3/4 cup butter, softened
1 1/2 cups brown sugar, packed
3 eggs
1 teaspoon vanilla
3 cups all-purpose flour
2 1/4 teaspoons baking powder
1 teaspoon salt
3/4 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1 1/2 cups unsweetened applesauce
1/3 cup buttermilk
1/3 cup butter
2/3 cup brown sugar, packed
2 tablespoons corn syrup
2 tablespoons milk
1/2 teaspoon vanilla
1 1/2 cups icing sugar, sifted

Steps:

  • For the cake, grease a 9" x 13" cake pan; line the bottom with parchment paper.
  • Set aside.
  • In a large bowl, beat the butter with the brown sugar until fluffy; beat in the eggs, one at a time.
  • Beat in the vanilla.
  • In a separate bowl, whisk together the flour, baking powder, salt, baking soda, cinnamon, ginger, allspice and nutmeg.
  • Stir into the butter mixture alternately with the applesauce and buttermilk, making 3 additions of dry ingredients and 2 of wet.
  • Spread in the prepared pan.
  • Bake in the centre of a 350 degree F oven until the cake tester inserted in the centre comes out clean, about 35 minutes.
  • Let cool in the pan on a rack.
  • For the icing, melt the butter in a saucepan over medium heat.
  • Add the brown sugar and corn syrup; bring to a boil, stirring constantly.
  • Boil just until blended, about 1 minute.
  • Remove from the heat.
  • Using a wooden spoon, stir the milk and vanilla into the butter mixture.
  • Again using a wooden spoon, beat in the icing sugar until smooth and spreadable; let cool for 1 minute.
  • Spread over the top of the cake just to the edge, letting the icing drizzle over slightly.

3 1/2 cups sifted all-purpose flour
1 teaspoon baking soda
2 teaspoons nutmeg
1 teaspoon cinnamon
1/2 teaspoon clove
1 pinch salt
1 cup chopped walnuts
2 cups white raisins or 2 cups light raisins (can use dark if prefer)
1 cup butter, softened
1 cup sugar
2 eggs
1 (16 ounce) jar applesauce
1/4 cup butter, softened
1 tablespoon heavy cream or 1 tablespoon milk
1 lb confectioners' sugar
1 pinch salt
3 -4 tablespoons Bourbon (to taste)

Steps:

  • Sift flour with soda, spices, and salt.
  • Combine nuts and raisins in bowl and stir in 1/2 cup of the flour mixture.
  • Cream butter in another bowl until light and fluffy.
  • Beat in eggs one at a time, beating thoroughly after each.
  • Alternately add flour mixture and applesauce, beginning and ending with the flour.
  • Stir in raisin mixture.
  • Spoon into greased 10-inch tube or bundt pan.
  • Bake in preheated 350 degree oven for 1 hour and 20 minutes (or until cake tester inserted in center comes out clean).
  • Cool in pan for 15 minutes, then remove from pan and finish cooling on wire rack.
  • Spread with Frosting.
  • Cover until ready to serve.
  • Whiskey Frosting: Stir together butter and cream, beat in 1 cup of the sugar.
  • Blend in remaining sugar and the bourbon until proper spreading consistency.
  • Makes enough frosting to cover a 10-inch tube pan.

2 cups/9 ounces all-purpose flour
1 cup granulated sugar
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cloves
2 teaspoons baking soda
1/2 cup butter (melted)
2 cups applesauce
1 large egg (beaten)
1 cup raisins
1 cup walnuts (chopped)
For the Cream Cheese Frosting
8 ounces cream cheese (softened)
4 tablespoons butter (softened)
4 cups powdered sugar (sifted; about 1 pound)
1 to 2 tablespoons milk (as needed)
reminiscent teaspoon vanilla extract
Garnish: chopped walnuts

Steps:

  • Gather the ingredients.
  • Heat the oven to 350 F (180 C/Gas 4). Butter and flour a 9-inch-square baking pan.
  • Sift flour into a mixing bowl with the granulated sugar, salt, ground cinnamon, nutmeg, cloves, and baking soda. Use a whisk or spoon to blend the dry ingredients thoroughly.
  • Add the melted butter, applesauce, and the beaten egg and stir until the batter is well blended.
  • Fold in the raisins and 1 cup of chopped walnuts. Stir to blend.
  • Pour the batter into the prepared baking pan.
  • Bake the cake in the preheated oven for 45 to 50 minutes. A toothpick should come out clean when the cake is done.

2 pounds confectioners' sugar, plus more if needed
2/3 cup water, plus more if needed
1/2 cup plus 2 tablespoons meringue powder
Gel-paste food coloring

Steps:

  • Mix sugar, water, and meringue powder with a mixer on low speed until smooth, about 7 minutes. Icing should be the consistency of glue. (If icing is too thick, mix in a little more water. If icing is too thin, add more confectioners' sugar.) Add food coloring, 1 drop at a time, until desired color is achieved; if making more than 1 color, divide icing and work in batches. Use immediately, or refrigerate for up to 1 week. Stir before using.

I have changed a basic applesauce cake recipe that belonged to a lady from my hometown who, if living, would now be around 98 years old. Notice what she did with the applesauce and baking soda...that fascinated me and caused me to first make this cake. Now it is THE only applesauce cake I make. I use Robertson's basic mincemeat if I can find it. I sometimes add a dash of cardomon too. We like it best when using black walnuts. Makes a beautiful and more-ish cake!

3 cups applesauce, heated
3 teaspoons baking soda
3 cups sugar
1 cup shortening (Crisco)
4 eggs
3 1/2 cups flour
3 teaspoons nutmeg
3 teaspoons cinnamon
1/4 teaspoon clove
1/4 teaspoon allspice
1/2 teaspoon salt
1 cup walnuts, chopped
1 cup raisins
3/4 cup cherries
2 tablespoons mincemeat
2 tablespoons Jack Daniels Whiskey

Steps:

  • In a medium mixing bowl, add flour, salt, nutmeg, cinnamon, cloves, and all-spice. Add the nuts to coat with flour. Set aside.
  • In small bowl, soak raisins in Jack Daniels. Set aside.
  • In a large mixing bowl, cream the Crisco; slowly add sugar and cream together until light and fluffy.
  • To the heated applesauce, now add 3 teaspoons baking soda -- stir -- add to creamed mixture. Beat with mixer on medium until blended.
  • Add eggs and beat well.
  • Slowly add the dry flour, spice, and nut mixture, blending well.
  • Add the soaked raisins, mincemeat, and cherries. Stirl to incorporate all ingredients.
  • Pour batter into greaqsed and floured tube pan.
  • Bake in preheated 300 degreen oven for 1 hour and 15 minutes. Ovens vary so please begin to check after 55 minutes. Note: The thickness of your pan also influences the baking time.

Royal icing is best for decorating cookies, since it dries to a plaster-hard finish. This recipe yields enough to cover about 100 three- to four-inch cookies. To ice all those in this story, you will need to make two batches of icing; increasing the recipe by half won't work well.

Steps:

  • In the bowl of an electric mixer fitted with the paddle attachment, combine sugar and meringue powder. Mixing on low speed, add a scant 1/2 cup water. For a thinner consistency, usually used for flooding, add more water. A thicker consistency is generally used for outlining and adding details. Mix until icing holds a ribbonlike trail on the surface of the mixture for 5 seconds when you raise the paddle.
