EBOO'S WILD SCUPPERNONG PIE

Eboo's Wild Scuppernong Pie image

Provided by Trisha Yearwood

Categories     dessert

Time 1h45m

Yield 8 servings

Number Of Ingredients 8

6 cups black and bronze scuppernongs
1 1/4 cups water
2 cups sugar
1/4 teaspoon baking soda
1/4 cup cornstarch
4 tablespoons (1/2 stick) margarine
2 store-bought roll-out pie crusts
1 egg, beaten

Steps:

  • Preheat the oven to 350 degrees F.
  • Separate the pulp and skins of the scuppernongs. Add the skins to a medium saucepan; add the pulp to a small saucepan. Add 1/2 cup water to each saucepan and bring to a boil. Add the sugar to the skins (no sugar to the pulp). Reduce the heat and simmer both pots until the pulp starts to break down, 5 to 6 minutes. Remove the pulp from the heat and strain into the skins, pushing as much juice through the strainer as possible; discard any solids (and seeds). Add the baking soda to the mixture; it will turn green and foam up. Don't worry--just continue to stir and simmer.
  • In a bowl, combine 1/4 cup water and the cornstarch; mix until there are no lumps. Add the cornstarch mixture to the filling and bring back to a boil. Stir in the margarine until melted. Remove from the heat.
  • Roll out one of the pie crusts and transfer it to a 9-inch pie pan. Pour the filling into the uncooked crust. Roll out the second crust and set it on top of the pie. Cut vents in the top crust in several places. Brush with beaten egg, using a pastry brush.
  • Bake until the crust has browned, 50 minutes.

FRESH MUSCADINE PIE

Fresh Muscadine Pie image

Try this old-fashioned muscadine pie recipe, made with ripe muscadines aka grapes, lemon juice, flour, butter, and sugar.

Provided by Diana Rattray

Categories     Dessert     Pie

Time 1h30m

Yield 8

Number Of Ingredients 6

Pastry for a 2-crust 9-inch pie
2 quarts muscadines
2 tablespoons lemon juice (about 1/2 lemon)
1/4 cup all-purpose flour
2 1/2 cups sugar
1 tablespoon butter (cut into small pieces)

Steps:

  • Gather the ingredients.
  • Line pie plate with half of the rolled out pastry . Refrigerate pie shell and remaining pastry until you're ready to fill the pie.
  • Mash muscadines. Separate hulls from pulp and set aside. Strain through a sieve to get juice; discard what's left of the pulp and seed in the sieve. Cook the reserved hulls in juice until tender, adding a little water if needed.
  • Let cool, then add lemon juice, flour, and sugar. Put the fruit mixture in prepared bottom crust. Preheat oven to 400 F.
  • Carefully arrange top crust over fruit, lattice style, if desired. Flute edge . Cut several slits in the top if top crust is left whole. Bake in preheated oven for approximately 10 minutes, then reduce heat to 375 F and bake 30 minutes longer.
  • Serve with whipped cream or whipped topping, if desired.
  • Enjoy.

  • Cracklin’ Bread. Cracklins take this cornbread to a whole new level in this indulgent treat. Back in the old days it was a treat if you had such abundance, but the calories were worked off through manual labor and cold winters.
  • Muscadine Pie. This grape pie has been a family favorite for countless families in the south and along the Appalachian mountains. The native southern grape has thick skins, which makes them more suitable for jelly, But, cooked and strained of the skins, they’re wonderful in a pie.
  • Shuck Beans with Bacon. Sometimes also called leather breeches, these dried string beans were often strung through with a needle and thread and hung from the rafters in the olden days.
  • Cornbread Stuffing. Some Northerners might even know this one! Fans of cornbread stuffing love the crumbly texture and lively flavor of this Southern classic which calls for cayenne, saltines, and sage for a distinctive taste.
  • Fried Zucchini. Whether you fry them in strips or in round slices, fried zucchini and squash are like nothing else. The pieces are dredged in milk and then coated in a spiced cornmeal and flour mixture for a wonderful flavor and crunch that has no match.
  • Okra Bread. Of all the many ways to prepare okra (fried, pickled, roasted) okra fritters are one of the yummiest. Seems like we had some kind of fritter every week as kids.
