- Position a rack in the middle of the oven and heat to 350.
- In a small bowl, mix the sugar with the chopped walnuts.
- Generously butter a large bundt pan and coat with the nuts and sugar, pressing the nuts with your fingers to help them stick. The pan sides will be coated and some of the nuts will fall to the bottom, that's fine.
- In a medium bowl, whisk the flour, baking powder, baking soda and salt until well blended.
- With an electric mixer, beat the butter, sugar, bananas and vanilla until well blended and the bananas are almost smooth, scraping down the sides of the bowl as needed.
- Add the eggs one at a time, beating until just incorporated.
- Remove the bowl from the mixer. With a rubber spatula alternately add half the flour mixture, all the buttermilk and the rest of the flour mixture, stirring until each addition is just blended.
- Spoon half the batter into a medium bowl and gently stir in the melted chocolate until just combined.
- With a large spoon, alternately add a scoopful of each batter to the prepared pan, working around the pan until all the batter is used.
- Gently run a knife or the tip of a rubber spatula through the batter, once clockwise and once counterclockwise, to slightly swirl the batters.
- Gently tap the pan on the counters to settle the ingredients.
- Bake the cake until a pick inserted in the batter comes out with just a few crumbs sticking to it, about 40 minutes.
- Let the cake cool in the pan on a wire rack for 15 minutes*.
- Gently tap the sides of the pan on the counter to loosen the cake.
- Invert the pan onto a rack, lift off the pan and let the cake cool completely.
- *Be sure to follow the time guidelines for unmolding the cake. If you wait too long, it will stick to the pan; take it out too early and it might break into chunks.

BANANAS FOSTER UPSIDE-DOWN CAKE

- Preheat your oven to 350 degrees F.
- For the topping: Melt together the brown sugar, butter, cinnamon, salt and allspice over medium-high heat in a 9- or 10-inch cast-iron skillet, stirring until the sugar has dissolved. Bring to a bubble and let the syrup cook until thick, about 5 minutes. Remove the pan from the heat and carefully stir in the dark rum (see Cook's Note) and vanilla, then return the pan to the heat for 1 minute. Arrange the banana slices cut side down on top of the syrup.
- For the cake: Whisk together the flour, baking powder, salt, baking soda and nutmeg in a large bowl.
- Beat together the brown sugar, granulated sugar and butter in a stand mixer or electric hand mixer until light and fluffy, about 2 minutes. Add the eggs, one at a time, beating well and scraping the bowl down after each addition. Beat in the mashed bananas and vanilla until incorporated. Beat in the dry ingredients, alternating with the buttermilk in two additions, scraping down the bowl to ensure all the dry ingredients are incorporated.
- Carefully, spread the batter over the top of the bananas in the skillet. Place a baking sheet on the bottom rack of the oven to catch any spillage! Bake until a tester comes out with some moist crumbs sticking to it, 45 to 50 minutes. Let cool for 5 minutes before running a paring knife along the sides and inverting onto a serving platter while still warm.

- Cream butter and sugar together until light and fluffy.
- Add eggs, beating in one at a time.
- Sift over flour and baking powder and fold into butter mixture.
- Divide the mixture in half. Place one half in a separate bowl and mix in vanilla. Sift cocoa over other half of mixture and fold inches.
- Place alternate tablespoon of mixture into a baking paper-lined 20cm cake tin.
- Swirl the mixtures together with wooden skewer.
- Bake at 180 C for 35 - 40 minutes or until cake springs back when lightly touched.
- Cool cake a little. Turn out onto a cake rack and ice when cold.
- Icing: Melt butter and chocolate over a low heat, stir in icing sugar.
- Add water and mix to combine. Spread over cake when cool.
- If you wish to decorate the cake, use a potato peeler and peel white chocolate into curls and sprinkle over icing.
SECRET OFFICIAL MRS. FIELD'S CHOCOLATE CHIP COOKIE (HONEST!)
This is the real recipe... I promise! I got it from a secret source and I would like to thank him/her for giving it to me. It's INCREDIBLE!! Crispy on the outside and chewy in the inside. To achieve this fantastic cookie, just follow the recipe accurately by measuring (not using the cups).Oh, and don't forget to review how your cookies went! PS:(Honest feedback so maybe I can improve it? haha...) How to soften butter. Cut the stick (or sticks) or butter lengthwise into halves. This will help the butter to soften quicker and evenly. Wait approximately 10 minutes (depending upon how hot your kitchen is). Then, with a finger, press gently on the butter. If it leaves an indent in the butter, the butter is soft enough to start whipping "creaming" it. How to brown butter Start melting butter over medium heat. Use a pan with a light-colored bottom so you can keep track of the color. Swirl the pan occasionally to be sure the butter is cooking evenly. As the butter melts, it will begin to foam. The color will progress from lemony-yellow to golden-tan to, finally, a toasty-brown. Once you smell that nutty aroma, take the pan off the heat and transfer the browned butter into a heat-proof bowl to cool.

- Add the eggs, vanilla, milk and water into butter mixture until fully incorporated.
- Whisk for about 30 seconds, until mixture is smooth and there are no lumps of sugar etc.
- Let the mixture stand for 3 minutes, then whisk for another 30 seconds.
- Repeat process of resting and whisking 2 more times until mixture is thick, smooth and shiny.
- Then mix in flour, baking soda, and salt; then chocolate chips and nuts (if using) until combined.
- Chill in a refrigerator about a day.
- Thaw the chilled dough for about 1 hour before baking. (Optional).
- Set dough on an ungreased lightweight baking sheet and flatten.
- Cook at 163 degrees C for about 15 minutes (estimate).

- Cookies will be very soft when taken from oven. Carefully lift with spatula and place on rack to cool. Serve! :).

This is an original recipe from Debbie Fields, which I found and posted in a Recipezaar forum in response to a request. It prompted such positive replies that I thought I should post the recipe for others who might be searching for it, too. (Servings are calculated at 3 cookies each.)

- Preheat oven to 300°F
- In a medium bowl, combine four, soda and salt. Mix well and set aside.
- In a large bowl with an electric mixer, blend sugars at medium speed. Add butter and mix to form a grainy paste, scraping down the sides of the bowl. Add egg, liqueur and banana, and beat at medium speed until smooth. Add flour mixture, 1 cup of the chocolate chips and walnuts, and blend at low speed until just combined.
- Drop by rounded tablespoons onto ungreased cookie sheets, 2 inches apart.
- Sprinkle cookies with chocolate chips, 6 to 8 per cookie.
- Bake 25-27 minutes until cookie edges begin to brown.
- Transfer immediately to a cool surface.
MRS. FIELDS CARROT CAKE

- Preheat oven to 350-degrees.
- Grease and flour two 9-inch cake pans.
- In a large bowl stir together flour, baking soda, salt, cinnamon and sugars. Add butter, one egg and vanilla; blend with electric mixer on low speed.
- Increase speed to medium and beat for 2 minutes. Scrape down sides of bowl. And remaining eggs, one at a time, beating 30 seconds after each addition. Add carrots, pineapple, raisins and walnuts. Blend on low until thoroughly combined. Pour batter into prepared pans and smooth the surface with a rubber spatula. Bake in center of oven for 60-70 minutes. Toothpick inserted into center should come out clean. Cool in pans for 10 minutes. Then invert cakes on rack and cool to room temperature.
- TO PREPARE ICING: In a medium bowl with electic mixer on medium speed, beat cream cheese and butter until smooth; add lemon juice and vanilla; beat until combined. Add sugar gradually, mixing on low until smooth.
- TO ICE THE CARROT CAKE: Place one layer on a cake platter, and with a metal spatula spread icing over the top to form a thin filling. Place second layer over the first, rounded side up. Coat the top and sides of the cake evenly with remaining icing. Refrigerate 1 hour to set icing.
