Mushroom, walnut & tomato baked peppers image

Stuffed peppers are a vegetarian favourite - this version is packed with vegetables, fresh pesto, herbs and chilli

1 tbsp sunflower oil
175g chestnut mushroom , diced
1 garlic clove , crushed
12 semi-dried tomato pieces in oil, drained well
50g dried white breadcrumb
25g walnut , roughly chopped
small bunch parsley , leaves finely chopped
1 tsp dried chilli flakes
4 tsp fresh pesto
2 small red or yellow peppers

Steps:

  • Heat oven to 220C/200C fan/gas 7. Heat the oil in a large frying pan and stir-fry the mushrooms over a high heat for 5 mins. Season with a good grind of black pepper and remove from the heat. Stir in the garlic, tomato pieces, breadcrumbs, walnuts, chopped parsley, chilli flakes and pesto until thoroughly combined.
  • Cut the peppers in half from top to bottom. Carefully remove the seeds and membrane. Place in a small foillined roasting tin and fill with the mushroom stuffing. Cover the surface of the stuffing with a small piece of foil. Bake for 35-40 mins until tender.

4 sun-dried tomatoes
2 teaspoons oil
175 g mushrooms
20 g hazelnuts
1 garlic clove
50 g breadcrumbs
1/2 bunch parsley
1 teaspoon chili
100 g feta
2 bell peppers
pepper

Steps:

  • Preheat the oven to 220C/Fan 200C/Gas 7. Roughly chop the sun-dried tomatoes. Heat the oil in a large frying pan and stir-fry the mushrooms over a high heat for 4 minutes.
  • Add the roughly chopped hazelnuts and fry for a further minute until the nuts are lightly toasted. Season with a good grind of black pepper and remove from the heat.
  • Stir in the tomatoes, garlic, breadcrumbs, parsley and chilli flakes until thoroughly combined. Break the cheese into small chunks and toss them through the stuffing lightly. Cut the peppers in half from top to bottom and carefully remove the seeds and membrane.
  • Place the peppers in a small foil-lined roasting tin, cut side up, and fill each half with the mushroom and feta stuffing. Cover the surface of the stuffing with a small piece of foil. Bake for 35 minutes until tender, removing the foil for the last 10 minutes of the cooking time. Serve warm with a lightly dressed mixed salad.

1 (6 ounce) bag fresh spinach, stems removed and rinsed
1 tablespoon butter or 1 tablespoon margarine
1 small red bell pepper, diced
4 ounces mushrooms, sliced
6 green onions, sliced (include some of the tender green tops)
1 small zucchini, unpeeled and diced
6 large eggs
2 tablespoons milk
3 tablespoons chopped parsley
1 1/2 teaspoons salt
fresh ground pepper
1/2 cup crumbled feta cheese

Steps:

  • In a large saucepan over medium heat, cook spinach in a small amount of water, covered, until wilted (about 3 minutes), tossing once with a fork.
  • Chop spinach and squeeze dry.
  • Melt the butter in a nonstick ovenproof medium size skillet over medium heat.
  • Add in the bell pepper, mushrooms, and green onions; stir/saute for 3 minutes.
  • Add in the zucchini; stir/saute for 3 minutes or until the vegetables are tender.
  • Stir in the spinach.
  • In a mixing bowl, whisk the eggs, milk, parsley, salt, and pepper.
  • Pour over vegetables in skillet.
  • Sprinkle feta cheese over the top.
  • Put skillet in a 350° oven; bake for about 25 minutes or until eggs are set.
  • Let stand for 5 minutes.
  • Cut into wedges and serve.

Baked Feta Cheese With Onions, Red Pepper & Tomatoes image

We went to the Greek Island of Kos and had this as a starter in a restaurant - we loved it! When we got home I had a go and made it myself. It can be served as a side dish too.

1 red sweet bell pepper
10 ml olive oil
20 g unsalted butter
400 g feta cheese
2 large onions
3 tomatoes
3 garlic cloves
50 g fresh parmesan cheese
paprika

Steps:

  • Preheat the oven to 220°C/425°F/Gas Mark 7
  • You will need two individual serving dishes that can go into the oven.
  • De-seed and cut the bell pepper length ways into 3 cm strips.
  • Brush the pepper slices in a little oil and place on a preheated non stick baking tray and roast for about 20 minutes. Remove from the oven.
  • Char the skin of the pepper slightly with a cooks blow torch if you think the skin isn't looking nice and roasted. Put the peppers to one side.
  • Now, in a saucepan, melt the butter and the olive oil.
  • Slice the onion thinly and finely chop the garlic. Add the onion and garlic to the saucepan. Over a low heat, cook until soft but not coloured.
  • Cut the feta cheese into 2cm cubes.
  • Using individual serving dishes, layer the onions, with the thinly sliced tomatoes and the roasted red pepper slices.
  • Top with the cubed feta cheese. Finish by sprinkling with the grated parmesan cheese. Sprinkle a pinch of paprika on top of each dish.
  • Cover with aluminium foil (trying not to touch the cheese) and bake in the oven for about 15 minutes. Uncover and bake for another 5 to 10 minutes, or until the feta starts to get a nice colour.
  • Take care not to cook too much as it looks better if the feta stays in cubes.
  • Serve with nice fresh crusty bread.

I found this recipe on another website, www.freshinthekitchen.co.nz. This recipe is a winner in my household. Seriously delicious. Served with steamed Kale, rice and Spicy Glazed Sweet Onions. A most enjoyable meal.

Number Of Ingredients 9

10 -12 mixed mushrooms, I used Portabello
1 tablespoon butter
1 garlic clove, finely chopped
2 green chilies, finely diced
1 shallot, finely diced (or 1/2 small onion)
150 g feta, chop into very small pieces
1/4 cup parmesan cheese, grated
1/4 teaspoon black pepper, cracked
1/2 teaspoon cayenne pepper

Steps:

  • Heat oven to 180 degrees.
  • Wipe mushrooms with a damp cloth and carefully scoop out the stems.
  • Finely chop the mushroom stems.
  • Heat butter in a frying pan over a medium heat and fry the garlic, shallot, mushroom stems and chillies until all juice has evaporated. About 7 minutes.
  • Transfer to a medium sized bowl and let cool for a few minutes.
  • Mix in feta, then add Parmesan, pepper and cayenne pepper, stirring well to combine.
  • Fill each mushroom cap with the stuffing and place on a baking tray lined with baking paper.
  • Bake 20 minutes.
