8 ounces (250 g) bacon, cut into strips
2 tablespoons butter
26 ounces (750 g) brown mushrooms, washed ((pat dry with paper towel))
1 tablespoon olive oil
1/4 cup dry white wine ((or chicken broth/stock))
6 cloves garlic (finely chopped)
1 1/2 cups (400 ml) heavy cream, ((thickened cream or evaporated milk))
1 tablespoon fresh chopped parsley
1 teaspoon fresh chopped thyme
Salt and pepper (to season)
1/2 cup fresh shredded or grated mozzarella
1/4 cup fresh shredded or grated parmesan cheese

Steps:

  • Fry the bacon in a large oven-safe skillet over medium heat until crispy. Use a slotted spoon to transfer to a paper towel lined plate to soak up some of the oil. Set aside.
  • In the same pan, melt the butter. Add the mushrooms, drizzle with oil and mix through, scraping up any browned bits from the bottom of the pan. Fry for 2-3 minutes to lightly brown mushrooms and release their juices (if any).
  • Pour in the wine (or broth) and let reduce for 2 minutes, while occasionally stirring. (Preheat broiler or oven grill.)
  • Add in the garlic and stir it through for a minute, until fragrant. Pour in the cream and herbs. Reduce heat down to low. Gently simmer until tender (about 4-5 minutes) and sauce is slightly thickened. Season with salt and pepper.
  • Add the bacon back in and give everything a good mix to combine all of the flavours together. Top the mushrooms with the mozzarella and parmesan cheese.
  • Broil until cheese is melted and bubbly and mushrooms are done to your liking (about 3-5 minutes).
  • Serve warm.

3 lb fresh porcini (also known as cèpes) or 3 lb other exotic mushrooms and 2 oz large dried porcini slices
2 medium onions, cut into 1/2-inch-thick wedges
6 garlic cloves, minced
3 tablespoons chopped fresh thyme
1/4 cup dry Marsala wine
4 tablespoons extra-virgin olive oil
1 teaspoon salt
1 1/2 lbs. assorted pearl onions, blanched and peeled
2 cups red-wine reduction

Steps:

  • If using dried porcini, soak in boiling-hot water to cover until soft, about 45 minutes. Lift out porcini, squeezing out excess liquid, and discard soaking liquid. Rinse in a sieve to remove any grit and pat dry. Halve larger slices.
  • Preheat oven to 375°F.
  • If using fresh porcini, halve or quarter larger ones, keeping smaller ones whole, and transfer all to a baking pan. Toss all mushrooms with onion wedges, garlic, thyme, wine, 3 tablespoons oil, salt, and pepper to taste. Toss pearl onions with remaining tablespoon oil and salt and pepper to taste in a shallow baking pan.
  • Roast mushroom mixture, covered with foil, in upper third of oven and pearl onions, uncovered, in lower third, stirring occasionally and switching position of pans halfway through roasting, until pearl onions are tender and golden brown, about 45 minutes total. Remove pearl onions from oven.
  • Uncover mushroom mixture and stir in 1/2 cup red-wine reduction. Continue roasting mixture in middle of oven, uncovered, stirring occasionally, until vegetables are tender and liquid is reduced by half, about 30 minutes. Stir in pearl onions and roast until hot, about 10 minutes more. Heat remaining red-wine reduction.
  • Season mushrooms and onions with salt and pepper. Drizzle with some red-wine reduction and serve the rest on the side.

2 tablespoons unsalted butter
2 1/2 to 3 pounds frying chicken, cut into pieces

3 cups young, full-bodied red wine, such as Burgundy, Beaujolais, Cotes du Rhone, or Chianti
1 to 2 cups brown chicken stock, brown stock or canned beef bouillon
1/2 tablespoon tomato paste
2 cloves mashed garlic
1/4 teaspoon thyme leaves
1 bay leaf
12 to 24 Brown-Braised Onions, recipe follows
1/2 pound Sauteed Mushrooms, recipe follows
3 tablespoons all-purpose flour
2 tablespoons softened butter
Fresh parsley leaves
1 1/2 tablespoons butter
1 1/2 tablespoons oil
18 to 24 peeled white onions, about 1-inch in diameter
1/2 cup brown stock, canned beef bouillon, dry white wine, red wine, or water
Salt and pepper
Medium herb bouquet: 4 parsley sprigs, 1/2 bay leaf and 1/4 teaspoon thyme tied in cheesecloth
2 tablespoons butter
1 tablespoon oil
1/2 pound fresh mushrooms, washed, well dried, left whole if small, sliced or quartered if large
1 to 2 tablespoons minced shallots or green onions, optional

Steps:

  • Remove the rind and cut the bacon into lardons (rectangles 1/4-inch across and 1-inch long). Simmer for 10 minutes in 2 quarts of water. Rinse in cold water. Dry.
  • In a heavy large heavy bottomed casserole or Dutch oven, saute the bacon slowly in hot butter until it is very lightly browned (temperature of 260 degrees F for an electric skillet). Remove to a side dish.
  • Dry the chicken thoroughly. Brown it in the hot fat in the casserole. (360 degrees F for the electric skillet.)
  • Season the chicken with salt and pepper. Return the bacon to the casserole with the chicken. Cover and cook slowly (300 degrees F) for 10 minutes, turning the chicken once.
  • Uncover, and pour in the cognac. Averting your face, ignite the cognac with a lighted match. Shake the casserole back and forth for several seconds until the flames subside.
  • Pour the wine into the casserole. Add just enough stock or bouillon to cover the chicken. Stir in the tomato paste, garlic and herbs. Bring to a simmer. Cover and simmer slowly for 20 to 25 minutes, or until the chicken is tender and its juices run a clear yellow when the meat is pricked with a fork. Remove the chicken to a side dish.
  • While the chicken is cooking, prepare the onions and mushrooms.
  • Simmer the chicken cooking liquid in the casserole for 1 to 2 minutes, skimming off fat. Then raise the heat and boil rapidly, reducing the liquid to about 2 1/4 cups. Correct seasoning. Remove from heat, and discard bay leaf.
  • Blend the butter and flour together into a smooth paste (beurre manie). Beat the paste into the hot liquid with a wire whip. Bring to the simmer, stirring and simmer for 1 to 2 minutes. The sauce should be thick enough to coat a spoon lightly.
  • Arrange the chicken in a casserole, place the mushrooms and onions around it and baste with the sauce. If the dish is not to be served immediately, film the top of the sauce with stock or dot with small pieces of butter. Set aside uncovered for no longer than 1 hour or cool, cover and refrigerate until needed.
  • Shortly before serving, bring the casserole to a simmer, basting the chicken with the sauce. Cover and simmer slowly for 4 to 5 minutes, until the chicken is heated through.
  • Serve from the casserole, or arrange on a hot platter. Decorate with sprigs of parsley.
  • When the butter and oil are bubbling in the skillet, add the onions and saute over moderate heat for 10 minutes, rolling the onions about so they will brown as evenly as possible. Be careful not to break their skins. You cannot expect to brown them uniformly.
  • Braise them as follows: Pour in the stock, season to taste, and add the herb bouquet. Cover and simmer slowly for 15 to 20 minutes until the onions are perfectly tender but retain their shape, and the liquid has evaporated. Remove herb bouquet. Serve them as they are.
  • Bake them as follows: Transfer the onions and their sauteing fat to a shallow baking dish or casserole just large enough to hold them in 1 layer. Set uncovered in upper third of a preheated 350 degree F oven for 40 to 50 minutes, turning them over once or twice. They should be very tender, retain their shape and be a nice golden brown. Remove herb bouquet. Serve them as they are.
  • Place the skillet over high heat with the butter and oil. As soon as you see that the butter foam has begun to subside, indicating it is hot enough, add the mushrooms. Toss and shake the pan for 4 to 5 minutes. During their saute the mushrooms will at first absorb the fat. In 2 to 3 minutes the fat will reappear on their surface, and the mushrooms will begin to brown. As soon as they have browned lightly, remove from heat.
  • Toss the shallots or green onions, if using, with the mushrooms. Saute over moderate heat for 2 minutes. Sauteed mushrooms may be cooked in advance, set aside, then reheated when needed. Season to taste just before serving.

2 tablespoons ghee (clarified butter)
1 yellow onion, diced
1 garlic clove, minced
4 slices bacon, partially cooked and diced
4 cups mushrooms, sliced 1/4-inch thick
1/2 cup red wine
1/2 cup chicken stock
1/4 cup pomegranate juice
1 tablespoon honey
1 tablespoon sherry wine, sweet

Steps:

  • In a large non-stick skillet, melt ghee over medium-high heat.
  • Saute onions and garlic until onion is clear and starting to caramelize.
  • Add bacon and cook through.
  • Add mushrooms, and saute until the oils in the pan have mostly been absorbed and the mushrooms start to give off moisture.
  • Add remaining ingredients and bring to a boil.
  • Simmer on medium to high heat until virtually all of the liquid has boiled off.
  • Reduce heat to low and saute for another 5 minutes.

Two 1-inch-thick filet mignon steaks
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter
1 shallot, minced
4 ounces sliced mixed mushrooms
1 cup red wine

Steps:

  • Generously season each side of the steaks with salt and pepper. Let stand at room temperature about 20 minutes before cooking.
  • In a cast-iron (or other heavy-duty) skillet, heat 1 tablespoon of the butter over medium heat. Add half of the shallots and saute until tender for a couple of minutes. Stir in the mushrooms and cook until the water has evaporated, about 5 minutes. Season with salt and pepper. Transfer the cooked mushrooms to a dish and set aside. Wipe the skillet clean.
  • Heat another tablespoon of butter over high heat in the skillet. It will bubble and foam, and after it stops, add the steaks. Sear on each side for about 4 minutes. Transfer to a plate and tent with foil.
  • Reduce the heat to medium high. Add the remaining shallots and saute for 1 to 2 minutes. Turn the flame off and add the wine. Turn the flame back on to high, bring to boil and let reduce by half. Whisk in the remaining tablespoon of butter. Stir in the reserved mushrooms.
  • Spoon the sauce over the steaks and serve.

This recipe is incredibly simple and delicious. I originally got this recipe from a Martha Stewart cookbook, but added a few things. It's a favorite in our home! We love to serve it with mashed potatoes and a nice glass of red wine.

2 (1 lb) steak (your favorite kind)
1 -2 tablespoon olive oil (enough to coat the pan)
4 garlic cloves (crush with the side of a knife to release flavor)
kosher salt

ground savory
1/2 cup red wine
1 cup beef stock or 1 cup chicken stock
1/2 lb baby portabella mushrooms

Steps:

  • Rub both sides of the steak with salt, pepper, and savory. Heat oil in a large skillet over medium heat; add garlic cloves and steak. Cook steak 5 minutes on each side for medium rare. Transfer steaks to a cutting board. If you would like them cooked through a bit longer, cover with aluminum foil, they will continue to cook. Add mushrooms to the pan, leave heat on medium, and sauté until tender. Transfer mushrooms to a small bowl.
  • Discard garlic from the pan. Add red wine and stock to the pan. Reduce over high heat, scraping bottom with a wooden spoon, until 1/2 cup of sauce remains. Combine with mushrooms.

2 tablespoons vegetable oil
2 tablespoons unsalted butter
3 ounces smoked thick slab bacon, cut into 1/2-inch strips
1 medium onion, sliced
1 garlic clove, finely minced
2 -3 lbs beef round steak, and cut into 1-inch cubes (with some fat) or 2 -3 lbs chuck stew meat, cut into 1-inch cubes (with some fat)
20 white pearl onions, blanched for 1 minute and peeled
3/4 lb white mushrooms or 3/4 lb a combination of shiitake and cremini mushroom, cleaned, trimmed, and quartered
3 tablespoons all-purpose flour
salt & freshly ground black pepper
3 cups hearty red wine, such as a French Bordeaux or 3 cups a california Burgundy wine
1/4 cup cognac
1 sprig fresh thyme, 2 sprigs parsley, and 1 large bay leaf tied together with kitchen string
2 tablespoons finely minced fresh parsley, for garnish

Steps:

  • In a large enameled Dutch oven, heat 1 tablespoon of the vegetable oil and 1 tablespoon of the butter over medium heat until hot but not smoking. Add the bacon and saute over medium heat for 5 minutes. Add the sliced onion and cook, stirring, until wilted, 3 minutes. Finally, add the garlic, cook 1 minute longer, and remove from the heat.
  • Heat the remaining 1 tablespoon oil and 1 tablespoon butter in a large skillet over high heat until the foam subside. Add half the meat and saute until browned on all sides, about 5 minutes. Transfer the browned meat to the Dutch oven and saute the second batch.
  • In the same skillet, saute the pearl onions and mushrooms until lightly browned, about 5 minutes. Set aside.
  • Sprinkle the flour over the meat in the Dutch oven and season with salt and pepper. Stir the meat and flour with a wooden spoon over low heat for 1 minute. Add the wine, Cognac, and bouquet garni. Bring to a simmer, stirring frequently. Do not boil; even the briefest boiling would result in leathery and tough meat. Simmer the stew, covered, over very low heat until the meat is very tender, 2 hours; skim the fat and foam from the surface occasionally.
  • Add the mushrooms and pearl onions and simmer for another 30 minutes. The meat and vegetables should be very tender. Remove the bouquet garni. Taste and adjust the seasoning. Sprinkle with the parsley and serve.

I was given this recipe by a lovely Cypriot. I had never come across it before. It can be made with all kinds of mushrooms. I used shiitake with a Cabernet Sauvignon and found them delicious except that the stalks remained chewy, so cut those off if you use them.

1 1/2 large onions, sliced
4 tablespoons extra-virgin olive oil
11 ounces mushrooms, left whole, or cut in half if very large
Salt and pepper
1 cup red wine

Steps:

  • In a saucepan, fry the onions in the oil, covered, slowly over low heat, stirring occasionally, for about 20 minutes, until soft and golden.
  • Add the mushrooms, salt and pepper, and the wine and cook, covered, over low heat until the mushrooms are soft-between 10 and 30 minutes, depending on the mushrooms. Take off the lid to reduce the sauce if necessary.
