CHICKEN PARMESAN CASSEROLE
I came up with this easy casserole idea instead of making homemade Chicken Parmesan. Enjoy!

Steps:
- Preheat an oven to 350 degrees F (175 degrees C).
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the rotini, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
- Stir together the rotini, chicken, and mozzarella cheese in a large casserole dish. Pour the marinara sauce over the pasta mixture; sprinkle with bread crumbs. Cover the dish with aluminum foil.
- Bake in the preheated oven until the cheese is entirely melted, about 35 minutes.

SKILLET CHICKEN PARMESAN

Steps:
- Slice the chicken breasts in half horizontally to make 4 thin cutlets. Put between 2 pieces of plastic wrap and pound with a meat mallet or heavy skillet until 1/4-inch thick.
- Cut any hard crusts off the bread with a serrated knife, then cut the bread into cubes. Add the bread cubes to a food processor with the motor running, a few pieces at a time, and process to make coarse crumbs (you will have about 1 1/4 cups crumbs).
- Heat 1 tablespoon olive oil in a large nonstick ovenproof skillet over medium-high heat. Add the breadcrumbs and cook, stirring, until golden and crisp, about 3 minutes. Add 2 tablespoons parmesan and cook, stirring, until melted, about 1 more minute. Transfer to a bowl and stir in 2 tablespoons basil; set aside. Preheat the broiler.
- Return the skillet to medium-high heat and add the remaining 1 tablespoon olive oil. Sprinkle the chicken with 1/4 teaspoon salt, and pepper to taste; add to the skillet (in batches, if necessary) and cook until golden and just cooked through, 2 to 3 minutes per side. Transfer to a plate.
- Add the tomato puree, then rinse out the can with 1 cup water and add to the skillet. Add the garlic, red pepper flakes and 1 tablespoon parmesan; reduce the heat to medium and simmer, stirring occasionally, until the sauce is slightly thickened, about 10 minutes. Stir in the remaining 1/4 cup basil and season with salt and pepper.
- Return the chicken to the skillet, turning to coat with the sauce. Top with the remaining 1 tablespoon parmesan and all but a few tablespoons of the toasted breadcrumb mixture. Sprinkle with the mozzarella and the remaining breadcrumbs. Broil until the cheese melts, 1 to 2 minutes.
THE BEST PARMESAN CHICKEN BAKE
This chicken Parmesan is done casserole style (so, no breading or frying!), but still offers up that irresistible combination of tender chicken, crunchy/cheesy coating, and flavorful sauce.

- Preheat oven to 350 degrees F (175 degrees C).
- Coat the bottom of a 9x13 inch casserole dish with olive oil, and sprinkle with garlic and hot red pepper flakes.
- Arrange the chicken breasts in bottom of the dish, and pour marinara sauce over chicken. Sprinkle basil over marinara sauce, and top with half the mozzarella cheese, followed by half the Parmesan cheese. Sprinkle on the croutons, then top with the remaining mozzarella cheese and remaining Parmesan cheese.
- Bake in preheated oven until cheese and croutons are golden brown and the chicken is no longer pink inside, about 35 minutes to an hour, depending on the shape and thickness of your chicken breasts. An instant-read thermometer inserted into the thickest part of a chicken breast should read at least 160 degrees F (70 degrees C).

- Oven@ 350.
- Cook chicken and cut into bite sized pieces.
- Place into a casserole dish.
- Prepare Stove Top according to directions.
- Heat both cans of soup with the milk in a saucepan until hot.
- Pour over chicken.
- Spoon stuffing over top of chicken and soup.
- Bake for 30-45 minutes or until bubbly.
SKILLET PARMESAN CHICKEN
This is real comfort food. A family favorite. If you can, buy the fresh mozzarella. You won't believe the difference and it's worth it. The texture isn't rubbery like the typical mozzarella. I got it from watching an Emeril show on the Food Network.

Steps:
- Pound the chicken breasts between two slices of plastic wrap until about 1/4" thick.
- Season with salt and pepper.
- Dredge chicken in flour and shake off excess.
- Dip in egg/milk mixture, then in breadcrumb/Parmesan mixture.
- Heat the butter and olive oil in a large deep skillet.
- Brown the chicken breasts over medium heat until golden on each side (about 2-3 min per side).
- Remove to a plate and keep warm.
- Add the marinara sauce to the skillet.
- Heat to boiling and simmer 10 minutes.
- Add the chicken breasts to the sauce and sprinkle Parmesan over them.
- Place a slice of mozzarella on each piece of chicken.
- Cover and simmer about 8- 10 minutes or until the cheese has melted and the chicken is tender.
- Serve with your favorite pasta- we like linguine.

- Cut chicken breasts into thin slices. To one bowl, add egg and scramble with a fork. To a second bowl, add almond flour or breadcrumbs, garlic powder, salt and ground pepper. Stir to mix. Dip chicken first in the egg, then into the dry ingredients. Coat fully, and set aside. Repeat until all pieces are breaded.
- Add oil to a cast iron pan and heat over medium heat. Allow to heat up for two minutes before adding breaded chicken. Cook until golden brown. Set aside to cool while you prep the rest of the casserole.
- To a bowl, add pasta sauce, half of the mozzarella and Parmesan cheese, as well as a head of cauliflower or gluten-free past (make sure it's already cooked to al-dente). Chop up breaded chicken and add. Stir to combine.
