup Dijon mustard
3 tablespoons red wine
3 cloves garlic (minced)
1 teaspoon chopped fresh rosemary (I use kitchen scissors)
1/2 teaspoon ground pepper

Steps:

  • First mix the mustard mix in a bowl large enough to hold the roast, adding all the ingredients except the roast, and stirring thoroughly. If you want a thicker mustard crust, reserve 1/4 cup of the mustard mix and set it aside. Add the roast to bowl with the mustard mix and let it rest for 1/2 hour as it comes up to room temperature and as you warm your grill up to high temp, about 450° F. We're gonna start off on high direct heat to get a good sear and crust on the outside.
  • Once the roast has marinated, center it on the skewer and secure it well, adding some string if needed. Balance the skewer following your manufacturers instructions. I do all this work over the bowl used to marinate since things can get a bit drippy. Use a spoon to reapply some of the mustard mix to the roast and then put in on the grill and start the rotisserie. Cook it over the direct heat for 10 minutes or until you have a good brown crust on the roast. If you reserved some mustard mix, spoon it on the rotating roast about 3 minutes into the searing process.
  • Once the roast is crusted, we want to slow the cooking process down in order to avoid making the roast tough and dry. Change the grill set up to indirect heat. I also add a shallow pan of water under the roast at this point to add more moisture and catch any drippings. Reduce the heat so the grill maintains about 250° F when the lid is closed. This can be difficult on some grills, and charcoal grills need to be monitored regularly. If you can't do this on your grill, you may not want to try cooking this piece of meat on your grill.
  • Cook the roast at 250° F for about 1 hour (depends on the grill and the size of the roast) until the temp is about 135° F to 140° F. This is the sweet spot for this roast. If you cook it rarer, it will be harder to slice thin, which helps keep it tender for sandwiches. Cook it much more, and the roast will be tough. So when it gets close, watch it closely. If you have one of those fancy remote thermometers that works on a rotisserie, this is the time to use it.
  • Remove the meat from the rotisserie and cover loosely with foil for 15 minutes before you carve it.
  • Serve it hot, or make sandwiches with leftovers. I love it with a bit of horseradish sauce on potato rolls.

This is an easy recipe and a great way to prepare a roast without heating up my house on a hot Phoenix summer day. The marinade recipe is from a book called "The Passion of the Barbeque." I've made this for just my family, and have also made it for a large crowd (40 plus people) by adding more roasts to the spit. Preparation time includes marinating.

1/2 cup red wine vinegar
1 teaspoon Worcestershire sauce
1 teaspoon dried basil
1/3 cup catsup
1 teaspoon sugar
2 cloves pressed garlic
2 1/4-3 lbs beef eye round

Steps:

  • Prepare marinade by combining all ingredients except roast in a covered container or ziplock bag.
  • Trim fat from meat and add to marinade.
  • Marinate in refrigerator for at least 6 hours.
  • Remove meat from marinade and place on spit over indirect heat.
  • Close grill cover and roast at about 325°F for 1 1/2 to 2 hours, until desired doneness.

Summer is grilling time and I love an outdoor grill with a rotisserie. Here is what I did with a small roast and I wanted to share with you.

2 lbs eye of round roast
1/4 cup McCormick's Montreal Brand steak seasoning
1 medium carrot
1/2 medium onion
1/4 cup water
1 (10 1/2 ounce) can beef gravy (any brand)
aluminum foil, to serve as drip tray (or an aluminum throw away pan)

Steps:

  • Set up your outdoor rotisserie grill for indirect cooking.
  • Move lava rocks to one side and place aluminum drip pan in its place.
  • If you have a newer grill like mine that uses no rocks, but has a dome over the burners, bend your aluminum to mold to the dome and create a pan for drippings.
  • Light your grill and use the burner opposite from where you placed your drip pan.
  • Leave the burner on high.
  • Prepare your meat by sprinkling it with the seasoning.
  • Rub into meat.
  • Secure the meat on your rotisserie skewer so that it is over the drip pan.
  • Place the roast on the grill and let the rotisserie run, covered for 20 minutes.
  • At this time quarter your onion and carrot and place in drip pan.
  • Continue to roast meat covered for 40 minutes, checking the drip pan occasionally for dryness and add water.
  • After an hour use a meat thermometer to check for your desired doneness (160 degrees for medium).
  • Place roast on a platter.
  • Take drip pan, add 1/4 cup water and scrape pan drippings.
  • Discard vegetables and mix pan drippings in with your favorite gravy Add a baked potato and a salad and enjoy!
