These Potato Croquettes are loaded with bacon, and stuffed with two kinds of cheese. Crispy on the outside, soft on the inside and sure to please anyone and everyone.

3 pound potatoes (cut into cubes (I used Russet potatoes))
8 tablespoon butter (unsalted)
½ teaspoon salt (or to taste)
¼ teaspoon pepper (or to taste)
2 tablespoon milk
1 large egg
6 slices bacon (chopped)
¼ cup parsley (fresh, chopped)
4 ounce cheddar cheese (cut in cubes)
4 ounce provolone cheese (cut in cubes)
1 cup all-purpose flour
3 large eggs (beaten)
1 cup breadcrumbs (I used Panko)
vegetable oil (for frying)
1 cup sour cream
2 slices bacon (chopped)
2 teaspoon smoked paprika
2 tablespoon parsley (fresh, chopped)
¼ teaspoon salt (or to taste)
¼ teaspoon pepper (or to taste)

Steps:

  • Place the potatoes in a large pot and fill it with cold water, enough to fully cover the potatoes. Add about 1 tsp of salt to the water and stir. Bring the potatoes to a boil over high heat, then reduce to a medium and cook for about 15 minutes or until the potatoes are fork tender.
  • In the meantime fry the bacon until crispy. If making the dip, fry all the bacon (8 slices in total) together and reserve 1/4 of it for the dip.
  • Drain the potatoes and add them to a large bowl. Add the butter, salt, pepper, milk, egg and mash using a potato masher. Alternatively, you could do all this using a mixer. Stir in the bacon and parsley.
  • Prepare 3 shallow plates, one with the flour, one with the eggs beaten and one with the breadcrumbs. You can also season the eggs and flour with more salt and pepper. For a bit of a smokiness flavor you could add some smoked paprika to the flour.
  • Using a small ice cream scoop, scoop out enough mashed potatoes to roll it into a golf ball size portion. Flatten it in your hand and place a cheese cube in the center. I made my cheese cubes small because I wanted to use both the cheddar cheese and provolone cheese in each croquette. Wrap the mashed potato around the cheese and you can either form it in a ball or a cylinder shape. Place on a plate or cutting board and repeat with remaining ingredients.
  • Roll the croquettes first into the flour, then dip them in the beaten egg and finally roll them through the breadcrumbs, making sure they are completely covered. Place them on a plate or tray until ready to fry. You could also refrigerate them for about an hour, this will ensure that they will hold their shape, though I haven't had any problem with them falling apart.
  • Add vegetable oil to a pot so that it's at least a couple inches deep and heat it over medium high heat.
  • Fry these in batches and only fry about 4 or 5 at a time, it also depends on how big your pot is. You may need to roll them around to make sure they get golden all around. Place them on a towel-lined bowl to cool a little.
  • To make the dip, add all the dip ingredients into a small bowl and stir to combine.
  • Serve the croquettes warm with the dip.

2 eggs
2 tablespoons dried parsley
½ cup grated Romano cheese
salt and pepper to taste
2 tablespoons imitation bacon bits
1 teaspoon dried onion flakes
1 cup Italian-style dried bread crumbs
1 quart vegetable oil for deep frying

Steps:

  • In a large bowl, combine mashed potatoes, eggs, parsley, cheese, salt and pepper, bacon bits and onion flakes. Form mixture into patties, and dredge patties in the bread crumbs.
  • Pour oil 1/2 inch deep in a large, heavy skillet. Heat oil over medium-high heat. Fry patties, flipping to fry them on both sides, until they are golden brown. Serve hot.

2 cups mashed potatoes
2 teaspoons chopped fresh parsley
Coarse salt and ground pepper
1 cup all-purpose flour
1 large egg
1 1/2 cups fresh breadcrumbs
Vegetable oil

Steps:

  • In a large bowl, stir together mashed potatoes and parsley; season with salt and pepper. In a shallow bowl, place flour; season with salt and pepper. In another shallow bowl, whisk egg with 1 tablespoon water. In a third shallow bowl, place 1 1/2 cups breadcrumbs.
  • Form potato mixture into 3/4-by-2-inch logs. Roll in flour, shaking off excess, dip in egg wash, then roll in breadcrumbs to coat. In a heavy medium saucepan, heat 1 1/2 inches vegetable oil over medium-high until hot. In batches, fry croquettes until golden brown on all sides, about 2 minutes per batch, turing as needed. Drain on paper towels.

2 cups cold mashed potatoes
1/2 cup grated Parmesan
2 tablespoons chopped fresh chives
1 tablespoon all-purpose flour
4 large eggs in a bowl
2 cups breadcrumbs
Vegetable oil for cooking

Steps:

  • Mix 2 large egg yolks, 2 cups cold mashed potatoes, 1/2 cup grated Parmesan, 2 tablespoons chopped fresh chives, and 1 tablespoon all-purpose flour in a medium bowl. Roll into walnut-size balls; chill until cold, at least 2 hours.
  • Beat 4 large eggs in a bowl; place 2 cups breadcrumbs in another bowl. Pour vegetable oil into a medium skillet to measure 1/2" (about 2 cups) and heat over medium-high until a pinch of breadcrumbs bubbles immediately when added. Dip potato balls in egg, then roll in breadcrumbs. Working in batches, fry, turning often, until golden brown and crisp, 3-4 minutes. Drain on paper towels.

750g/1lb 10oz floury potatoes, cut into chunks
25g/1oz butter
2 egg yolks plus 2 whole eggs
50g/1¾oz strong hard cheese, such as cheddar, emmental or gruyere
50g/1¾oz plain flour
100g/3½oz panko breadcrumbs
olive oil, for drizzling
salt and freshly ground black pepper

Steps:

  • Simmer the potatoes in lightly salted water for 15 minutes, or until tender. Drain and mash thoroughly, preferably with a ricer. Beat in the butter and 2 egg yolks then finally the cheese and season to taste. Cover and leave until firm and cool enough to handle.
  • Shape the mixture into 14-16 croquettes, weighing around 50g/2oz each.
  • Put the flour, whole eggs and breadcrumbs into three separate shallow bowls and beat the eggs. Dip each croquette in the flour, pat off any excess, then coat in the egg before dipping in the breadcrumbs. Transfer to a baking tray, then leave to cool to room temperature.Preheat the oven to 200C/180 Fan/Gas 6.
  • Drizzle the croquettes with oil and bake for 20 minutes, or until golden-brown.

6 medium potatoes, cooked and mashed
1/2 cup parmesan cheese
8 ounces cream cheese
2 tablespoons butter or 2 tablespoons margarine
1 (1 1/4 ounce) package instant onion soup mix (single serving)
1 dash pepper
milk
2 beaten eggs
3 cups corn flakes, coarsely crushed

Steps:

  • Stir Parmesan cheese into mashed potatoes.
  • Add cream cheese, butter, onion soup mix and pepper; mix well.
  • Add 1 to 2 tablespoons of milk, if mixture is dry.
  • Shape mixture into 10 to 12 balls.
  • Dip into the 2 beaten eggs; roll into the corn flakes.
  • Place on greased baking sheet.
  • Bake at 400°F for 10 to 15 minutes or till hot and crisp.

2 tbsp fresh parsley (chopped)

Steps:

  • Preheat oven to 400F and line a baking sheet with parchment paper. Grease generously with 2 tbsp olive oil. Set aside.
  • In a large bowl combine the mashed potatoes, grated cheese, parsley and an egg. I use my hands to thoroughly mix all ingredients together. Add salt, if needed.
  • Scoop out approximately 1/4 cup of potato mixture and roll in the palms of your hands to shape into a sphere.
  • Prepare 2 bowls for dredging: in the first beat an egg with a tablespoon of water. In the second, place the breadcrumbs. Dredge first in the egg wash, allowing the excess egg to drip off. Then dredge all sides in the breadcrumbs. Dredge a second time in the egg wash and breadcrumbs.
  • Place on the prepared baking sheet. Drizzle the croquettes lightly with the remaining olive oil.
  • Bake for 10 minutes, then flip and bake for another 10-12 minutes until golden. Serve hot.

4 slices white bread, crusts removed
2 cups cold leftover mashed potatoes
6 tablespoons chopped mixed herbs, such as flat-leaf parsley, cilantro, or chives
1 large egg, lightly beaten
1/4 cup all-purpose flour
Salt and freshly ground pepper
2 cups vegetable oil

Steps:

  • Place bread in the bowl of a food processor. Process until crumbs form, about 10 seconds. Transfer crumbs to a medium bowl; set aside. Line one baking sheet with parchment, and another one with a double thickness of paper towels; set both aside.
  • In a small bowl, combine potatoes, herbs, egg, and flour using a fork or spoon. Season with salt and pepper. Using a spoon, scoop mixture into an egg-shaped piece. Using a second spoon, push shape into the bowl of bread crumbs. Roll to coat, and transfer to parchment-lined baking sheet. Repeat with remaining potato mixture.
  • Place oil in a small deep saucepan. Heat over medium heat until a frying thermometer registers 350 degrees. Using slotted spoon, place five croquettes in oil. Cook until golden and puffed, turning once, 4 to 5 minutes. Using slotted spoon, transfer to paper-towel-lined baking sheet. Repeat with remaining croquettes. Serve immediately.

TURKEY AND MASHED POTATO CROQUETTES



Turkey and Mashed Potato Croquettes image

Looking for a fun way to use up Thanksgiving leftovers? Try these crispy/creamy turkey and mashed potato croquettes. Served with cranberry sauce and turkey gravy for dipping, they are a great second round for you and your holiday guests to enjoy.

Number Of Ingredients 12

3 tablespoons unsalted butter
1 small leek, white and light green part thinly sliced
1 tablespoon chopped fresh sage (about 4 leaves), plus 6 whole leaves, for serving
1/2 cup plus 3 tablespoons all-purpose flour
3/4 cup whole milk
3/4 cup finely diced roasted turkey (white and/or dark meat)
1/2 cup mashed potatoes
Kosher salt and freshly ground black pepper
2 large eggs, lightly beaten
3/4 cup panko breadcrumbs
Canola oil, for deep-frying
Cranberry sauce and turkey gravy, for serving

Steps:

  • Melt the butter in a large skillet over medium-high heat. Add the leek and cook until tender and translucent, 2 to 4 minutes. Stir in the chopped sage and 3 tablespoons of the flour, then continue to cook until the flour is completely absorbed into the butter mixture and lightly toasted, 1 to 2 minutes. While continually stirring, gradually pour in the milk and continue to cook until a thick bechamel forms, about 1 minute more. Remove from the heat, then stir in the turkey, mashed potatoes, a pinch of salt and several grinds of black pepper. Taste and adjust the seasoning with more salt and pepper. Transfer to a bowl and refrigerate until completely cool, about 30 minutes.
  • Meanwhile, set up a 3-stage breading station by placing the remaining 1/2 cup flour in a shallow bowl or baking dish, the eggs in a separate shallow bowl or baking dish and finally the panko in a third shallow bowl or baking dish. Season each with a pinch of salt and pepper. Using a 3/4-ounce cookie scoop, divide the chilled filling into about 18 pieces. Roll into uniform balls and/or 2 1/2-inch-long batons. Coat each piece in the flour, shaking the excess off, then dip in the egg to coat. Finally, dip and press into the panko, turning until evenly coated.
  • Fill a large, heavy-bottomed pot with enough oil to go 2 inches up the sides and insert a deep-frying thermometer. Set the oil over medium-high heat and bring to 350 degrees F. Working in 2 batches, deep-fry the croquettes until deep golden brown and heated through, about 2 minutes. Drain on a paper towel-lined plate and season with a pinch of salt. Fry the whole sage leaves until crisp, about 1 minute. Drain on the paper towel line plate as well. Serve with cranberry sauce and turkey gravy for dipping.

1/2 cup (about 4 oz) flour
1 or 2 eggs, beaten with a little salt and pepper
1/2 to 1 cup (4 to 8 oz) dry breadcrumbs
oil, to fry (such as grape seed oil)
1 1/4 lb (about 2 1/2 cups) mashed potatoes, preferably Russets from Idaho (for US peeps)
1 egg
1 tbsp chopped fresh parsley
salt and pepper

Steps:

  • Mix the mashed potatoes, egg, parsley, salt and pepper until well combined.
  • Place the flour, beaten egg and breadcrumbs in three separate trays or bowls.
  • Take a handful of potato mixture, shaping into a log shape or ball, and dip into flour, then egg and then breadcrumbs; repeat (yes, do it twice, it's worth it!) I love these stainless steel trays for dipping.
  • Place on a plate or tray (dusted with cornmeal or breadcrumbs) and refrigerate for about an hour.
  • When ready to cook/eat, heat some grape seed or peanut oil in a small pot, over medium high heat, so that the croquettes may be deep fried.
  • Fry two or three at a time, depending on how many fit, carefully turning (with tongs) once, until evenly browned. Remove, and place on towel-lined plate to cool a little.
  • Continue with the rest of the potato mixture until it is all finished. You can keep the first ones hot in the oven, until the rest are done. Serve hot, on their own with HP Sauce, or as a side.

Baked Cheesy Potato Croquettes - An easy bite-sized snack or side dish made from leftover mashed potato.

2 cups (450g) leftover mashed potato (chilled (mashed potato with minimal cream/butter in is best - see pro tips in the recipe post))
10 x 1.5cm cubes strong cheddar
3/4 cup (90g) plain/all-purpose flour (you can use gluten free all-purpose if required)
1/4 tsp salt
1/4 tsp pepper
1 egg (lightly whisked)
2 cups (100g) panko breadcrumbs (or homemade breadcrumbs made from slightly stale bread - use grated gluten free bread if required)
1/2 tsp smoked paprika
1 tbsp vegetable oil

Steps:

  • Preheat the oven to 200c/400f and put a flat baking tray to one side.
  • Place the flour, salt and pepper in one bowl and mix together
  • Place the egg in a second bowl and lightly whisk.
  • Place the breadcrumbs in the third bowl. Sprinkle the smoked paprika onto the breadcrumbs and then drizzle on the oil. Mix together so the the oil absorbs into all of the breadcrumbs.
  • Take a heaped tablespoon of mashed potato and flatten it in your hand. Place a cube of cheese in the middle and wrap the mashed potato around it. Shape into a cylinder shape.
  • Dip the croquette into the flour, then into the egg and finally into the breadcrumbs, ensuring the croquette is completely covered. Place on the baking tray and repeat with the rest of the mashed potato.
  • Ensure there is a little space between each of the croquettes on the tray, then place in the oven for 12-15 minutes until the croquettes are golden. Don't overcook or the cheese will start to seep out and the croquettes will flatten out a little.
  • Take out of the oven and leave to cool for a few minutes before serving.

This is a great appetizer for party functions. Or to just have in the fridge for brunch. You can prepare the Cod and Potatoes ahead to save time, by soaking Cod in water and boiling your potatoes. That's what I do. The Cod I use is bagged, and salted. Should be available in your super market next to the frozen or fresh fish section.

14 ounces dry salted cod (soaked overnight in water)
5 medium potatoes (peeled, cooked and mashed)
4 eggs
1 medium onion, finely chopped

1 tablespoon garlic powder
5 tablespoons dry white wine or 5 tablespoons any kind broth
1 pinch salt
1 pinch cayenne pepper (optional)

Steps:

  • after soaking cod overnight, change water.
  • place cod in pot with enough water to cover it and boil cod for 15-20 minutes.
  • remove from stove top, drain, let it cool and flake.
  • peel and boil the potatoes in pot with a bit of salt, drain potatoes, and mash.
  • let potatoes cool (I stick them in the freezer for quick cooling).
  • place potatoes, cod, parsley, eggs, onions, nutmeg, garlic powder, pepper in a bowl and mix together.
  • now add the wine or broth until you get a nice mashed potato consistency.
  • taste for salt and add if needed.
  • heat oil in deep fryer or a wok until very hot.
  • reduce heat to medium, high.
  • grab mixture with a tablespoon, with an other tablespoon grab same mixture working with tablespoons from back to front, until you get an oval shape patty.
  • drop it into very hot oil.
  • and fry until golden brown, turning patty to brown on both sides.
  • remove from oil and place on paper towel to drain.
  • Note: do NOT place more then 6 patty's into oil so not to cause oil to over flow.

1/4 cup milk
1/2 cup seasoned bread crumbs
1/2 cup panko
Canola oil, for frying
1/2 cup mayonnaise
1/4 cup cranberry sauce
1/2 orange, juiced

Steps:

  • Combine mashed potatoes, Parmesan, bacon, 1 tablespoon parsley, 1 egg, 2 tablespoons flour, salt and pepper. Using 2 tablespoons or a small ice cream scoop form into balls then flatten slightly.
  • In a pie plate combine the other egg with milk. Set up a breading station with one plate of flour, then the egg mixture then the bread crumbs and panko. Place croquettes in flour, dip in egg then roll in breadcrumbs.
  • Heat canola oil to 360 degrees F and fry for about 4 minutes until browned on all sides. (You can also shallow fry these in a pan with about 1 inch of oil then flip them.)
  • Place on a paper towel lined plate. Sprinkle with a bit of salt.
  • In a small bowl combine mayonnaise, cranberry sauce, orange juice, remaining parsley, and salt and pepper. Serve with croquettes while they're hot.

  • In a large bowl, beat 1 egg. Add the beef, potatoes, onion, salt and pepper; mix well. Shape into 12 balls. Beat remaining egg; dip balls into egg, then roll in the cracker crumbs.   • Heat 3 tablespoons oil in heavy large skillet over medium heat. Add onions; sauté until golden, about 15 minutes.
