MULLED CIDER ("WASSAIL")
An old-fashioned Mulled Cider recipe makes the perfect fall and winter beverage!

Steps:
- Combine all of the ingredients in a large pot and bring to a boil. Reduce the heat to low; simmer for 20 minutes. Ladle into mugs and serve warm. If you want to strain off bits of spices and fruit that are floating in the cider, you can pour the liquid through a fine mesh sieve or cheesecloth before serving.

Steps:
- Combine the apple cider, cranberries, ginger, red chile flakes, star anise, cloves, allspice, orange slices and 2 of the cinnamon sticks in a medium pot. Bring to a simmer and cook for 5 minutes. Turn off the heat and allow the cider to sit for 5 minutes. Strain the cider to remove the spices.
- If desired, put 1 ounce dark rum in each of 4 large mugs. Divide the cider among the mugs and garnish with the remaining cinnamon sticks.
MULLED CIDER (SPICE BAG)
Do you like Mulled Cider? I made these for gifts one year and gave them with tag instructions. Great on a cool evening. It fills the house with this wonderful aroma.

Steps:
- Lay two pieces of cheesecloth on a flat surface.
- Place broken cinnamon stick, cloves, allspice, and orange peel in the center.
- Bring up corners and tie with string.
- In a saucepan mix the ingredients for the cider and put the spice bag into it.
- Heat till flavors are well-blended.
- Remove the spice bag.

MULLED CIDER
Ahhh, the smell of hot mulled cider on a cold winters day. It warms and soothes you inside and out. If you want a little "zing" to it, just add some brandy.

Steps:
- Cut two slices (1/4-inch thick) from each lemon and orange half.
- Insert whole cloves into slices and set aside.
- Squeeze juice from remainder of fruit halves into a medium saucepan.
- Stir in apple juice and honey.
- Mix well.
- Add cinnamon sticks, ginger and clove/fruit slices.
- Bring to a boil.
- Reduce heat and simmer for about one hour over very low heat.
- Strain if desired.

- Peel the skin from the orange leaving the bitter white pith behind. Stick the cloves into the skin. Squeeze the juice from the orange and add to the 2-3/4 cups orange juice. Place all ingredients into a large nonreactive pan and bring to a boil over high heat. Remove from heat, cover and allow to stand at least 30 minutes to allow flavors to blend. Serve warm or cold.

A tasty Mulled Apple Cider which can be served with or without Rum. I tweaked this over a few years to get it just so, and it's generally pretty popular at our holiday parties. (Halloween through Christmas) Plus it makes the house smell fantastic.

Steps:
- With cloves and allspice in a teaball, cook all ingredients in a Crockpot on low 2-8 hours. Stir occasionally/rarely to dissolve sugar. Or cook in a pan on the stovetop on low heat 20-30 minute until it simmers.
- Add 1 1/2 oz. Bacardi Gold Rum (MUST be Bacardi, accept no substitutes) per mugful when poured, if desired. Don't cook it with the Rum.
