This recipe was made actually by my 20yrs old son, when he was 5yrs old. Hope you enjoy it.

Ingredients

1 vermicelli noodle with seasoning packet
2 green onions, stalks
2 bok choi, stalks
3 Tbsp daikon, shredded
1/4 c bean sprouts, fresh
2-3 Tbsp soy sauce
2-3 Tbsp rice vinegar
2 Tbsp sesame oil
2 Tbsp chili oil
2-3 Tbsp prepared sweet chili sauce, opt.
leftover meat of any kind, corned beef, spam, chasu...

Steps:

1. Rinse the vegetables well, make sure to get all the dirt out.
2. Slice the green onions & bok choi, separate the leaves of the bok choi to a different bow.
3. Place the shredded daikon in a smaller bowl, add 1T of soy sauce, set aside.
4. Cut meat to desired size, I like mine a little bigger than the bok choi.
5. n a small pot heat the water according to the direction on the noodle packet. Add the seasoning packet, green onions, sprouts, bok choi (not leaves) & noodles. Bring to boil, till noodles are soft and bok choi is tender. In the noodles when the bok choi is tender add the meat, stir in & add the leaves and cover, turn off heat.
6. In the meantime prepare your bowl, add the rest of soy sauce, chili oil, sesame oil & rice vinegar. Pour the noodles into your bowl & garnish with shredded daikon mixture & sweet chili sauce if desired. Enjoy!!

I received this from someone I don't even know in a recipe exchange. . too funny. . .but it's truly yummy as the title represents. Kids love it (and so do grownups). This recipe is made kid-friendly and mild, so if you prefer, feel free to jazz it up with spices such as garlic, onion, Italian Spices, Spike, Mrs. Dash or any other seasonings you like. You can also substitute out sausage for the beef. Bacon bits is another nice addition!

Ingredients

1 1/2 lbs ground beef
8 ounces wide egg noodles
2 (8 ounce) cans tomato sauce
1 tablespoon butter
1 cup sour cream
1 cup cottage cheese (can substitute 6 oz cream cheese if you like)
1 cup shredded sharp cheddar cheese
salt and pepper

Steps:

Cook noodles as per directions on the package (in the past, I have tried whole wheat noodles and they tend to fall apart in the oven).
Brown meat in butter (I like to season with garlic, onion and italian seasonings). Add in tomato sauce. Simmer on low for 10 minutes.
In a separate bowl, combine cottage cheese, sour cream, and noodles. Season with salt and pepper.
In 9x13 pan layer 1/2 of noodle mixture, all of meat sauce and then remaining 1/2 of noodles. Top with shredded cheese (use as much as you like, but 1 cup is usually a good amount) and bake at 350 degrees for 25 minutes.
