10-Min Mediterranean Tuna Salad (Bold & Healthy) image

Healthy tuna salad without mayo, prepared the Mediterranean way with lots of crunchy vegetables, fresh herbs, and a zesty Dijon dressing! I like using wild-caught Albacore or Yellowfin tuna, and I tend to choose tuna packed in water. To change up this easy tuna salad, add some chopped pink pickles, diced carrots, chopped bell peppers, or different fresh herbs. Serve healthy tuna salad in a pita sandwich, in lettuce wraps, or as an appetizer over sweet roasted tomatoes.

2 1/2 teaspoon good quality Dijon mustard
Zest of 1 lime
1 1/2 limes, (juice of)
1/3 cup extra virgin olive oil
1/2 tsp sumac
Pinch of kosher salt and black pepper
1/2 teaspoon crushed red pepper flakes, (optional)
3 cans tuna, (5 ounces each (use quality tuna of your choice))
2 1/2 celery stalks, (chopped)
1/2 English cucumber, (chopped)
4-5 radishes, (stems removed, chopped)
3 green onions, (both white and green parts, chopped)
1/2 medium red onion, (finely chopped)
1/2 cup cup pitted Kalamata olives, (halved)
1 bunch parsley, (stems removed, chopped (about 1 cup chopped fresh parsley))
10-15 fresh mint leaves, (stems removed, finely chopped (about 1/2 cup chopped fresh mint))

Steps:

  • To make the zesty mustard vinaigrette, in a small bowl, whisk together the Dijon mustard, lime zest, and lime juice. Add the olive oil, sumac, salt and pepper, and crushed pepper flakes (if using), and whisk again until well-blended. Set aside briefly.
  • To make the tuna salad, in a large salad bowl, combine the tuna with the chopped vegetables, Kalamata olives, chopped fresh parsley and mint leaves. Mix gently with a wooden spoon.
  • Pour the dressing over the tuna salad. Mix again to make sure the tuna salad is evenly coated with the dressing. Cover and refrigerate for half an hour before serving. When ready to serve, toss the salad gently to refresh.

8 ribs celery from the heart with leafy tops, chopped
6 plum tomatoes, chopped
One 15-ounce can chick peas, drained
1 medium onion, chopped
A handful flat-leaf parsley leaves, coarsely chopped
1/2 cup pitted black olives, coarsely chopped
Two 6-ounce cans Italian tuna, drained
2 lemons
1/3 cup olive oil
Salt and freshly ground black pepper

Steps:

  • In a bowl combine celery, tomatoes, chick peas, onions, parsley and olives. Flake tuna and add to the salad. Dress salad with juice of 2 lemons and about 1/3 cup olive oil. Season the salad with salt and pepper and toss.

1 (12-ounce) can or pouch albacore tuna packed in water, drained and flaked
1 cup finely chopped red and yellow bell peppers
1/2 cup finely chopped carrots
1/2 cup finely chopped celery
2/3 cup fat-free mayonnaise
1 tablespoon plus 1 teaspoon honey mustard
2 teaspoons sweet relish
1/8 teaspoon salt
1/8 teaspoon black pepper
Cut bell peppers (for scooping)
Lettuce leaf "cups"

Steps:

  • Place flaked tuna in a medium bowl. Add veggies and mix well. Add mayo, honey mustard, relish, salt, and black pepper. Mix thoroughly. Season with more salt and black pepper, to taste, if you like. Mmmmmm!

A quick & healthy pasta salad recipe with everything you need: veggies, whole grains and lean protein.

2 (6 ounce) cans tuna in water, drained
1/2 cup Miracle Whip
4 ounces nonfat plain yogurt
1/3 cup Italian dressing
4 cups pasta, cooked, rinsed in cool water & drained (any pasta, I used wacky mac veggie spirals)
1 (16 ounce) bag frozen vegetables, cooked and cooled (I used california mix)
1/3 cup parmesan cheese, grated
1 teaspoon herbes de provence
1 dash celery salt
1 dash dill

Steps:

  • Cook the pasta in water with a dash of salt.
  • Combine all other ingredients in a large bowl with a lid.
  • When pasta is cooked through, drain and rinse in cold water.
  • Add pasta to other ingredients & mix thoroughly.
  • Let sit in fridge for several hours before serving.
  • May be served over a garden salad, baked potato, with crackers. This recipe is versatile & can be tweaked to your taste. Could be made gluten free if use gluten free pasta.

Main Dish Salad with Tuna and Vegetables image

For the past couple of decades restaurant menus have named any salad that features tuna, whether fresh or canned, raw or cooked, a Niçoise salad. Few of them resemble the traditional summer salad of Nice made with tomatoes and thin-skinned green peppers, cucumbers and other local vegetables such as fava beans and baby artichokes, olives, anchovies, hard-cooked eggs and oil-packed tuna. I often make a meal of a tuna, potato and vegetable salad. If tomatoes are out of season, I shred a carrot; and if green beans don't look good I use broccoli. Make sure to include lots of minced fresh herbs.

Yield Serves 4 to 6 as a main dish

2 tablespoons red or white wine vinegar or sherry vinegar
1 tablespoon fresh lemon juice
1 small garlic clove, finely minced or pureed in a mortar and pestle
Salt and freshly ground pepper to taste
1 teaspoon Dijon mustard
1/2 cup extra virgin olive oil (can substitute some yogurt for some of the olive oil for a low-fat dressing)
1 pound medium-size Yukon gold or red bliss potatoes, cut in 1/2 inch dice
1 6 1/2-ounce can olive oil packed or water-packed light (not albacore) tuna, drained
1 red or green pepper, cut in thin slices
3 or 4 tomatoes, cut in wedges, or 1/2 pound carrots, shredded or cut in thin wide strips using a vegetable peeler
1/2 pound green beans, trimmed and cut in half if long, or broccoli florets
2 hard-cooked eggs, peeled and cut in wedges
1 small head of Boston lettuce, romaine heart, or 4 to 5 cups mixed baby salad greens, washed and dried
2 to 4 tablespoons chopped fresh herbs, such as parsley, basil, tarragon, chives, marjoram

Steps:

  • In a small bowl or pyrex measuring cup, whisk together the vinegar and lemon juice with the garlic, salt, pepper, and Dijon mustard. Whisk in the olive oil and yogurt if using.
  • Steam the potatoes above 1 inch simmering water for 10 to 15 minutes, until tender. Transfer to a large salad bowl, aand season with salt and pepper. Add the tuna and while the potatoes are hot toss with 1/4 cup of the dressing. Season with salt and pepper to taste.
  • If using green beans, bring a pot of generously salted water to a boil, and fill a bowl with ice water. Add the green beans to the boiling water and cook 4 to 5 minutes, until just tender. Transfer to the ice water, cool and drain. Dry on paper towels. If using broccoli, steam for 5 minutes, refresh with cold water, and dry on paper towels. Add the cooked vegetables to the salad bowl, along with the red or green pepper, carrots if using, and half the herbs, and toss together with another 1/4 cup of the dressing.
  • Assemble the salad: Either add the remaining ingredients to the salad bowl and toss with the remaining dressing, or toss the salad greens and remaining herbs with the remaining dressing and pile onto a platter or wide salad bowl. Top with the potato-tuna-vegetable mixture and garnish with the tomatoes, olives and eggs.

I created this recipe because I wanted something different. I was tired of the same old generic tuna salad and wanted something fairly healthy and cold for dinner on a hot summer evening. So here it is, enjoy!

6 (6 -8 ounce) cans light chunk tuna in water
8 tablespoons regular mayonnaise or 8 tablespoons light mayonnaise
1/2 cup sweet relish (optional)
2 stalks celery, diced
1 medium vidalia onion, diced
2 carrots, cut into half circles
2 cups green peas (fresh or frozen, thaw if frozen)
1 -1 1/2 teaspoon lemon juice or 1 -1 1/2 teaspoon lemon extract
lettuce leaves or spinach leaves, to serve over
3 cups dry medium pasta shells
salt and black pepper
shredded cheddar cheese (optional) or monterey jack cheese (optional)

Steps:

  • Cook pasta to desired doneness according to package directions.
  • Drain well and rinse thoroughly in cold water.
  • Dice celery and onion.
  • Cut carrots into"half circles".
  • Open tuna cans and drain well.
  • Scoop tuna out into a large mixing bowl.
  • Add mayonnaise,salt,pepper and lemon juice to tuna and mix well.
  • Add relish, if using, and mix well.
  • Add celery, onions, carrots, and peas to tuna mixture, mixing well after each addition.
  • Add pasta to tuna and vegetable mixture and gently mix well with a large rounded spatula or similar utensil to avoid tearing pasta.
  • Wash desired amount lettuce or spinach leaves and pat dry between paper towels.
  • Place lettuce or spinach leaves on serving plates or in bowls and top with desired amount of tuna salad.
  • Hint: an ice cream scoop works very well for scooping the tuna salad and making a nice looking dish.
  • Top with shredded cheese, if using.
