1 cup kosher salt
6 tablespoons granulated sugar
8 cloves garlic, smashed
8 bay leaves
3 tablespoons dried juniper berries, lightly crushed
2 tablespoons black peppercorns
1 teaspoon whole cloves
1 6-rib center-cut bone-in pork loin roast (about 5 1/2 pounds), chine bone notched
For the crust:
1 cup panko breadcrumbs
4 tablespoons unsalted butter, at room temperature
1 scallion, cut into 1-inch pieces
1/2 cup fresh parsley
2 tablespoons fresh thyme
2 teaspoons dried juniper berries, lightly crushed
3 tablespoons dijon mustard

Steps:

  • Brine the pork: Combine 4 cups water, the salt, sugar, garlic, bay leaves, juniper berries, peppercorns and cloves in a large pot or wide Dutch oven (large enough to hold the pork). Heat over medium heat, stirring, until the salt and sugar dissolve. Add 8 cups ice cubes; stir occasionally until the brine is cooled.
  • Make small deep cuts, about 2 inches apart, all over the pork and between the ribs using the tip of a paring knife. Add the pork to the pot and submerge in the brine; add more cold water if needed to completely submerge. Refrigerate overnight.
  • Set a rack in a roasting pan and put the pan on the lowest oven rack; preheat to 325 degrees F. Remove the pork from the brine, pat dry and set aside to bring to room temperature. Remove 3 cups brine (along with the spices) to a medium saucepan; bring to a boil. Remove the hot roasting pan from the oven and carefully stand up the pork on the rack with the chine bone down. Add the hot brine to the bottom of the pan. Roast until the fat is mostly rendered, about 40 minutes.
  • Meanwhile, make the crust: Pulse the panko, butter, scallion, parsley, thyme and juniper berries in a food processor until the herbs are coarsely chopped and the mixture is combined.
  • Remove the pork from the oven and reposition so it is meat-side up; brush the top and sides with the mustard, then sprinkle with the panko mixture, patting to adhere. Return to the oven and roast 50 more minutes.
  • Increase the oven temperature to 425 degrees F and continue roasting until the crust is crisp and a thermometer inserted into the center registers 140 degrees F, about 20 more minutes. Remove from the oven, transfer to a cutting board and let rest 20 minutes before carving.

1/2 cup dry white wine
1/4 cup Dijon mustard
1 cup breadcrumbs
2 tablespoons chopped green onions
1/4 cup unsalted butter
1/4 cup flour
1/2 cup beef broth
1 tablespoon beef bouillon granules
1/2 cup whipping cream
salt and pepper

Steps:

  • Season the ribs with salt and pepper. Place on a greased rack on a roasting pan and bake at 450 degrees for 30 minutes.
  • Turn the ribs and bake at 300 degrees for 30 more minutes. Remove from oven. Reduce oven temperature to 200 degrees.
  • Mix Dijon mustard and wine in a small bowl. Coat the ribs with this mixture and sprinkle with breadcrumbs.
  • Bake at 200 degrees for 1 hour.
  • Saute the onions in the butter in a small saucepan until onions are translucent.
  • Add the flour and stir until combined.
  • Stir in the broth and the beef granules. Simmer until thickened, stirring constantly.
  • Add the whipping cream and mix well. Simmer just until heated through, stirring constantly.
  • Spoon sauce over ribs to serve.

2 brown onions, skin left on, cut into chunks
2 carrots, quartered lengthways
1 bulb of garlic, broken up with skin left on
2 bone rib of beef
3 tbsp Dijon or wholegrain mustard
2 tbsp creamed horseradish
150g butter, softened
2 cloves garlic, crushed
2 tbsp fine brown sugar
1 tsp Worcester sauce
½ tsp sea salt flakes
½ tsp ground black pepper
1 large cauliflower, broken into florets
400ml whole milk
50g plain flour
50g butter
¼ nutmeg, grated
2 bay leaves
100g gruyère, grated
25g parmesan, grated
175ml red wine
1 tsp plain flour
100g watercress, to serve

Steps:

  • Add the chopped onions and carrots to the NEFF Universal Pan and place the beef joint on top. In a large bowl, mix the mustard, horseradish, butter, garlic, sugar, Worcester sauce, sea salt flakes and ground black pepper. Baste the beef with a generous amount of the mustard glaze. Insert the Meat Probe into the thickest part of the beef and select 58°C for a medium/medium rare roast. Set CircoTherm® at 170°C and switch Variosteam to medium. Use the Slide&Hide® door and ComfortFlex Rails to baste the beef during cooking.
  • During the last 20 mins of roasting, place the cauliflower florets into an oven-safe dish and cook for 20 mins. Meanwhile, make a start on the cheese sauce. In a pan, whisk the milk, flour, and butter over a medium heat until the mixture thickens. Stir through the nutmeg, bay leaves and a pinch of salt and pepper, then take off the heat before adding the grated gruyere. Once the beef joint is cooked, remove from the oven and transfer onto a board or warmed plate. Cover with foil and leave to rest for 30 mins. Remove the cauliflower from the oven and pour over the cheese sauce, scattering the grated parmesan on top. Change the CircoTherm® temperature to 180°C and cook for another 30 mins.
  • While the beef rests, pour the vegetables and juices from the Universal Tray into a saucepan, adding a little water to make a jus. Squash the vegetables, then add a glass of red wine and a dash of flour, stirring until fully combined. Pass the liquid through a sieve and into a jug, ready for serving. Once the cauliflower cheese is golden and bubbling on top, remove from the oven. Carve the beef, then pour some jus over the top and serve with the cauliflower cheese and a handful of peppery watercress on the side.

1 beef bouillon cube
1 1/2 kg sirloin or 1 1/2 kg rolled rib beef
2 teaspoons plain flour
2 teaspoons mustard powder
1 onion, quartered
fresh ground black pepper
1 beef bouillon cube
reserved juices
1 tablespoon plain flour, heaped

Steps:

  • Weigh the beef to establish the cooking time. Preheat the oven to 220C/425F/Gas 7.
  • Crumble 1 Beef OXO cube into a small bowl, mix with the flour and mustard powder. Dust this over the fat surface of the beef, rubbing in gently. This will become nicely crusty during cooking as well as adding flavour. Now season with freshly ground black pepper.
  • Place the beef in a roasting tin and tuck the onion quarters around the meat. Cook for 20 minutes then reduce the oven to 160C/325F/Gas 3 and cook slowly for 20 minutes per 450g for medium rare and 15 minutes per 450g for rare.
  • Whilst the meat is cooking, baste it in its own juices to keep it moist and succulent. Transfer the cooked meat to a carving plate and loosely cover with foil to rest for 10-15 minutes.
  • Meanwhile to make the gravy: tilt the roasting tin and spoon off all but 2 tbsp of the fat, also retaining the brown juices and the caramelised onion. Place the mixture in a saucepan over a gentle heat and allow the juices to sizzle then sprinkle in the flour and blend to a smooth paste. Let the flour cook for a moment or two until browned. This helps to produce a rich colour gravy.
  • Crumble and stir 1 Beef OXO cube into 600ml (1pt) hot water.
  • Using a wooden spoon, loosen the tasty crisp brown bits stuck to the tin whilst gradually adding the hot stock. Stir briskly until the simmering gravy is smooth and thickens. If you prefer your gravy thicker, simply leave to bubble and reduce for a minute or two.
  • Carve the beef onto warm plates, accompanied with roasted potatoes and Yorkshire puddings and enjoy with lashings of hot gravy.
  • For rich red wine gravy, replace 150ml (¼ pt) water with a robust red wine.

1 (6-pound) boneless prime rib roast, trimmed, tied
4 tablespoons store-bought or homemade Montreal-style steak seasoning, divided
1 cup sour cream
1/4 cup prepared horseradish
1 teaspoon freshly ground black pepper
1/2 teaspoon kosher salt
1/2 cup Dijon mustard, divided
1/4 cup (1/2 stick) melted unsalted butter

Steps:

  • Season roast all over with 2 Tbsp. steak seasoning. Transfer to a wire rack set inside a rimmed baking sheet and let sit at room temperature 1 hour.
  • Preheat oven to 225°F. Roast beef until an instant-read thermometer inserted into the center registers 120°F, 3 1/2-4 hours (start checking every 5-10 minutes after 3 1/2 hours). Tent with foil and let sit at least 30 minutes and up to 1 hour. Increase oven temperature to 500°F.
  • Meanwhile, whisk sour cream, horseradish, pepper, salt, and 1/4 cup mustard in a small bowl; set aside.
  • Remove string from roast; discard. Stir butter and remaining 1/4 cup mustard in another small bowl. Using a pastry brush, thickly coat roast with mustard-butter sauce. Coat with remaining 2 Tbsp. steak seasoning. Roast beef until a brown crust forms, 5-10 minutes. Transfer to a cutting board and carve. Serve with sour cream sauce alongside.

  • Sour cream sauce can be made 1 day ahead. Transfer to an airtight container and chill.

2 tbsp cracked black peppercorn
3 garlic cloves, crushed
small bunch rosemary, finely chopped
small bunch parsley, chopped
4 tbsp olive oil
3kg rib of beef on the bone
2 onions, sliced
250ml red wine
400ml fresh beef stock

Steps:

  • Heat oven to 220C/200C fan/gas 7. Mix the rock salt, peppercorns, garlic, rosemary, parsley and olive oil. Rub this mixture all over the beef rib then place in a roasting tin. Put in the oven and cook for 30 mins, then turn the oven down to 160C/140C fan/gas 3 and cook for a further 1 hr 20 mins. Remove from the oven, transfer the beef to a board, cover with tin foil and rest for 30 mins before carving.
  • While the beef rests, make the gravy. Pour off all but 2 tbsp of fat from the roasting tin and reserve any juices. Fry the onions in the roasting tin over a medium heat for about 10 mins, then add the wine, stock and reserved juices. Keep cooking for a further 10 mins to reduce to a thick sauce, season well and serve alongside the roast beef.

2 cups canned low-salt chicken broth
1 bay leaf
2 tablespoons (1/4 stick) butter, room temperature
2 cups fresh breadcrumbs from crustless day-old French bread
1/4 cup (about) Dijon mustard

Steps:

  • Place morels in small bowl. Pour 1 1/2 cups boiling water over; let soak until mushrooms soften, at least 30 minutes and up to 4 hours. Drain mushrooms, reserving soaking liquid. Rinse mushrooms under cold water to remove any excess dirt.
  • Preheat oven to 350°F. Mix 1 teaspoon thyme, rosemary, salt, and pepper in small bowl. Rub herb mixture all over short ribs. Heat oil in heavy large ovenproof pot over medium-high heat. Working in batches, add ribs to pot and cook until brown on all sides, about 10 minutes per batch. Transfer ribs to bowl.
  • Pour off all but 2 tablespoons fat from pot. Reduce heat to medium. Add onion, carrot, garlic, and prosciutto to pot; sauté until vegetables begin to soften, about 5 minutes. Add wine and bring to boil, scraping up any browned bits from bottom of pot. Add broth, bay leaf, reserved morels, morel soaking liquid (leaving any sediment behind), and remaining 1 teaspoon thyme to pot. Return ribs to pot, meat side down; bring to boil. Cover pot tightly; transfer to oven and bake until ribs are very tender, about 1 hour 45 minutes. Remove from oven. (Short ribs can be braised 1 day ahead. Cool slightly. Refrigerate uncovered until cold, then cover and keep chilled. Rewarm slightly over medium heat before continuing.)
  • Preheat oven to 450°F. Transfer ribs to large roasting pan, bone side down. Remove 5 large morels from pot and finely chop. Place in medium bowl. Add butter and mix with fork to blend. Mix in breadcrumbs. Season with salt and pepper. Spread 1 teaspoon mustard over top of each rib. Spread breadcrumb mixture over top of each rib, pressing to adhere. Bake until topping is crisp and golden, about 10 minutes.
  • Meanwhile, spoon off any fat from top of sauce in pot and discard. Boil sauce until slightly thickened and reduced to generous 2 cups, about 10 minutes. Season with salt and pepper.
  • Spoon polenta into bowls. Top with short ribs. Spoon sauce over and serve.
