SOFT TACOS WITH MUSHROOMS, ONION, AND CHIPOTLE CHILE



Soft Tacos With Mushrooms, Onion, and Chipotle Chile image

Mushrooms make a great filling for tacos and quesadillas. Hot, smoky chipotle chiles complement the earthy flavor of the mushrooms. You can use cremini or white button mushrooms or oyster mushrooms for this dish.

1 tablespoon extra virgin olive oil
1 small onion, thinly sliced
1 pound cremini, white button, or oyster mushrooms, cleaned, stems trimmed, and sliced
Salt to taste
1 to 2 garlic cloves, to taste, minced
1 canned chipotle chile in adobo, seeded and chopped (more to taste)
2 tablespoons minced cilantro or flat-leaf parsley
8 corn tortillas
2 to 3 ounces queso fresco or ranchero, or feta, crumbled
Fresh or bottled salsa if desired

Steps:

  • Heat the olive oil in a large nonstick skillet over medium heat and add the onion. Cook, stirring often, until tender, about 5 minutes. Add the mushrooms and turn the heat up to medium-high. Cook, stirring, until the mushrooms soften and begin to sweat. Turn the heat back to medium and add 1/2 teaspoon salt, the garlic and the chipotle. Continue to cook until the mushroom liquid has evaporated from the pan, 5 to 10 minutes. Stir in the cilantro or parsley, taste and adjust seasonings.
  • Heat the tortillas, 2 or 3 at a time, in a dry skillet over medium-high heat, or in a microwave. Top each one with a spoonful of mushrooms, and a sprinkling of cheese. Fold the filled tortillas in half, and serve, passing the salsa separately in a bowl.

1 1/2 tablespoons olive oil, preferably extra-virgin
1 large red onion, sliced
6 to 8 ounces full-flavored mushrooms such as shiitakes, oysters or practically any wild variety, stemmed (discard woody stems or chop them finely) and sliced (you'll have about 2 generous cups)
2 to 3 canned chipotle chiles, removed from the canning sauce, seeded and thinly sliced
Salt
12 corn tortillas, the fresher the better (store-bought are okay, though homemade will really shine here)
8 ounces mozzarella, preferably whole milk (but not "fresh" mozzarella which will not melt) or Mexican quesillo cheese, shredded
A generous 1/2 teaspoon chopped fresh thyme or 1 generous teaspoon chopped fresh epazote leaves
A little fresh ground black pepper

Steps:

  • Heat the oven to 350 degrees. In a large skillet (preferably non-stick), heat the oil over medium-high. Add the sliced onion and cook, stirring frequently, until softening and beginning to brown, about 5 minutes. Add the mushrooms and stir nearly constantly until they have softened and any juice they release has evaporated, about 5 minutes longer. Stir in the sliced chile, then taste and season with salt, usually about 1/4 teaspoon. Transfer the mixture to a 9- or 10-inch shallow baking dish, Mexican cazuela or pie plate. Very lightly dampen a clean kitchen towel. Check the tortillas to make sure none are stuck together. Wrap them in the towel, then in foil, sealing the edges tightly. Place in the oven and set the timer for 7 minutes. When the timer goes off, stir the shredded cheese into the warm mushroom mixture. Set in the oven alongside the tortillas and bake until the cheese is just melted, about 5 more minutes. Sprinkle with the thyme or epazote and black pepper and serve without a moment's hesitation, accompanied by the warm tortillas.

2 chipotle chiles
6 cups button mushrooms
4 tablespoons vegetable oil
1 onion, finely chopped
2 garlic cloves, smashed
salt
1 bunch fresh coriander, to garnish

Steps:

  • Soak the dried chillies in a bowl of hot water for about 10 minutes until they are softened.
  • Drain, cut off stalks, then slit the chillies and scrape out the seeds.
  • Chop the flesh finely.
  • Trim the mushrooms, then clean them with a damp cloth or kitchen paper.
  • If they are large, cut them in half.
  • Heat the oil in a large frying pan.
  • Add the onion, garlic, chillies and mushrooms and stir until evenly coated in the oil.
  • Fry for 6 to 8 minutes, stirring occasionally, until the onion and mushrooms are tender.
  • Season to taste and spoon into a serving dish.
  • Chop some of the coriander, leaving some whole leaves and use to garnish.
  • Serve hot.

MUSHROOMS IN CHILE SAUCE

1 tablespoon olive oil
1 pound mushrooms, thickly sliced
1 teaspoon sea salt, or to taste
3 Guajillo chiles
3 Pasilla chiles
2 whole cloves
1 teaspoon black peppercorns
1 teaspoon cumin seeds
2 garlic cloves, peeled
1 1/2 tablespoons lard or peanut oil
1 large sprig epazote cleaned

Steps:

  • Heat the oil in a saucepan over medium heat. Add the mushrooms and salt. Cover the pan and cook until the mushrooms are just tender, about 10 minutes. Drain the mushrooms, reserving the liquid, and set both aside.
  • Remove the stems, slit the chiles open, and remove the seeds and veins. Cover with hot water and soak for 15 minutes, or until soft. Drain. On a hot comal, toast the chiles, making sure they do not burn.
  • Crush the clove, peppercorns and cumin seed with a mortar and pestle or in a spice or coffee grinder. In a blender, place the chiles, crushed spices, and garlic. Blend until smooth, adding a little water only if necessary.
  • In a large heavy skillet, heat the lard until smoking, then add the chile sauce and fry over a fairly high heat. Scraping the bottom of the pan often so it doesnt stick, cook until reduced, about 5 minutes.
  • Add sufficient water to the reserved liquid from the mushrooms to make 3/4 cup. Add this, the epazote, and mushrooms to the chili sauce, and cook over a medium heat for about 5 minutes.
  • Serve with rice and warm flour tortillas.

Mushrooms and black beans are the perfect pairing for a hearty weeknight chili with a kick of heat from a fresh jalapeño. Seared minced mushrooms add a depth of flavor that balances an easy homemade chili spice mix of mild chile, warm cinnamon and smoky chipotle. If you'd like, you can substitute 1 1/2 cups of the broth for 1 1/2 cups of Mexican lager.

1 pound cremini or portobello mushrooms, or both, minced (see Tip)
1/3 cup neutral oil, such as grapeseed
Salt and black pepper
1 medium yellow onion, finely chopped
2 red bell peppers, finely chopped
1 jalapeño, minced
3 garlic cloves, minced
1 teaspoon ground mild chile, such as chile California
3/4 teaspoon chipotle powder
1/2 teaspoon ground cumin
1/8 teaspoon ground cinnamon, preferably Ceylon
3 tablespoons tomato paste
2 (14.5-ounce) cans diced tomatoes
2 (15-ounce) cans black beans, rinsed and drained
3 1/2 cups vegetable broth or water
1 tablespoon raw or turbinado sugar
1 ounce dried porcini mushrooms, torn into bite-size pieces (optional)
Sour cream (plant-based if you'd like) and torn cilantro leaves, for serving

Steps:

  • Spread the minced mushrooms on a clean dish towel or paper towel and squeeze out excess liquid. Heat the oil in a medium pot over high. Add the mushrooms with a pinch each of salt and pepper and cook, stirring every minute or so, until the mushrooms sear to a darker color and any remaining water in the mushrooms has cooked off, about 5 minutes.
  • Lower the heat to medium and add the onion. Cook, stirring occasionally, until the onion softens and browns slightly, about 5 minutes. Add the bell peppers, jalapeño and garlic and cook for an additional 2 minutes, stirring frequently, until fragrant and beginning to brown. Add the chile powder, chipotle powder, cumin and cinnamon and stir until fragrant, about 1 minute, then add the tomato paste and mix.
  • Lower the heat to medium-low and add the canned diced tomato and its juices, beans, broth, sugar and porcini mushrooms, if using. Season with salt and pepper to taste. Cover with the lid ajar and simmer, stirring occasionally, for 20 minutes to allow the flavors to meld. Divide among bowls and serve with sour cream and cilantro.

12 (6 inch) corn tortillas, or more to taste
1 ½ cups shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat olive oil in a large skillet over medium heat. Add onion and garlic and cook, stirring frequently, until softened, 5 to 10 minutes. Add mushrooms and jalapeno pepper. Add 1 spoonful of chipotle sauce from the can. Cook, stirring frequently, over medium-low heat until mushrooms are soft and have shrunk in size, about 5 minutes more. Remove from heat.

Place in the pan and repeat with remaining tortillas, packing enchiladas tightly side-by-side. Pour remaining sauce on top and sprinkle with remaining Cheddar cheese.
  • Bake in the preheated oven until cheese is melted and sauce is bubbling, about 30 minutes. Serve hot.
