Steps:
- Preheat the oven to 350 degrees F.
- Rinse and dry the chicken thighs and season with salt and pepper.
- Heat 1 tablespoon olive oil in a Dutch oven over medium-high heat. Brown the thighs on both sides, working in batches if needed. Remove the chicken and set aside.
- Add the remaining 1 tablespoon olive oil to the Dutch oven and cook the onions until soft, about 5 minutes. Add the mushrooms and continue to cook until the mushrooms have softened, 3 to 5 minutes. Stir in the garlic and cook until fragrant, about 2 minutes. Add the tomatoes and flour and cook, stirring, to remove the raw flour flavor, about 3 minutes. Stir in the tarragon. Turn up the heat and deglaze the pan with the white wine, allowing to bubble for a minute or two. Return the chicken to the Dutch oven. Add enough chicken stock to reach halfway up the sides of the chicken. Cover, place in the oven, and braise for 45 minutes, removing the lid halfway through.
- When finished, remove the chicken from the Dutch oven and set aside. Add the mustard and sour cream and whisk to blend well. Return the chicken to the pan and allow the flavors to meld before serving, about 5 minutes. Serve over Super Buttered Noodles.
- In a large pot filled with boiling water, dissolve the bouillon cubes and cook the noodles according to package directions. Drain the noodles in a colander and then nestle the colander into the pot so some of the pasta water goes into the pot as the pasta continues to drain. Remove the colander and stir the butter and sour cream into the pot until the butter melts. Add the parsley and the noodles. Season with salt and pepper. Toss to combine well. Pour into a serving bowl and serve.
MUSTARD BUTTER-BASTED ROAST TURKEY WITH BACON
Ensure juicy meat by inserting streaky bacon under the skin of your big bird. A tangy mustard baste creates an extra tasty gravy
Provided by Sara Buenfeld
Categories Dinner
Time 4h30m
Number Of Ingredients 14
Steps:
- Weigh your turkey and calculate the cooking time by allowing 40 mins per kg for the first 4kg, then 45 mins for every kg of turkey over that weight. As a guide, a turkey this size should take 3½-4 hrs plus 30-45 mins resting time.
- To make the mustard butter, beat the butter with the mustards, thyme and some ground black pepper until soft and well mixed.
- Gently push your fingers under the skin of the turkey, starting from the neck, until you can push your whole hand in down the length of the breast - take care not to tear the skin. Spread the butter under the skin so that it covers the breasts. Lay the streaky bacon on your work surface in 2 rectangles of 6 overlapping rashers (for extra flavour, you can brush the bacon with a little wholegrain or English mustard first), and carefully push each rectangle of bacon under the skin to cover and protect each breast. This can be done the night before, but take out of the fridge for 1 hr before roasting so that it comes back to room temperature.
- On the day, heat oven to 180C/160C fan/gas 4. Lift the turkey into a roasting tin, massage the olive oil into the skin and season well with flaky salt and pepper. Put the onion, thyme and bay inside the cavity of the turkey, then pour in the wine. Cover the tin loosely with foil and roast for the calculated cooking time. For the final 30 mins, remove the foil and pour off all of the cooking juices (use for the gravy; recipe in 'goes well with'). Increase the oven to 200C/180C fan/gas 6 and roast for 30 mins more until the turkey is golden and the juices that run out of the thigh are clear, with no sign of pink, when pierced with a skewer. Leave to rest on a warm platter covered with foil and tea towels - it will keep like this for up to 45 mins.
- To serve, carve the turkey and arrange the meat on a hot platter with a little of the hot gravy poured over, or bring the whole turkey to the table garnished with herbs. To fill the platter, you could surround the turkey with potatoes, if you like. Any leftover meat can be frozen in the gravy.

5 SUBSTITUTES FOR STONE GROUND MUSTARD - FANATICALLY FOOD
From fanaticallyfood.com
- Mustard Sauce. Combine 1/2 cup mayonnaise with 2 tablespoons of honey until well blended then stir in 1 tablespoon prepared horseradish and 3 tablespoons whole-grain Dijon-style mustard.
- Mustard Butter. Combine two teaspoons of Dijon-style mustard with two tablespoons softened butter until well blended then stir in a pinch of salt and freshly ground black pepper to taste.
- Yellow Mustard. The third substitute for stone-ground mustard is yellow mustard. If you use yellow mustard, it will be spicy and the flavor is much sharper than stone-ground or honey-prepared mustards.
- Dijon. Dijon can be made at home by combining one tablespoon each of dry white wine (or water), white-wine vinegar, salt, pepper, and fresh minced parsley leaves; stir into two tablespoons softened butter until well blended then stir in three tablespoons olive oil slowly while stirring constantly.
- Spicy Brown Mustard. The last alternative to Stone Ground Mustard is spicy brown mustard. Spicy Brown Mustard has a tangy and slightly sweet flavor which pairs well with beef or pork like burgers, meatloaf, and any type of roasted meats (not seafood).
