This sweet and savory salad makes a great appetizer or fancy side dish with grilled meat. You need to plan ahead, as the mozzarella needs to marinate for a couple of hours.

1 (8 ounce) package buffalo mozzarella, thinly sliced
2 tablespoons olive oil
1 lemon, juiced
1 pinch salt and freshly ground black pepper to taste
1 clove garlic, crushed
8 small fresh black figs, halved lengthwise
4 leaves fresh mint, finely chopped

Steps:

  • Combine mozzarella cheese, olive oil, lemon juice, garlic, salt, and pepper in a resealable plastic bag. Seal and refrigerate for 2 hours. Turn mozzarella a few times in the marinade.
  • Arrange mozzarella and figs on a serving plate and drizzle with marinade. Sprinkle fresh mint on top.

10 tablespoons balsamic vinegar (Aceto Balsamico di Modena IGP)20 mature figs2 pieces of fresh vegetarian mozzarella (or mozzarella di bufala)freshly ground black pepper

Steps:

  • Instructions Put the balsamic vinegar in a small saucepan. Boil until reduced by half, about two minutes. Allow to cool. Wash and dry the figs. Cut a cross in the top of each fig to about halfway down. Using your forefingers and thumbs, press on the outside of the fig so that it opens up at the top. Arrange five figs each on four serving plates in the shape of a cross. Cut the mozzarellas into quarters and then cut each quarter in half so that you have 16 pieces. Place four pieces of mozzarella on each plate between the figs and grind black pepper over them.5Using a teaspoon, drizzle some of the balsamic vinegar in a cross shape across the figs and mozzarella. This sourish marinade works really well with sweet figs and creamy mozarella - serve as a main or starter

Number Of Ingredients 8

8 ripe figs , stalks trimmed
4 tbsp balsamic vinegar
2 tbsp extra-virgin olive oil , plus extra for drizzling
finely grated zest and juice of 1 lemon
1 tbsp chopped fresh thyme
handful of fresh mint leaves
2 x packs mozzarella
50g bag wild rocket

Steps:

  • Cut each fig lengthways into four wedges. Make a marinade by whisking the vinegar, oil and lemon juice with salt and pepper to taste.
  • Stand the fig wedges up in the middle of a large shallow serving dish, keeping them close together. Scatter the lemon zest and thyme on top, then drizzle with the marinade. Leave to stand at room temperature for 30 minutes.
  • Roughly chop the mint. Drain and slice the mozzarella, toss with half the mint and season with salt and pepper to taste.
  • To serve, arrange the mozzarella and mint mixture round the figs, scatter with lightly torn rocket leaves and the remaining mint, and drizzle with a little olive oil.

  • Slice the mozzarella and figs.

2 medium globe eggplants
Kosher salt and freshly cracked black pepper
Olive oil, for drizzling
3 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1 teaspoon honey
2 cups arugula
2 cups fresh mozzarella large dice (you can tear instead of dice)
1 small red onion, thinly sliced

Steps:

  • Set up a grill for cooking with direct and indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
  • Peel the eggplants and slice into 1/2-inch-thick rings. Sprinkle with salt and pepper and drizzle with olive oil on both sides. Place on the direct-heat side of the grill and char, cooking until softened, about 2 minutes per side. Remove to a cutting board and cut each slice into quarters.
  • In a small bowl, whisk together the red wine vinegar, Dijon and honey. Drizzle in 1/2 cup of olive oil and season with salt and pepper. In a large bowl, combine the arugula, mozzarella, onion and eggplant. Dress with the vinaigrette and serve!

It's fig time here in SW France, and I have been busy making up new fig recipes, as well as making jams, pickles, alcohol steeped figs and chutneys with all our harvest! This was thrown together one Sunday afternoon as a starter for a lazy Al Fresco Sunday lunch - and since then I have had requests for it nearly every day! If you are lucky enough to have a fig tree, try and garnish the individual plates with a couple of washed leaves - it really adds a certain panache to the appearance of the salad! I have made this with Chevre - Goat's Cheese as well as Feta, and it was just as delicious. Amounts given are for a starter for 6 people - and assuming that the figs are medium to large in size; please adjust the quantities if necessary. Toasting the walnuts beforehand is well worth the effort, and if you toast more than is needed, any excess can be stored in an airtight container.

24 -30 fresh black figs, medium to large
6 -9 ounces feta cheese or 6 -9 ounces chevre cheese, Goat's Cheese
9 ounces walnut halves, roughly chopped
1 teaspoon Dijon mustard
6 tablespoons walnut oil
1 tablespoon white wine vinegar
salt
black pepper
fresh fig leaf (to garnish)

Steps:

  • Toasted Walnuts:.
  • In a large, heavy frying pan, over a high heat, toast the walnuts for 2 to 3 minutes, stirring frequently. Remove and set aside to cool.
  • Vinaigrette:.
  • Put the vinegar and a good pinch of salt and black pepper in a screw-top jar and shake until the salt has dissolved. Add the mustard and walnut oil, then shake again to emulsify - the emulsion will hold for ten minutes or so, but give it another jiggle just before you use it to dress the salad.
  • Salad:.
  • Wipe the fresh figs gently, and cut them in half. Arrange them on a large platter, OR on individual plates - allowing 4 to 5 fresh figs per person, depending on the size.
  • Sprinkle 1 to 1 1/2 ozs of crumbled feta or goat's cheese per person, over the top of the fresh figs.
  • Scatter the chopped,toasted walnuts over the fig salad.
  • Just before serving, drizzle the vinaigrette over the salad, and garnish each plate with 1 - 2 fresh fig leaves if available.
  • Serve with crusty bread and butter.
  • Can also be served as a dessert/cheese course combined.

200g fine green bean , trimmed
6 small figs , quartered
1 shallot , thinly sliced
x ball mozzarella , drained and ripped into chunks
50g hazelnut , toasted and chopped
small handful basil leaves, torn
3 tbsp balsamic vinegar
1 tbsp fig jam or relish
3 tbsp extra-virgin olive oil

Steps:

  • In a large saucepan of salted water, blanch the beans for 2-3 mins. Drain, rinse in cold water, then drain on kitchen paper. Arrange on a platter. Top with the figs, shallots, mozzarella, hazelnuts and basil.
  • In a small bowl or jam jar with fitted lid, add the vinegar, fig jam, olive oil and some seasoning. Shake well and pour over salad just before serving.
