For pigs in a blanket Mexican style, we add refried beans and green chilies. Spice it up even more with pepper jack, jalapenos and guacamole. -Jennifer Stowell, Montezuma, Iowa

8 hot dogs
1 can (16 ounces) refried beans
8 flour tortillas (10 inches)
1 can (4 ounces) chopped green chiles
1 can (2-1/4 ounces) sliced ripe olives, drained
2 cups shredded Monterey Jack cheese
Oil for frying
Sour cream and salsa, optional

Steps:

  • Heat hot dogs according to package directions. Spread beans over the center of each tortilla; layer with green chiles, olives and cheese. Place hot dog down center of tortilla. Fold bottom and sides of tortilla over filling and roll up; secure with a toothpick., In a deep skillet or electric skillet, heat 1 in. of oil to 375°. Fry wraps in batches, seam side down, until golden brown, 2-3 minutes on each side. Drain on paper towels. Discard toothpicks before serving. Serve with sour cream and salsa if desired.

taco sauce

Steps:

  • Place the hot dogs on a microwave-safe plate and heat in the microwave oven on high for about 2-4 minutes, or until the dogs are heated throughout. Place each hot dog on a tortilla and spray liberally with cheese. Wrap the tortillas snugly around the hot dogs. Serve with taco sauce for dipping.

6 corn tortillas
6 hot dog hot dogs (any kind meat or vegetarian)
oil (for deep frying)
2 cups shredded monterey jack cheese
1 cup shredded sharp cheddar cheese
1/4 cup milk
1/2 cup chopped jalapeno

Steps:

  • Heat the tortillas in the microwave for about 1 minute to make them pliable and wrap in a paper towel or dish towel to keep them soft.
  • Heat enough oil in a medium frying pan to cover the bottom about 1/2 inch.
  • Wrap weiners in corn tortillas.
  • Fry the "pigs in a poncho" until tortillas start to turn light brown and place on a paper towel to drain.
  • To make the cheese sauce combine all ingredients in a microwave safe dish and heat until the sauce is melted and bubbly and stir.

2 teaspoons salt
2 teaspoons dried sage
1 teaspoon ground black pepper
⅛ teaspoon ground turmeric
⅛ teaspoon dried marjoram
2 pounds ground pork
1 tablespoon butter, or more as needed
8 eggs

Steps:

  • Stir salt, sage, black pepper, turmeric, and marjoram together in a bowl. Place pork in a separate bowl. Sprinkle salt mixture evenly over pork and stir to combine. Cover with plastic wrap and refrigerate for at least 8 hours or overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Butter eight 8-ounce ramekins.
  • Divide sausage mixture into 8 balls. Press each ball into a ramekin, creating a well in the center of each. Crack an egg into each sausage well.
  • Bake in the preheated oven until sausage is cooked through and eggs are set, 30 to 40 minutes.

1 (10 ounce) package refrigerated biscuit dough

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Wrap cheese around each frankfurter then the biscuit around that. Put on cookie sheet with the overlap of biscuit faced down, so you don't have to use tooth picks.
  • Bake in preheated oven until biscuits are brown, about 10 to 15 minutes.
