CREAMY MUSHROOM MEATLOAF



Creamy Mushroom Meatloaf image

This technique keeps the meatloaf moist, while fortifying the sauce with its flavorful drippings. Regardless, this technique will work with just about any meatloaf recipe out there.

¼ cup butter
2 cups shiitake mushrooms, sliced
1 pinch salt
1 sprig fresh rosemary, chopped
3 tablespoons all-purpose flour
2 ½ cups beef broth
salt and pepper to taste
½ cup heavy cream
1 (2 1/2 pound) uncooked prepared beef, veal and pork meatloaf

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Melt butter in an oven-safe skillet over medium-high heat. Stir in mushrooms and a pinch of salt; cook and stir until mushrooms begin to brown, about 5 minutes.
  • Stir in fresh rosemary. Add flour and stir to coat the mushrooms; cook and stir for about 3 minutes.
  • Whisk in beef broth, 1/2 cup at a time, whisking constantly to prevent lumps.
  • Turn heat to high and bring the sauce to a simmer. Simmer a few minutes until sauce starts to thicken. Season with salt and pepper to taste.
  • Remove from heat and stir in heavy cream.
  • Slide prepared meatloaf into the sauce. Spoon sauce over the top of the meatloaf.
  • Bake in the preheated oven until no longer pink in the center, about 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Remove pan from the oven and gently remove meatloaf to a serving platter.
  • Skim off any extra fat from the surface of the sauce.
  • Bring the sauce to a boil over medium-high heat to reduce until thick, about 5 minutes.

2 lb. lean ground beef
2 cups breadcrumbs
1 lb. portobello mushrooms
1/2 yellow onion, diced
2 tablespoons garlic, minced
2 large eggs, beaten
4 teaspoons Worcestershire sauce
1 tablespoon Italian seasoning
Salt and pepper to taste

Steps:

  • Pulse the onions, garlic and mushrooms in a food processor until finely chopped.
  • Combine ground beef, breadcrumbs, mushroom mixture, eggs and seasonings and mix thoroughly.
  • Shape it into a loaf with your hands and place it on a greased baking sheet.
  • Bake at 350°F for 45 minutes or until a meat thermometer reads 160°F in the center of the meatloaf.
  • Let it stand for 10 minutes before slicing.
  • Dish and serve hot with gravy of your choice.
  • Enjoy!

1 lb button mushrooms (450 g)
½ white onion
3 cloves garlic
1 12-oz package Impossible Ground Burger "Meat" (340 g)
1 cup breadcrumbs (100 g)
1 Tbsp Italian seasoning
1 Tbsp vegan Worchestire sauce (15 mL)
½ tsp salt
2 large eggs (whisked)
½ cup ketchup (100 g)
1 Tbsp brown sugar
1 Tbsp mustard

Steps:

  • Blitz: Preheat oven to 350°F (186°C). Add mushrooms, onion, and garlic to a food processor. Blitz until roughly broken down (you may need to work in batches, depending on the size of your food processor).
  • Mix: Stir together mushroom mixture and all remaining Meatloaf ingredients.
  • Topping: In a separate bowl, stir together all Ketchup Topping ingredients.
  • Assemble: Line a loaf pan (9x5 inch) with parchment paper. Spoon mushroom meatloaf mixture into the pan, pressing to fill any gaps or empty corners. Spoon half of the Ketchup Topping onto the meatloaf, spreading it evenly over the whole top.
  • Bake: Bake, uncovered, for 30 minutes. Remove from oven, spread the remaining ketchup over the meatloaf, then bake for another 30 minutes. Let cool slightly before cutting into slices and serving.

2 large eggs, lightly beaten
1 cup saltine cracker crumbs
1 cup whole milk

1 can (8 ounce) pizza sauce
3 slices part-skim mozzarella cheese, halved
Green pepper rings, optional
Sliced mushrooms, optional
2 tablespoons butter, optional
Chopped fresh parsley, optional

Steps:

  • Combine beef, eggs, crumbs, milk, Parmesan cheese, onion, salt and oregano, mixing lightly but thoroughly. Shape into a loaf and place in a greased 9x5-in. loaf pan. ½ pound fresh mushrooms, all minced except for 6
¾ cup fresh bread crumbs
½ cup minced onion
½ cup ketchup
2 eggs, beaten
1 ½ teaspoons salt
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large mixing bowl, combine ground meat, minced mushrooms, bread crumbs, onion, ketchup, eggs, and salt and pepper. Mix well. Spread 1/2 of the mixture into the bottom of a loaf pan. Arrange 6 whole mushrooms stem down into meat. Top with rest of meat, patting to combine both halves.
  • Bake for 1 hour and 45 minutes, or until done. Internal temperature should measure 160 degrees F (70 degrees C) when done.

1 medium onion, chopped
1 (8 ounce) can tomato sauce, divided
½ cup bread crumbs
1 egg
2 cloves garlic, minced
1 teaspoon dried oregano, divided
1 teaspoon salt
⅛ teaspoon ground black pepper
1 ½ cups shredded mozzarella cheese
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix beef, onion, 1/2 of the tomato sauce, bread crumbs, egg, garlic, 1/2 teaspoon oregano, salt, and pepper in a large bowl. Pat into a 1/2-inch-thick rectangle on a sheet of waxed paper. Sprinkle mozzarella cheese on top.
  • Lift up the short side of the waxed paper to start rolling up the meatloaf. Roll tightly, peeling back paper as you go. Seal edges in place. Transfer meatloaf to a loaf pan.
  • Bake in the preheated oven for 1 hour. Combine remaining tomato sauce and 1/2 teaspoon oregano; pour over meatloaf and sprinkle with Parmesan cheese. Bake until cheese is melted, about 15 minutes more. Let stand for 5 minutes before serving.

2 slices white bread
1 1/2 lbs ground sirloin
1 1/2 cups finely chopped button mushrooms
1 cup shredded part-skim mozzarella cheese
1/3 cup finely chopped pepperoni
1 teaspoon dried oregano
1 teaspoon garlic powder or 2 finely minced garlic cloves
3/4 teaspoon salt
2 large eggs, lightly beaten
2 tablespoons ketchup

Steps:

  • Tear bread into large pieces and blend in a food processor until they form fine crumbs. Combine crumbs, sirloin, mushrooms, mozzarella, pepperoni, oregano, garlic, salt and eggs in a large bowl and mix gently with your hands to combine. Form mixture into a 9-inch-by-6-inch loaf. Place in slow cooker.
  • Brush meatloaf with ketchup, cover, and cook on low until meat is cooked through, about 5 hours.

4 slices bread (toasted)
2 eggs, slightly beaten
1 teaspoon minced onion

1 (4 ounce) can mushroom pieces, -drained

Steps:

  • Combine meat, toast, egg, minced onion and oregano with 3/4 c tomato sauce in large mixing bowl. Mix well.
  • Pat mixture in a 9X13 pan lined with wax paper.
  • Sprinkle cheese and mushrooms in the middle.
  • Roll up to form the meatloaf. Make sure to seal the seam as tight as you can to prevent the cheese from running out when cooking.
