BREAD-BOWL MOZZARELLA DIP

- Preheat the oven to 400 degrees F. Combine the mozzarella, feta and butter in a large bowl. Slice off the top 2 inches of the bread boule and hollow it out, reserving the top and insides for dipping. Fill the bread bowl with the cheese mixture. Transfer to a baking dish, cover loosely with foil and bake 20 minutes.
- Uncover and crack the egg on top of the cheese mixture. Continue baking, uncovered, until the egg white is almost set, 12 to 15 minutes, then broil until just set, 1 to 2 more minutes.
- Remove from the oven and sprinkle with the red pepper flakes. Just before serving, break the egg yolk with a fork and beat into the melted cheese.
- Serve with the bread trimmings or crudites.
TOMATO-MOZZARELLA BREAD SALAD

- Soak the bread quickly in a bowl of cold water, just enough to moisten it. Squeeze it to remove excess moisture.
- Wash, trim and chop tomatoes into chunks. Place in a large serving bowl.
- Cut the red onion into matchstick lengths; add to bowl.
- Cut mozzarella into small cubes and add to bowl.
- Pit olives and add to bowl.
- Wash, dry and cut basil into strips and add to bowl.
- Break bread into bite-size pieces and add to bowl.
- Sprinkle with oil and vinegar; season with salt and pepper, and mix thoroughly.

- 1. Preheat oven (or toaster oven) to 400 degrees F.
- 2. Cut tomatoes into thick slices, and place them on a foil-lined baking sheet.
- 4. Salt and pepper lightly, add basil (as much or little as you like) and cook tomatoes for 10 minutes, or until tender but not mushy.
- 5. Turn off oven. Top tomatoes with cheese and drizzle with olive oil. Allow to sit in hot oven just long enough for the cheese to melt.

Steps:
- To prepare, slice tomatoes and french bread.
- Toast the slices of french bread in the toaster.
- Place the toasted french bread pieces on aluminum foil or baking pan.
- Put one layer of tomato slices on each piece of french bread (usually 1 1/2 to 2 tomato slices for each piece of toast).
- Sprinkle mozzarella cheese on top of each piece.
- Bake in toaster oven until cheese is melted.
- Take out of oven and drizzle a small amount of olive oil and balsamic vinegar on top.
- Sprinkle Italian seasoning and salt and pepper to taste, on top.
- Enjoy!

- Spread the bread with the tomato pizza or pasta sauce. Scatter torn mozzarella and a few torn basil leaves over one slice, then add any meat or veggies you like - shredded chicken or ham, pepperoni, sweetcorn, onions or roasted peppers all work well. Top with the other slice of bread, then butter the outsides of the sandwich. Cook in a hot pan, weighed down by another heavy pan, for 2-3 mins on each side until the outside is crisp and the cheese has melted. Alternatively, cook in a sandwich toaster. Top with a few whole basil leaves and serve.
