Categories     main-dish

Time 1h40m

Yield 6 to 8 servings

Number Of Ingredients 10

2 tablespoons olive oil
8 ounces sliced button mushrooms
2 cloves garlic, minced
2 teaspoons chopped fresh thyme
Kosher salt and freshly ground black pepper
1 store-bought pie crust
One 10-ounce box frozen chopped spinach, thawed, drained and pressed to remove any water
6 ounces Gruyere, grated
1 1/2 cups half-and-half
8 large eggs

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat the oil in a large skillet over medium heat. When the oil is hot, add the mushrooms, garlic and thyme. Cook, stirring occasionally, until the mushrooms have browned, 5 to 6 minutes. Season with a pinch of salt and pepper. Remove the skillet from the heat.
  • Press the pie crust into a deep, 9-inch tart pan with a removeable bottom (or a deep-dish pie pan). Layer the mushrooms and spinach into the crust and top with the cheese.
  • Whisk together the half-and-half, eggs and a good pinch of salt and pepper in a large bowl. Pour the egg mixture into the crust.
  • Place the pan on a rimmed baking sheet. Lightly cover the pan with aluminum foil and bake for 45 minutes. Remove the foil and continue baking until the quiche is set and the crust is golden brown, another 10 to 15 minutes. Let the quiche sit for 10 to 15 minutes, then remove from the pan, slice and serve.

SAUTEED SPINACH AND MUSHROOMS

Sauteed Spinach and Mushrooms image

Provided by Valerie Bertinelli

Categories     side-dish

Time 25m

Yield 4 servings

Number Of Ingredients 6

2 tablespoons extra-virgin olive oil
3 cloves garlic, smashed
2 cups sliced cremini mushrooms
Kosher salt and freshly ground black pepper
10 ounces baby spinach
1 to 2 tablespoons balsamic vinegar

Steps:

  • Heat the oil in a medium saute pan or skillet (not nonstick) over medium-low heat. Add the garlic and cook until fragrant, about 2 minutes (do not let the garlic brown). Push the garlic off to the side of the pan and add the mushrooms. Increase the heat to medium high and season the mushrooms with salt and pepper to taste. Cook, stirring occasionally, until the mushrooms are cooked through and begin to become golden in spots, 10 to 12 minutes.
  • Add the spinach, sprinkle with an additional pinch of salt and turn with tongs until wilted. (If you can't fit all the spinach in the pan, cover it for a few minutes, then uncover, stir and add the rest.) Transfer to a serving platter, drizzle with the vinegar and serve warm.

HAM AND SPINACH QUICHE

Ham and Spinach Quiche image

Bump up the richness of this from-scratch quiche by adding Monterey Jack to the ham-and-spinach filling.

Provided by Food Network Kitchen

Time 3h

Yield 6-8

Number Of Ingredients 14

1 3/4 cups all-purpose flour, plus more, for dusting
2 tablespoons sugar
Fine salt
12 tablespoons (1 1/2 sticks) unsalted butter, diced and chilled
4 teaspoons cider or white vinegar
1/3 cup ice water, plus more if needed
1/2 cup thinly sliced red onions
1 cup shredded Monterey jack cheese
1/2 cup chopped ham
1/2 cup chopped thawed frozen spinach, squeezed dry
1 1/4 cups half-and-half
2 tablespoons chopped fresh parsley
3 large eggs
Kosher salt and freshly ground black pepper

Steps:

  • Pulse together the flour, sugar and 1/2 teaspoon salt in a food processor. Add about a 1/3 of the chilled butter cubes and process until the butter is absorbed. Add the remaining butter and pulse until the butter is the size of peas, 5 or 6 pulses. Add the vinegar. Then, pulsing quickly a few times as you do it, add the ice water through the tube. Squeeze some dough between your fingers; it should just hold its shape without feeling wet. If it is crumbly, add more ice water a tablespoon at a time. Pulse quickly; do not overwork or the dough will be tough. Wrap the dough loosely in a large piece of plastic wrap, then firmly press and flatten the dough into a thin round. Refrigerate for 1 hour.
  • Lightly dust a work surface with flour, roll the dough out into an 11- to 12-inch round, about 1/8 inch thick. Center the dough in a 9-inch pie plate, with an even overhang all around. Fold the edges and flute or crimp. Chill for at least 30 minutes.
  • Preheat the oven to 375 degrees F.
  • Press a piece of foil over the chilled crust, fill with pie weights, raw beans or rice. Bake to set the crust, about 20 minutes. Remove the foil and weights and bake until the crust is light brown, 5 to 10 minutes more. Let cool slightly before adding the filling.
  • Adjust the oven temperature to 350 degrees F.
  • Sprinkle the onion evenly into the crust. Combine the cheese, ham and spinach in a small bowl and sprinkle it in an even layer over the onion.
  • Whisk together the half and half, parsley, eggs, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl.
  • Pour the custard over the filling and bake until the quiche is set, 35 to 50 minutes. Let cool at least 30 minutes before serving warm or at room temperature.

Mushroom, Spinach and Ham Tarts/Quiches image

From a national chain supermarket as part of their Feed You Family for Under $10 - recipe created by Aussie Chef Curtis Stone. Have not included 1 1/2 hour chilling times for the pastry.

Provided by ImPat

Categories     Breakfast

Time 1h20m

Yield 4 tarts/quiches, 4 serving(s)

Number Of Ingredients 14

3/4 cup plain flour
4 tablespoons unsalted butter (chilled and cut into pieces)
3 tablespoons water (chilled)
1/4 teaspoon salt
olive oil
100 g mushrooms (trimmed, cut into bite size pieces)
1 onion (coarsely chopped)
2 cups spinach leaves (if large coarsely chop, tightly packed)
50 g ham (chopped)
50 g cheese (tasty or cheddar grated)
1/2 cup thickened cream (double cream)
2 large eggs
1/2 teaspoon salt
1/4 teaspoon pepper (freshly ground)

Steps:

  • To make pastry crusts - combine flour, butter and salt in a food processor and blend until the mixture resembles bread crumbs.
  • Add 3 tablespoons of ice cold water and continue to blend until moist clumps begin to form.
  • Transfer the dough to a work surface and cut the dough into 4 pieces and flatten each piece into a disc and wrap in plastic wrap and refrigerate for 1 hour.
  • Lightly coat four 6 1/2 diameter tart pans with removable bottoms with butter.
  • Unwrap the dough discs and roll out each disc on a lightly floured work surface to a 6 1/2 inch round.
  • Transfer the dough to the prepared tart pans, fold the overhang in and press gently to adhere.
  • Refrigerate for 30 minutes, or until the pastry shells are cold.
  • Preheat the oven to 200°C.
  • Line the pastry shells with foil and weight the foil down with pie weights or dried beans.
  • Place the tarts on a heavy baking tray and bake for 15 minutes.
  • Remove the weights and foil and return to the oven and bake for a further 8 minutes or until the crusts are pale golden in colour.
  • Meanwhile to prepare the filling - heat the oil in a large heavy pan over medium-high heat and add mushrooms and onion and saute for 3 minutes or until the mushrooms soften.
  • Add the spinach and saute for 1 minute or just until the spinach wilts.
  • Remove the pan from the heat and cool and the divide the mix among the 4 warm crusts.
  • Top each with an equal amount of ham and cheese.
  • Mix the cream, eggs, salt and pepper in a medium bowl to blend.
  • Divide the egg mix between the 4 tarts over the filling and bake for 18 minutes or until it is just set in the centre.
  • Cool for 5 minutes and then remove from and pans and you could serve with a salad if so inclined.
