Provided by Somdatta

Time 50m

Number Of Ingredients 18

Chicken - 1 pound
Ghee - 3/4 cup
Onion - 1, large, thinly sliced
Onion - 1/2 , large, chopped fine
Ginger - 1 inch, thinly sliced
Khoya - 2 tbsp ( wholemilk fudge)
Red Chili Powder - 1 tsp
Kashmiri Red Chili Powder - 1 tsp
Coriander Powder - 1 tbsp
Cumin Seeds - 11/2 tsp
Salt - To taste
Sugar - ToTaste
Yogurt - 2/3 cup
Cashew Nut Paste - 3 tbsp
Cardamom Powder - 1 tsp
Screwpine (Kewda) water - 1 tbsp
Lemon Juice - 1 tbsp
Saffron (Kesar) - 1 pinch, soaked in 2 tbsp warm milk

Steps:

  • Heat the ghee in a frying pan.
  • Add the onion and fry over medium heat until it becomes brown and crisps up. This step takes 8-10 mins. Make sure to fry over medium heat and be mindful, onions burn very quickly. Once done, remove and set aside on a paper towel.
  • In the same ghee add the ginger and fry till it crisps up.
  • Crush the onion and ginger and set aside.
  • In the same ghee, now add the jeera(cumin seeds) and let it get fragrant.
  • Add the chopped onion and fry till it looks translucent pink.
  • Add the chicken pieces and lightly saute and cook for 3-4 mins.
  • Add the khoya, red chilies, coriander powder and the red chili powder. Mix it in. Cook for a couple of minutes.
  • Now add 11/4 cups of water , cover the pan with a lid and cook the chicken.
  • When half-cooked, add the yogurt and salt. Mix in immediately and cook with the lid on.
  • When the chicken looks tender ( in about 3-4 mins for me) after adding the yogurt, remove the lid. Add the remaining ingredients and let it cook.
  • Cover with the lid again and seal the edges of the pan. Place on a heated tawa or pan, and cook in "dum"for another 8-10 mins. All liquid will be evaporated and only ghee will remain.
  • Add the crushed fried onions and ginger and serve it alongside rotis/naans.

INDIAN CHICKEN CURRY (MURGH KARI)

Indian Chicken Curry (Murgh Kari) image

This is a really good recipe for spicy Indian chicken curry. It's pretty easy to make and tastes really good!

Provided by Ayshren

Categories     World Cuisine Recipes     Asian     Indian

Time 1h

Yield 6

Number Of Ingredients 20

2 pounds skinless, boneless chicken breast halves
2 teaspoons salt
½ cup cooking oil
1 ½ cups chopped onion
1 tablespoon minced garlic
1 ½ teaspoons minced fresh ginger root
1 tablespoon curry powder
1 teaspoon ground cumin
1 teaspoon ground turmeric
1 teaspoon ground coriander
1 teaspoon cayenne pepper
1 tablespoon water
1 (15 ounce) can crushed tomatoes
1 cup plain yogurt
1 tablespoon chopped fresh cilantro
1 teaspoon salt
½ cup water
1 teaspoon garam masala
1 tablespoon chopped fresh cilantro
1 tablespoon fresh lemon juice

Steps:

  • Sprinkle the chicken breasts with 2 teaspoons salt.
  • Heat the oil in a large skillet over high heat; partially cook the chicken in the hot oil in batches until completely browned. Transfer the browned chicken breasts to a plate and set aside.
  • Reduce the heat under the skillet to medium-high; add the onion, garlic, and ginger to the oil remaining in the skillet and cook and stir until the onion turns translucent, about 8 minutes. Stir the curry powder, cumin, turmeric, coriander, cayenne, and 1 tablespoon of water into the onion mixture; allow to heat together for about 1 minute while stirring. Mix the tomatoes, yogurt, 1 tablespoon chopped cilantro, and 1 teaspoon salt into the mixture. Return the chicken breast to the skillet along with any juices on the plate. Pour 1/2 cup water into the mixture; bring to a boil, turning the chicken to coat with the sauce. Sprinkle the garam masala and 1 tablespoon cilantro over the chicken.
  • Cover the skillet and simmer until the chicken breasts are no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Sprinkle with lemon juice to serve.

CREAMY CASHEW CHICKEN CURRY

Creamy Cashew Chicken Curry image

Mooove over, real cream - this curry is made rich and creamy with (cow-free) cashew cream, which is remarkably similar to heavy cream in appearance, taste, and in-sauce behavior. In fact, cashew cream actually thickens up faster. You won't need anything too exotic, besides maybe garam masala, to make this straightforward recipe. Garnish with whole cashews, lime wedges, and cilantro. Serve with rice, garlic naan, or both!

Time 4h50m

Yield 8

Number Of Ingredients 20

2 teaspoons kosher salt, or more to taste
1 ½ teaspoons ground cumin
1 teaspoon ground coriander
2 teaspoons paprika
½ teaspoon cayenne pepper
½ teaspoon ground turmeric
2 teaspoons garam masala
2 pounds boneless, skinless chicken thighs
1 tablespoon vegetable oil
2 tablespoons butter, divided
1 yellow onion, chopped
2 tablespoons tomato paste
4 garlic cloves, minced
1 tablespoon minced fresh ginger root
1 cup chicken broth
2 cups cold water
¾ cup whole roasted cashews
⅓ cup sliced green onions
⅓ cup freshly chopped cilantro
1 lime, juiced

Steps:

  • Mix salt, cumin, coriander, paprika, cayenne, turmeric, and garam masala together in a small bowl.
  • Cut a chicken thigh in half lengthwise along the crease. Halve the thicker portion to end up with three 2-inch pieces. Repeat with remaining chicken thighs.
  • Transfer chicken to a bowl. Add oil and about 1/2 of the spice blend; mix thoroughly. Cover with plastic wrap and marinate in the fridge for 4 to 12 hours.
  • Heat 1 tablespoon butter in a large pan over high heat until melted and golden brown. Add the chicken in a single layer. Cook until browned, 4 to 5 minutes per side. Return chicken and accumulated juices to the bowl.
  • Heat remaining butter in the same pan over medium-high heat. Add onion, remaining spice blend, tomato paste, garlic, and ginger. Cook and stir until fragrant, 2 to 3 minutes. Pour in chicken broth and bring to a simmer. Add the chicken and any accumulated juices.
  • Combine water and cashews in a blender; blend on high speed until very smooth. Stir cashew cream into the pan. Reduce heat to medium and simmer until flavors blend, 15 to 20 minutes. Stir in green onions and cilantro; taste for seasoning. Squeeze in lime juice.

MURG MUMTAZ (INDIAN CHICKEN CURRY WITH MILD CASHEW NUT CURRY)

Murg Mumtaz (Indian Chicken Curry With Mild Cashew Nut Curry) image

A rich and creamy gravy which can be served with pilaf or any Indian bread. Preparation time includes the time required for the chicken to marinate. NOTE: According to the original recipe, the cream is to be added to the gravy before pouring it onto the chicken. But since the chicken still needs to cook a bit more after adding the gravy, I add it at the end to prevent the cream from curdling.

This is a lovely curry -rich, but not heavy- and mild. Serve with rice and your choice of accompaniments. Prep/cook times are estimates.
