RYE CRUSTED STRIPED BASS WITH LOBSTER CRABMEAT MOUSSE, SALSIFY PUREE AND ZINFANDEL SAUCE



Rye Crusted Striped Bass with Lobster Crabmeat Mousse, Salsify Puree and Zinfandel Sauce image

6 slices rye bread, crusts removed
6 (3-ounce) fillets striped bass
9 ounces Lobster Crabmeat Mousse, recipe follows
2 ounces clarified butter
9 ounces Salsify Puree, recipe follows
6 ounces Zinfandel Sauce, recipe follows
1 egg white
4 ounces heavy cream
6 ounces fresh lobster meat
9 ounces jumbo lump crabmeat, picked over
1/4 teaspoon salt
1/4 teaspoon freshly ground white pepper
1 tablespoon chopped fresh tarragon leaves
1 pound salsify, peeled and cut into pieces
1 medium potato, peeled and cut into pieces
1 quart milk
Kosher salt and freshly ground black pepper
Freshly ground nutmeg, for seasoning
1-ounce butter
White truffle oil, for drizzling
1 cup Zinfandel
1 cup port
1/4 cup chopped shallots
2 sprigs fresh thyme
1 sprig fresh rosemary
1 teaspoon cracked peppercorns
8 ounces (2 sticks) cold butter, cut into small cubes

Steps:

  • Preheat oven to 450 degrees F.
  • Use a rolling pin to roll each slice of rye bread as thin as possible.
  • Top each portion of striped bass with about 1 1/2 ounces of Lobster Crabmeat Mousse. Place in an oiled pan. Cover with rye bread. Brush with clarified butter. Bake until fish is cooked through and crust is browned and crisp, about 15 to 20 minutes.
  • Serve with Salsify Puree and Zinfandel Sauce.
  • Beat egg white to soft peaks. Beat cream to soft peaks, fold together. Fold in lobster and crab. Fold in salt, pepper and tarragon. Refrigerate until ready to serve.
  • In a large saucepan, combine salsify, potato and milk. Add salt, to taste. Bring to a simmer and cook until tender, about 30 to 45 minutes.
  • Preheat oven to 350 degrees F.
  • Drain, reserving liquid. Place vegetables on a sheet pan and place in the oven to dry, about 4 to 5 minutes. Press through a ricer. Mix in a little of the reserved milk, if needed, to form a smooth puree. Season with salt, pepper and nutmeg. Stir in butter. Drizzle in white truffle oil to taste. Keep warm until ready to serve.
  • In a saucepan, combine, wine, port, shallots, herbs and peppercorns. Bring to a boil and reduce by one-third. Strain, return to the saucepan and over low heat, whisk in butter, a few pieces at a time. Keep warm.

1 pound fresh crab meat, preferably lump
1 pound skinless, boneless white fish such as monkfish, striped bass and so on
1/8 teaspoon cayenne pepper
1 egg
Salt to taste, if desired
Freshly ground pepper to taste
1/8 teaspoon freshly grated nutmeg
1 cup heavy cream
Butter for greasing a mold
White butter sauce (see recipe)

Steps:

  • Pick over the crab meat. Remove and discard any pieces of shell or cartilage.
  • Cut the fish into cubes and add them to the container of a food processor or electric blender. Add the cayenne, egg, salt, pepper and nutmeg. Start blending while gradually adding the cream. Blend until smooth.
  • Add one cup of the crab meat and continue blending until the mixture is smooth.
  • Spoon and scrape the mixture into a mixing bowl. Add the remaining crab meat and carefully fold it into the mousse mixture.
  • Butter a six-cup ring mold. Fill the mold with the crab mixture and smooth over the top.
  • Bring water to the boil in the bottom of a steamer. Place the ring mold on a steamer rack and place the rack over the boiling water. Cover closely and steam 10 minutes or until the internal temperature registers 160 degrees. Let the mousse stand on a rack for five minutes.
  • Unmold the mousse onto a round serving dish. Pour off or wipe away any liquid that accumulates around the mousse.
  • Slice the mousse into individual serving portions and serve with a little white butter sauce spooned over each portion.

1/2 cup finely chopped green onion
6 ounces cream cheese
1 cup mayonnaise
1 (1/4 ounce) package unflavored gelatin
5 ounces crabmeat
1/4 cup cold water
1/4 teaspoon curry powder
1/2 cup finely chopped celery

Steps:

  • Heat mushroom soup and cream cheese, stir until smooth.
  • Add gelatin to cold water and soften 5 minutes.
  • Add gelatin mixture to soup mixture.
  • Add celery, onion, mayonnaise, crabmeat and curry powder, mixing well.
  • Pour into 4-cup cold mold (oil or spray mold with Pam before).
  • Chill overnight.
  • Unmold onto serving plate and decorate with sprigs of parsley.
  • Serve with crackers.

3 medium-size English cucumbers
Kosher salt
One 8-ounce block cream cheese, at room temperature
1/2 cup mayonnaise, at room temperature (no more than 2 hours)
1 stalk celery, finely diced (1/2 cup)
1/2 red bell pepper, finely diced (3/4 cup)
1/2 yellow bell pepper, finely diced (3/4 cup)
1/2 pound lump crabmeat, picked through to remove any shells
1 1/2 teaspoons seafood seasoning (I like Old Bay)
1 teaspoon lemon zest
1 teaspoon fresh lemon juice
1 tablespoon chopped fresh dill, plus more for garnish

Steps:

  • Cut the cucumbers in half lengthwise. Use a spoon to scrape out the seeds. Cut each cucumber half crosswise into 4 pieces and place on a paper towel-lined baking sheet. Sprinkle with salt. Let stand while making the filling.
  • Beat the cream cheese and mayonnaise in a medium bowl until smooth. Fold in the celery, bell peppers, crabmeat, seafood seasoning, lemon zest, lemon juice and chopped dill.
  • Pat the cucumbers dry (to remove the liquid and salt). Spoon the crab salad into the hollowed cucumbers. Garnish with more dill. Refrigerate until ready to serve.

  • In a small microwave-safe bowl, sprinkle gelatin over cold water; let stand for 1 minute. Microwave, uncovered, on high for 20 seconds. Stir; let stand for 1 minute or until gelatin is completely dissolved., In a large saucepan, combine the soup, cream cheese, mayonnaise and gelatin. Cook and stir over medium heat for 5-7 minutes or until smooth. Remove from the heat; stir in the crab, celery and onions., Transfer to a 5-cup ring mold coated with cooking spray. Number Of Ingredients 14

4 unblemished, ripe avocados, about 2 pounds
2 tablespoons lemon juice
1 envelope plain, unflavored gelatin
3 tablespoons white-wine vinegar
1 cup mayonnaise, preferably homemade
Salt to taste, if desired
Freshly ground pepper to taste
1/4 teaspoon Tabasco sauce
1 tablespoon Dijon-style mustard
1 teaspoon anchovy paste
1 pound lump crab meat
2 teaspoons corn, peanut or vegetable oil
Tarragon leaves for garnish, optional
Tarragon sauce (see recipe)

Steps:

  • Split the avocados in half and remove and discard the pits. Cut away and discard the skins. Cut the flesh into cubes and put them in a bowl. Add the lemon juice and stir to coat the pieces so that they do not discolor. Set aside.
  • In a small bowl, combine the gelatin and vinegar. When the gelatin is softened, scrape it onto the avocado.
  • Put the avocado mixture and mayonnaise into the container of a food processor or electric blender and blend thoroughly. There should be about three cups.
  • Scrape the mixture into a mixing bowl and add the salt, pepper, Tabasco sauce, mustard and anchovy paste. Blend thoroughly.
  • Pick over the crab meat gently and carefully to remove all trace of shell and cartilage. Leave the lumps as large as possible. Add them to the avocado mixture and fold the crab meat in thoroughly.
  • Brush a five-cup ring or decorative mold lightly on the inside with oil. Wipe out any excess oil.
  • Pour and scrape the avocado and crab mixture into the mold. Smooth over the top. Cover and refrigerate overnight. Unmold and garnish the top, if desired, with a few tarragon leaves. Serve with tarragon sauce (see recipe).

1/2 lb cooked crab meat, flaked (can sub imitation crab meat)
1 (3 ounce) package cream cheese, cut up and softened
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
1 tablespoon shallot, minced
2 teaspoons prepared horseradish
1/2 teaspoon ground cayenne pepper
1/4 teaspoon salt (optional)
4 medium cucumbers (each approx. 8 inches long or use English cucumber)

Steps:

  • Remove 2 tablespoons crab meat for garnish, if desired. Place the remaining crab, cream cheese, mayonnaise, mustard, shallots, horseradish, cayenne pepper and salt (if using salt) in a food processor bowl; cover and process until smooth, scraping sides of bowl. Spoon mixture into a pastry bag fitted with a large star tip.
  • Using a zester or vegetable peeler, peel the cucumbers, leaving some strips of skin. Cut into 3/4 inch thick slices (or halve 2 cucumbers lengthwise and slice 3/4 inch thick). With a melon baller, scoop out the center of each slice to create a cup. Pipe mousse into cucumber cups. Garnish each with reserved crab meat, if desired. Cover and chill up to 2 hours before serving.

1 egg yolk
1 tbsp Dijon mustard
200ml olive oil (not extra virgin)
zest and juice 1 lemon
300g freshly picked white crabmeat
2 thick slices white bread
large handful flat-leaf parsley leaves
large handful tarragon sprigs
large handful chervil
1 shallot , sliced into thin rings
1 tbsp small caper in brine, drained
1 tbsp extra-virgin olive oil , plus extra to serve
1 tsp red wine vinegar , plus extra to serve

Steps:

  • To make the crab mayonnaise, put the egg yolk and mustard in a medium bowl and whisk together. Add a drop of the oil and whisk until completely combined. Gradually add the oil, a drop at a time, then in a thin trickle, whisking continuously until you have a thick mayonnaise. Whisk in the lemon zest and juice, stir in the crabmeat and season to taste. This mix can be made a few hours ahead and kept in the fridge.
  • For the Melba toast, heat the grill to high. Place the bread on a baking sheet and toast on both sides until lightly browned. Cut the crusts off the toast, then carefully cut through the middle of each slice horizontally to give you 2 thin slices. Cut each of these into 4 triangles. Put the triangles, untoasted-side up, on the baking sheet and place back under the grill to brown - if they curl up slightly, all the better. The toast can be made a day ahead and kept in an airtight container.
  • Assemble the herb salad just before serving: put all the herbs in a bowl, add the shallot and capers, then dress with olive oil and vinegar. Toss everything together until well mixed and you're ready to serve. See our step-by-step guide to plating up..
