MUESLI COFFEE CAKE
Skip buttery, sugary streusel and try topping your coffee cake with crunchy honey-sweetened muesli instead. It's better for you and just as delicious.

Steps:
- Preheat oven to 350 degrees. Butter a 9 1/2-inch tube pan; dust with flour. Whisk together flour, baking powder, baking soda, and salt in a bowl. In another bowl, beat butter on medium speed until smooth, about 1 minute. Gradually beat in sugar until mixture is pale and fluffy, about 2 minutes. Add eggs one at a time, beating to combine after each, then beat in vanilla. Add flour mixture in 3 batches, alternating with 2 additions of buttermilk, beating until just combined (do not overmix).
- Combine muesli and honey in a small bowl. Spread half of batter in prepared pan. Top evenly with blueberries. Spread remaining batter on top, then crumble muesli mixture over batter, pressing gently to adhere. Bake until a tester inserted in middle comes out clean, about 1 hour, 10 minutes (if cake is browning too quickly, tent with foil). Cool completely, at least 1 1/2 hours, before removing from pan. Cake can be stored at room temperature up to 2 days.

Steps:
- Grease or spray the bottom of a 9x13 pan.
- Mix together first 8 ingredients.
- Pour 1/2 of the mixture in the 9x13 pan.
- Prepare the pumpkin exactly like the pumpkin pie recipe on the can of pumpkin except you only use 1/2 cup of evaporated milk Or just mix together the next 8 ingredients.
- Pour all of the pumpkin mixture over the batter in the 9x13 pan.
- Pour the remaining half of batter over the pumpkin (this step is a little difficult-it's ok that the pumpkin mixes in a little with the batter) Make the topping, put over batter.
- Bake in a 325 degree over for 50-60 minutes.
- Let cool completely.
- Enjoy.

- heat the oven to 180C. Melt the butter, sugar and honey together with the cinnamon and simmer for 2 minutes. stir in the muesli, pumpkin seeds and dried apricots.
- pack the mixture into a lined baking sheet, cover with foil and bake for 15 minutes. leave in the tin for 10 minutes, then loosen the edges and turn out. slice into squares and serve cold.

- To make this dessert recipe, start by preheating the oven to 180 degree Celsius, and prepare a cake tin by greasing it with refined oil.
