MRS. FIELDS PUMPKIN SPICE COOKIES
We have a Mrs. Field's cookie book that I love to try new recipes out of. I found pumpkin on sale and I had been itching to try this recipe, so I made it. They are a tasty little cookie, good with Chai tea! Enjoy!

Steps:
- Preheat oven to 300°F.
- Combine flour, soda, salt, and pumpkin pie spice in a medium bowl. Mix well with a wire whisk and set aside.
- In a large bowl, blend sugars with an electric mixer. Add the butter and beat to form a grainy mixture. Then add egg, pumpkin and vanilla. Beat at medium speed until light and fluffy.
- Add the flour mixture, raisins and walnuts. Blend at low speed until combined. DO NOT OVERMIX.
- Drop by rounded teaspoons onto ungreased cookie sheet.
- Bake about 20 minutes or until cookies are slightly brown around the edges.
ICED PUMPKIN COOKIES

Steps:
- Preheat oven to 350 degrees. Cream butter and sugar until fluffy. Add pumpkin, egg and vanilla and mix well. Combine flour, baking powder, baking soda, salt, cinnamon and nutmeg. Stir into butter mixture until well blended. Add nuts and raisins. Drop by teaspoonful onto parchment covered baking sheet, about 2 inches apart. Bake about 15 minutes, or until golden. Cool.
- Icing: Cream confectioners' sugar and butter. Add remaining ingredients and beat until smooth. (If icing is too thin, add more confectioners' sugar; if too thick, add more cream, orange juice or rum.) Drizzle over cookies.
MRS. MAC'S PUMPKIN COOKIES
Yummy, easy, frosted pumpkin cookies. Famous on the eastside of the Sierra :) Derived from a Betty Crocker Cookbook, but not in current ones.

Steps:
- Cream together pumpkin, butter, and sugar. Add flour and spices. Dough will be thick. Drop by teaspoons onto ungreased baking sheet. Bake for 11 minutes at 375 degrees.Remove and cool, then glaze.
- FROSTING: Melt butter, remove from heat (or keep on really low). Stir in powdered sugar and vanilla. It won't all mix in, but then add enough milk to make a frosting/glaze. Casually frost cooled cookies.

- Preheat the oven to 300 degrees F.
- In a small bowl, combine the flour, pumpkin pie spice, and baking soda.
- In a medium bowl with an electric mixer, cream butter and sugar. Beat in eggs, pumpkin and vanilla. Beat in the flour mixture until just combined. Stir in the white chocolate and pecans.
- Drop the dough by rounded tablespoons 2 inches apart onto an ungreased cookie sheet. Bake for 20 to 22 minutes, or until just set. Transfer to wire racks to cool. Note: A friend said she cooked them at 350 degrees for 12-15 minutes to shorten baking time, but I haven't tested that temp/time combo yet.

These cookies are made from a cake mix, and very moist and full of flavor.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease two baking sheets.
- Beat the pumpkin, eggs, applesauce, and vanilla together in a large mixing bowl. Stir in the cake mix, cinnamon, nutmeg, and cloves until well blended and creamy. Drop by spoonfuls on prepared baking sheets.
- Bake in preheated oven until tops are firm when lightly touched, 8 to 10 minutes. Cool on racks.

- Whisk the melted butter, brown sugar, and granulated sugar together in a medium bowl until no brown sugar lumps remain. Whisk in the vanilla and blotted pumpkin until smooth. Set aside.
- Whisk the flour, salt, baking powder, baking soda, cinnamon, and pumpkin pie spice together in a large bowl. Pour the wet ingredients into the dry ingredients and mix together with a large spoon or rubber spatula. The dough will be very soft. Fold in 1/2 cup semi-sweet chocolate chips. The chips may not stick to the dough because of the melted butter, but do your best to combine them. Cover the dough and chill for 30 minutes or up to 3 days. Chilling the dough is imperative for this recipe.
- Remove dough from the refrigerator. Preheat oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats.
- Roll the dough into balls, about 1.5 Tablespoons of dough each. Using the back of a spoon, slightly flatten the tops of the dough balls. (Without doing so, the cookies may not spread.)
