This delicious Moroccan fish recipe takes the fish dinner game to a new level of delicious! Braised cod recipe in a saucy chickpea, tomato, and bell pepper medley and lots of warm Moroccan flavors from Ras El Hanout, paprika and cumin.

Number Of Ingredients 15

Extra Virgin Olive Oil (I used Private Reserve EVOO)
8 garlic cloves, divided (4 minced cloves and 4 sliced)
2 tbsp tomato paste
2 medium tomatoes, diced
1 red pepper, cored, sliced
1 15-oz can chickpeas, drained and rinsed
1 1/2 cup water
Large handful fresh cilantro (about 1 cup fresh cilantro)
Kosher salt and black pepper
1 1/2 tsp Ras El Hanout, divided
1 1/2 lb cod fillet pieces (about 1/2 inch in thickness)
3/4 tsp paprika
1/2 tsp cumin
Juice of 1/2 lemon
1/2 lemon, sliced into thin rounds

Steps:

  • In a large pan with cover, heat 2 tbsp extra virgin olive oil (I used Private Reserve) over medium heat until shimmering but not smoking.
  • Add minced garlic and cook very briefly, tossing regularly, until fragrant. Add tomato paste, diced tomato, and bell peppers. Cook for 3 to 4 minutes over medium heat, tossing frequently.
  • Now, add chickpeas, water, cilantro, and sliced garlic. Season with kosher salt and pepper. Stir in 1/2 tsp Ras El Hanout spice mixture. Raise heat, if needed, and bring to a boil. Lower heat. Cover part-way and let simmer for about 20 minutes. (Check occasionally and add a little water if needed.)
  • Meanwhile, in a small mixing bowl, combine remaining Ras El Hanout with cumin and paprika. Season the fish with kosher salt and pepper and the spice mixture on both sides. Add a generous drizzle of extra virgin olive oil. Work the fish to make sure it's well coated with the spices and the olive oil.
  • When ready, add the season fish to the pan, and make sure to nestle the fish pieces into the saucy chickpea and tomato mixture. Ladle a bit of the sauce on top of the fish. Add lemon juice and lemon slices. Cook another 10 to 15 minutes over medium-low until the fish is fully cooked and flaky. Garnish with more fresh cilantro.
  • Serve immediately with your favorite crusty bread, grain, or rice.

Fish fillets poached in a spicy tomato sauce, an abundance of vegetables and chickpeas. This Moroccan Fish Tagine is the perfect topping for couscous and it is done in 30 minutes! Delicious and healthy doesn't get any better!

2 tbsp olive oil
1 medium onion, sliced
4 bell peppers (red, yellow, orange & green) sliced
2 tsp smoked paprika
1 tbsp ground cumin
1/2 tsp ground turmeric
1/2 tsp coriander seeds, lightly crushed
1/4 tsp chilli pepper/cayenne (optional)
1 tomato, skinned and diced
1 head of garlic, finely diced
1-2 tbsp harissa
1 small can of chickpeas (approximately 1 cup)
1 cup of water
1 tsp bouillon powder
1 bunch of cilantro, washed, dried and roughly chopped
4 frozen cod fillet (or any firm white fish.)
A pinch of freshly ground pepper
salt (only if needed)

Steps:

  • Heat the tagine. Set the tagine on a low heat until warm; once the tagine is warm, increase the heat to a medium-high. If you're not using a tagine pot, skip the warm-up on low and heat your pot at medium-high.
  • Sauté onions & peppers. Coat the tagine with a generous amount of olive oil (about 2 tbsp or more). Add in the onions, sauté until translucence, then add the bell peppers. Cover the tagine and cook for 3 minutes.
  • Add spices, tomatoes, garlic & harissa. Once the bell peppers have begun to soften, add in the spices and stir to coat the peppers and bloom the flavours. Add the tomatoes and garlic. Cover the tagine and simmer for 3-4 minutes ⏤ if the tomatoes are really dry, add 2 tbsp of water from your water cup.
  • Toss in the chickpeas, bouillon powder, & water. Open the lid, add the chickpeas and bouillon powder and give everything a good stir. Pour the water over the mixture and cover the tagine for 10 minutes.
  • Time for cilantro & fish. Remove the lid and taste the sauce; you may wish to adjust the salt at this point. I don't usually add any salt to the dish since the bouillon powder is pretty salty already, but it's a good time to check. Stir in the cilantro, then place the fish on top of the sauce. Cover the tagine, and simmer for 7 minutes.
  • Braise, Simmer & Cover. Now the fish has been cooking for 7 minutes and is becoming soft. Scoop some of the sauce on top of the fish and move the chickpeas to the side so the fish can be submerged into the sauce. Cover and continue cooking for 4 minutes
  • Serve and enjoy.

2 tablespoons oil
1 large onion, sliced into wedges
1 clove garlic
2 teaspoons grated fresh ginger
1 (50 g) packet green curry paste
1 (400 ml) can coconut milk (I use light)
1 cup water
1 tablespoon lime juice
1 tablespoon fish sauce
600 g fish, a white firm,strong flavoured fish is best,cut into about 2 1/2 cm chunks (we used trevally)
1 green chili, sliced
400 g assorted green vegetables (we used capsicum, snow peas, bok choy, green beans. You could also use zucchini, asparagus, brocolli)
3 spring onions, finely sliced
1/2 cup chopped fresh coriander (cilantro)
1/2 cup basil leaves (packed)

Steps:

  • Heat the oil in a large wok, and fry the onion, ginger and garlic for about 5 minutes or until softened.
  • Add the green curry paste, and fry for another 2 minutes.
  • Add the coconut milk, water, lime juice and fish sauce and bring to the boil.
  • Reduce to a simmer and add the fish, and any of the longer-to-cook vegetables you have chosen and cook for about 5 minutes (I added the beans along with the fish).
  • Also add about half the fresh coriander.
  • Add the remaining softer vegetables, and cook for a further 2-3 minutes, being careful not to overcook the fish, or knock it around too much as you stir through the vegetables.
  • Stir through the fresh herbs gently.
  • Serve in deep bowls over steamed rice, scattered with the fresh spring onions.

2 pounds red snapper fillets
2 teaspoons salt
1 teaspoon black pepper
2 scallions, chopped
2 tablespoons curry powder
2 tablespoons butter
1/4 cup olive oil
1 to 2 Scotch bonnet peppers, seeded and chopped
1 clove garlic, crushed
2 cups coconut milk
1 cup water
2 tomatoes, roughly chopped
2 onions, sliced 1/4-inch thick
10 cilantro sprigs

Steps:

  • Cut the red snapper into small pieces and place in a bowl. Season with the salt, black pepper, scallion, and curry powder.
  • Allow the fish to marinate in the refrigerator for at least 1 hour.
  • When you are ready to proceed, heat the butter and oil in a large saute pan. Add the fish and saute until it is lightly browned on both sides. Add the peppers, garlic, coconut milk, water, tomatoes, and onions. Cover the fish and bring to a boil. Reduce the heat, cover the pan, and simmer until the fish is tender, about 20 to 25 minutes, adding more water if necessary. Also, add a touch more curry, if necessary, for your taste. Finish with fresh cilantro leaves.
  • Serve this splendid dish with white rice and fried plantains.

1 roasted red pepper, skin & seeds removed
3 garlic cloves
1 red chili
3 teaspoons coriander seeds, ground
3 teaspoons cumin seeds, ground
3/4 cup coriander (50gms)
3/4 cup Italian parsley
10 mint leaves

1/2 a preserved lemon (or you can use rind and flesh of 1 small lemon, but discard pith)
1/4 cup olive oil
1 kg red snapper fillet
1 big purple onion, finely sliced
oil (for frying)
560 ml coconut cream
250 g frozen spinach, thawed

Steps:

  • Blitz all curry paste ingredients together in processor to smoothish consistency.
  • Preheat oven 180°C.
  • Portion fish and marinate in paste for a few mins (reserve about 2Tbs of the paste).
  • Using a big frying pan, sauté onions in olive oil and then push to side of pan.
  • Add marinated fish and lightly brown the fish on each side for about 1 minute and then evenly distribute onion back over the top.
  • Add coconut cream and 2 tablespoons of remaining curry paste and continue to cook on medium heat for about ten minutes.
  • Sprinkle the spinach over the top and wack in the oven for a further ten minutes; the sauce will reduce a little and thicken. The cooking time can vary with the thickness of fillets, ready when fish falls apart easily with knife.
  • Garnish with fresh coriander and a squeeze of lemon.
  • Best served with rice or couscous.

3 tablespoons toasted cumin seeds
12 peeled crushed garlic cloves
1 bunch chopped fresh parsley
3 teaspoons salt
3 lemons, juice of
2 (3 lb) cleaned scaled red snapper
3 sliced peeled carrots
12 sliced new potatoes
4 sliced tomatoes
1 sliced sliced seeded stemmed green bell pepper
1 sliced lemon
5 whole mild green chilies (such as anaheims)
1/2 cup water
1/2 cup extra virgin olive oil

Steps:

  • Grind together cumin seeds, garlic cloves, chopped parsley and salt with a mortar and pestle.
  • Transfer to a small bowl and mix in the lemon juice.
  • Place red snappers in a large, shallow baking pan and rub spice mixture all over fish.
  • Cover with plastic wrap and marinate in refrigerator for at least 30 minutes. Preheat oven to 500°.
  • Remove fish from refrigerator and scatter carrots, potatoes, tomatoes, green bell pepper, sliced lemon, green chiles (such as anaheims) over and around fish.
  • Pour water and extra-virgin olive oil over fish and vegetables.
  • Bake, basting often, until fish is cooked through, about 30 minutes.

2 teaspoons ground cumin
2 teaspoons cumin seeds
1 tablespoon lemon juice

1 1/2 tablespoons olive oil

1 1/2 lbs red snapper, whole fish
4 shallots, chopped
1/3 cup Italian parsley, chopped

1 small Spanish onion, chop fine
10 ounces corn kernels, drained

Steps:

  • Combine coriander, cumin,lemon juice, honey, oil, salt and pepper in bowl, mix well.
  • Make 3 diagonal incisions (3-4cm long) on both sides of the fish.
  • Place a Tbsp of spice paste in fish cavity, coat both sides with remaining spice paste. Place fish in a large oven cooking bag, sprinkle with shallots & parsley.
  • Seal bag with a tie, prick a few holes just below the tie.
  • Place fish on baking tray, bake in moderate over (180C)or 375F about 20 mins or until just cooked through.
  • Serve with couscous.
  • Couscous:.
  • Combine water, salt, butter & couscous in heatproof bowl. Cover, stand 10 mins or until water is absorbed.
  • Stir in remaining red bell pepper, spanish onion,corn, and currants or raisins.
