1 ½ pounds meatloaf mix (pre-packaged meat available at your grocer's meat counter. )
1 large egg
¼ cup yellow mustard
½ cup ketchup
2 tablespoons Worcestershire sauce
1 cup panko bread crumbs
2 tablespoons minced onion
¼ teaspoon black pepper
¼ teaspoon sea salt
½ teaspoon onion powder
½ teaspoon garlic powder

Steps:

  • Heat oven to 350°F.
  • Add meat, and every ingredient listed to a large mixing bowl. Using gloved hands, combine until mixed.
  • Using an ice cream scoop, add meat to each muffin tin space. *see image in post.
  • Bake uncovered for 25 minutes.
  • Allow meat loaves to rest for 5 minutes before removing them from the pan. Allow excess grease to cool before discarding in the trash.
  • Serve warm with your choice of sides. Enjoy!

1 cup water

3 cloves garlic, minced
3 cups hot mashed potatoes
1/4 cup chopped fresh parsley
1 cup HEINZ HomeStyle Savory Beef Gravy, warmed

Steps:

  • Heat oven to 375ºF.
  • Mix meat, stuffing mix, water and A.1. just until blended; press into 12 muffin pan cups sprayed with cooking spray.
  • Bake 20 to 25 min. or until done (160°F).
  • Add cream cheese and garlic to potatoes; stir until cream cheese is melted. Stir in parsley. Scoop over meatloaves. Serve topped with gravy.

1 1/2 lbs ground beef
1 1/4 cups finely chopped onions
1 cup breadcrumbs
2/3 cup ketchup
1 dash hot sauce
1 dash Worcestershire sauce
2/3 cup finely chopped fresh parsley
3 large eggs, lightly beaten
1/2 teaspoon thyme
1 teaspoon salt
1/2 teaspoon pepper
barbecue sauce, for glaze

Steps:

  • Combine all ingredients in a large bowl& mix until well blended- do not over mix.
  • Place a 2 inch wide parchment strip across each mould of the muffin tin, coming up from each side by about 2 inches.
  • This will be used for unmoulding after they are cooked.
  • Using an ice cream scoop or a large spoon, generously fill each section of the muffin tin with meat, rounding the top to obtain a muffin shape.
  • Brush with BBQ sauce& bake in a preheated 350F oven for 15- 20 mins (or until meat thermometer reaches 160F), brushing occasionally with more BBQ sauce.

3/4 cup shredded Mexican cheese blend
1 tablespoon chili powder
1 tablespoon Worcestershire sauce

1 medium onion, cut into chunks
2 ribs celery from the heart of the stalk, cut into 2-inch pieces
1 green bell pepper
1 large egg plus a splash of milk, beaten
1 cup plain bread crumbs
2 tablespoons grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
1 cup smoky barbecue sauce
1/2 cup tomato salsa
1 tablespoon Worcestershire sauce
Vegetable oil or extra-virgin olive oil
Micro-way-cool Bacon and Green Beans, recipe follows
Smashed potatoes and cream cheese, recipe follows
6 slices microwave ready-crisp bacon
One 16-ounce bag frozen green beans
A drizzle extra-virgin olive oil
Salt and pepper
2 1/2 pounds small red potatoes or baby Yukon gold potatoes
1/2 cup half-and-half or whole milk
8 ounces plain cream cheese or veggie cream cheese, cut into pieces
10 chives or 2 scallions, chopped or snipped with kitchen scissors

Steps:

  • Preheat oven to 450 degrees F.
  • Put ground beef into a big bowl. Put onion and celery into a food processor. Cut the bell pepper in half, rip out the seeds and throw them into your garbage bowl. Cut the pepper into a few pieces and add to the food processor. Pulse the processor blades to finely chop the vegetables into very small pieces then add them to the meat bowl. Add egg, beaten with milk, bread crumbs and grill seasoning to the bowl. Next, mix together the smoky barbecue sauce, the salsa and the Worcestershire sauce. Pour half the sauce mixture into the bowl with the meatloaf mix. Mix the meatloaf together with your hands. Wash up. Brush a 12-muffin tin (1/2-cup each) with vegetable oil or extra-virgin olive oil. Use an ice cream scoop to help you fill meat into a each tin. Top each meat loaf with a spoonful of extra sauce. Bake about 20 minutes. Cut open 1 muffin to test that the middle is cooked through. While meatloaf muffins bake, make green beans in the microwave. Serve meatloaf with Smashed Potatoes and Cream Cheese on the side, too.
  • Place bacon between paper towels and microwave 60 seconds on high. Cool bacon and chop or crumble up.
  • Place green beans in a bowl and drizzle with extra-virgin olive oil, salt and pepper. Cover the bowl loosely with plastic wrap and microwave green beans on high for 5 minutes, stir and cook 5 minutes more. Remove wrap and top green beans with crumbled bacon.
  • Boil potatoes until tender, 15 minutes. While the water boils and when the potatoes are cooking, you can be working on the meatloaf recipe.
  • When the potatoes are tender, drain them and return them to the hot pot to let them dry out a bit. Mash potatoes with half-and-half or milk using a potato masher. Add in the cream cheese and smash until the cheese melts into the potatoes. Then add chives and scallions and season with salt and pepper, to your taste.

1 small yellow onion, diced
1 clove garlic, minced
¾ cup panko breadcrumbs
½ cup whole milk

1 teaspoon worcestershire sauce
2 teaspoons kosher salt
½ teaspoon freshly ground black pepper
2 tablespoons ketchup

Steps:

  • Preheat the oven to 350°F (180°C). Grease a standard muffin tin with olive oil.
  • Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes. Yummy!! Hubby and I both grew up hating meatloaf -- the ones our Moms made and even the ones Grandma made too. I came across this recipe on Food Network and it looked cute how they were made in muffin tins. I thought okay, I gotta give this a try, so I tweaked it a bit to make it my own and to fit to what we like and it is absolutely delicious. I don't have children, but I went to a family friend's house and I cooked this for three young kids. They all gobbled it right up and wanted more even. Good thing I had another muffin tin staying warm in the oven. :)

1 medium onion, cut in chunks
2 celery ribs, cut in chunks
1 red bell pepper, cut in chunks
1 cup barbecue sauce
1/2 cup salsa
1 tablespoon Worcestershire sauce
1 1/2 lbs ground beef
1 egg, beaten with a splash of milk
1 cup breadcrumbs
2 tablespoons McCormick grill seasoning

Steps:

  • Throw onions, celery, and bell pepper in a food processor and finely chop. If you don't have a food processor, chop them really small with a knife.
  • Mix barbecue sauce, salsa and Worcestershire sauce in a medium bowl, divide it into halves.
  • In a big bowl put beef, chopped vegetables, egg, bread crumbs, McCormick grill seasoning, and one half of the barbecue sauce mixture.
  • Mash everything up with your hands.
  • Grease the muffin pans; I use extra virgin olive oil (EVOO).
  • Use a big spoon or an ice cream scooper to scoop meatloaf mixture into each tin.
  • Top the meatloaves with a spoonful of the remaining barbecue sauce mixture.
  • Bake for 20 minutes in a 450 degree Fahrneheit oven.
  • Note: Makes about 12-16 muffins. It depends on how big you want each of them to be; the bigger you make them the less you'll have.

1/3 cup breadcrumbs or oatmeal (Either works, but I now use oatmeal)
1/3 cup Parmesan cheese
1 egg
1 (8 ounce) can tomato sauce (Instead of the tomato sauce, I often substitute with around 1/4 cup of ketchup in the meat mixture and at least another 1/4 cup for the top. Personal choice to use the ketchup vs tomato sauce I do prefer the taste of ketchup - must be the added sugar.)
1/2 teaspoon garlic powder
Salt and pepper
several shakes of Worcestershire sauce (about a teaspoon)
A couple of handfuls of whatever other veggies you have on hand... (onions, mushrooms, zucchini, broccoli, carrots, spinach, lentils...)

Steps:

  • Preheat oven to 350 degrees.
  • Mix all the ingredients together in a bowl, but only use about ¼ of the tomato sauce/ketchup in the meat mixture. Reserve the rest for the tops of the meatloaf muffins.
  • Press the meat into the muffin cups (you should be able to get eight to 10 out of this amount of meat).
  • Top with a dollop of tomato sauce/ketchup on each one.
  • Cook for 30-35 minutes.

1 1/2 pounds 90% lean ground beef (, you could also use ground turkey)
1/2 cup panko breadcrumbs
1 large egg (, whisked)
2-3 Tablespoons fresh parsley (, finely chopped )
1 Tablespoon Worcestershire sauce
1 Tablespoon ketchup
3/4 teaspoon Kosher salt
1/4 teaspoon ground black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 cup ketchup or BBQ sauce (, you could mix half and half)
2 Tablespoons light brown sugar

Steps:

  • Preheat the oven to 350°F. Lightly spray muffin pan and set aside.
  • Combine the meat, breadcrumbs, egg, parsley, Worcestershire sauce, ketchup, salt, pepper, garlic powder and onion powder in a large bowl. Mix just until combined. Don't overmix or the meat won't be as tender.
  • Divide the meat evenly into the muffin pan and press down.
  • In a small bowl, mix together the ketchup and/or BBQ sauce and brown sugar. Set aside.
  • Bake meatloaf for 15 minutes. Then remove from oven and absorb any extra grease with a fork and paper towel. Then pour sauce over the meat evenly. Add pepper on top if desired. Then bake an additional 10-15 minutes or until the center reaches 160°F.
  • Serve while warm with potatoes and green beans.

2 tablespoon Worcestershire sauce
2 large eggs
3/4 cup breadcrumbs
1 teaspoon Kosher salt
1/2 teaspoon coarse ground black pepper
1/3 cup ketchup
3 tablespoons brown sugar
1 tablespoon yellow mustard
1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 375 degrees.
  • In a large bowl mix the ground beef, onion, garlic, Worcestershire sauce, eggs, breadcrumbs, salt and pepper until just combined.
  • Roll mixture into 12 pieces and place in greased muffin tin, flattening the tops slightly.
  • Bake for 25-30 minutes.
  • Turn oven onto broil.
  • Glaze with sauce then broil until the sauce caramelizes, about 1 minute. (If you prefer not to broil, cook at 450 for 5 minutes)
