14 McVitie's® chocolate digestives or 30 rich tea biscuits (8.8 oz)
1 1/3 cups dark chocolate chips (8 oz)
2/3 cup whipping cream
2 tablespoons butter
2/3 cup dark chocolate chips (4 oz)
1/3 cup whipping cream
1 tablespoon butter

Steps:

  • Line a 6- or 8-inch round cake pan with foil. Spray with nonstick cooking spray. Break each of the biscuits into 1-inch pieces; set aside.
  • In medium bowl, place 1 1/3 cup chocolate chips; set aside. In 1-quart saucepan, heat 2/3 cup whipping cream and 2 tablespoons butter over medium heat, stirring until butter is melted and mixture comes to a boil. Pour cream mixture over chocolate and stir smooth.
  • Add biscuit pieces to chocolate mixture, gently fold until all pieces are coated. Spoon into the prepared cake pan. Gently press mixture into pan. Refrigerate cake for 3 hours or until firm.
  • Remove cake from cake pan and turn upside down onto a serving plate. Remove foil. In small bowl place remaining 2/3 cup chocolate chips. In 1-quart saucepan, heat remaining 1/3 cup whipping cream and 1 tablespoon butter over medium heat, stirring until butter is melted and mixture comes to a boil. Pour cream mixture over chocolate and stir smooth. Pour the melted chocolate over the cake; frost top and sides using a butter knife or offset spatula. If desired, decorate with melted milk chocolate.

1 cup (2 sticks) unsalted butter, plus more for greasing the pan
2 cups all-purpose flour
2 cups sugar
11/2 teaspoons baking soda
4 tablespoons unsweetened cocoa powder
1/2 cup buttermilk
2 eggs
1 teaspoons vanilla extract
1/2 cup (1 stick) unsalted butter
3/4 cup buttermilk
4 tablespoons unsweetened cocoa powder
1 pound confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • For the cake: Lightly grease a 9-by-13-inch cake pan with butter. Combine the flour, sugar and baking soda in the bowl of a stand mixer or mixing bowl. Combine the butter, cocoa and 1 cup water in a medium saucepan and bring to a boil while mixing. Add the cocoa mixture to the flour mixture, along with the buttermilk eggs and vanilla, and beat for 3 minutes. Pour into the prepared cake pan and bake until firm to the touch and a toothpick inserted in the center comes out clean, 30 to 40 minutes. Let cool 10 minutes in the pan before turning out on a rack to cool completely.
  • For the frosting: Make the frosting as soon as the cake is out of the oven. Combine the butter, buttermilk and cocoa in a small saucepan and bring to a boil while mixing. Combine with the confectioners' sugar in the bowl of a stand mixer and beat until smooth. Spread the frosting evenly on the cake.

115g of butter
Tin of condensed milk
Raisins
About 200g of digestives S
Marsh mellows
Maltesers
Bounty/mars/snickers/revels
400g of chocolate (base)

Steps:

  • Line tin with cling film
  • Melt 400g of chocolate for the base over hot water
  • Add 115g of butter and condensed milk and melt until all mixed well
  • Add your raisins (I use about 120g)
  • Roughly break biscuits and add to chocolate/raisin mixture
  • Press in tin and add mini marshmallows and maltesers and press into tin, then fridge.
  • Then, for the top melt another 400g of chocolate over hot water and spread over top. If you want, melt around 100g of dark and/or white chop and swirl on top!!

This recipe was given to my mom by a next door neighbor many years ago. It makes a wonderful dark chocolate cupcake, or double the recipe for a sheet or layer cake. It has become a family favorite and is always requested at birthdays.

  • Mix all ingredients together until moist and well blended.
  • Put in cupcake cups and bake for 20-25 minutes at 350 degrees F.
  • Frost with your favorite icing.
  • To make a layer cake, double the recipes and put in 2 round cake pans.
  • Increase baking time to about 35 minutes or until a toothpick inserted in the center comes out clean.

1/2 teaspoon butter, for greasing the pan
4 ounces unsalted butter, softened
4 ounces granulated sugar
4 ounces dark chocolate
8 ounces rich tea biscuits or 8 ounces sweet cookies
1 egg
8 ounces dark chocolate, for coating
1 ounce chocolate, for decoration

Steps:

  • 1. Lightly grease a 6-inch-by-2½-inch cake ring with the butter and place on a tray on a sheet of parchment paper.
  • 2. Break each of the biscuits into almond size pieces by hand and set aside.
  • 3. In a large bowl, combine the butter and sugar until the mixture starts to lighten.
  • 4. Melt the 4 ounces of the dark chocolate and add to the butter mixture, stirring constantly.
  • 5. Add the egg and beat to combine.
  • 6. Fold in the biscuit pieces until they are all coated with the chocolate mixture.
  • 7. Spoon the mixture into the prepared cake ring. Try to fill all of the gaps on the bottom of the ring because this will be the top when it is un-molded.
  • 8. Chill the cake in the refrigerator for at least 3 hours.
  • 9. Remove the cake from the refrigerator and let it stand.
  • 10. Meanwhile, melt the 8 ounces of dark chocolate in a double boiler or saucepan on the stove top over low heat. Slide the ring off the cake and turn it upside down onto a cake wire.
  • 11. Pour the melted chocolate over the cake and smooth the top and sides using a palette knife.
  • 12. Allow the chocolate to set at room temperature.
  • 13. Carefully run a knife around the bottom of the cake where the chocolate has stuck it to the cake wire and lift it onto a tea plate.
  • 14. Melt the remaining 1 ounce of chocolate and use to decorate the top of the cake.

Steps:

  • Break each of the biscuits into little pieces in a bowl.
  • Melt the butter and the caster sugar in a saucepan over a low heat. Once it has melted, add the cocoa and the drinking chocolate.
  • In a separate bowl, beat the two eggs, then add the beaten eggs to the butter and sugar mixture, and mix well.
  • Pour over the broken biscuits. Press the mixture into a tin lined with greaseproof paper. Cover with another sheet of greaseproof paper and press down well.
  • Leave the biscuits mix to set in the fridge over night.
  • Break the milk chocolate into a bowl and set over a pan of boiling water to melt. Make sure the bowl does not touch the water. Once melted pour the chocolate over the biscuit mixture and leave to set.
  • Once set, remove from the tin and slice into squares

RICH RASPBERRY CHOCOLATE MOUSSE CAKE

50g 70% plain chocolate , broken into pieces
50g butter
1tbsp golden syrup
200g Hob Nobs
200g 70% plain chocolate , broken into pieces
200g milk chocolate (at 30% cocoa solids), broken into pieces
4 eggs , separated
300ml whipping cream
3 x 150g punnets raspberries

Steps:

  • For the base, melt the chocolate with the butter and golden syrup in a bowl over barely simmer watering or on a low heat in the microwave.
  • Put the biscuits in a bag and crush with a rolling pin until they reach a crumb consistency. Combine the two and spread over the base of a 23cm springform tin. Refrigerate for about an hour to set.
  • For the mousse, melt the remaining plain chocolate and the milk chocolate together in the same way and allow to cool until lukewarm. Using an electric beater, whisk the eggs whites in one bowl to stiff peaks. Softly whip the whipping cream in another bowl until thickened but not as far as soft peaks.
  • Stir the egg yolks into the chocolate, then beat the cream into the mixture - a balloon whisk is good for this. Work quickly if the chocolate looks like it might be becoming grainy. Gently fold in the eggs whites with a whisk, spread the mixture over the biscuit base and return to the fridge overnight.
  • Release from the tin and decorate with concentric circles of raspberries and serve.
