Apple cinnamon quinoa breakfast muffins image

Wholesome mini muffins with quinoa, oats and apples, naturally sweetened with maple syrup.

1 cup cooked quinoa
1 cup oats (uncooked, I used old fashioned)
1 teaspoon ground cinnamon
1/4 teaspoon salt
2 eggs, lightly beaten
1/4 cup maple syrup
1 teaspoon vanilla extract
1 cup finely chopped apples

Steps:

  • Preheat the oven to 350. Spray a mini-muffin tin with cooking spray.
  • Mix quinoa, oats, cinnamon and salt together in a large bowl.
  • Separately, beat the eggs in a small bowl. Stir in maple syrup.
  • Add the egg mixture to the quinoa mixture and stir to combine. Fold in the apple pieces.
  • Fill each mini-muffin cup all the way full. Use your spoon to pack each one down a little bit.
  • Bake at 350 for 15-20 minutes.

Skinny Quinoa Muffins: 3 Ways image

All we have to do is make our basic muffin batter which is just oats, quinoa flakes, a touch of coconut sugar and some baking powder, then add in our wet ingredients which is applesauce, non-dairy milk and eggs. That's it.

1 1/2 cups oat flour*
1/2 cup quinoa flakes
1/4 cup oats
3 tablespoons coconut sugar (or brown sugar)
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsweetened applesauce
1/2 cup + 2 tablespoons non-dairy milk
1 egg
1/2 cup - 1 cup blueberries
Zest of 1 lemon
1 cup shredded carrots
1/ w cup chopped walnuts
1/2 cup coconut flakes
1/2 cup dark chocolate chips

Steps:

  • In a large mixing bowl, whisk together the flour, quinoa flakes, oats, sugar, baking powder and salt. Set aside.
  • Beat together the wet ingredients in a separate mixing bowl. Add to the dry and mix to combine. The consistency should be that of a runny oatmeal. Let the batter stand while you preheat the oven to 375 degrees F. If by the time the oven is ready the batter seems too thick (you should be able to still stir it easily) add more milk 1 tablespoon at a time.
  • Just before baking, folding in your desired add-ins.
  • Spray a muffin tin with nonstick spray and fill the wells 2/3 of the way full. Bake on the center rack for 12 - 14 minutes until muffins are starting to brown and no longer soft to the touch.
  • Remove and let cool in the pan for 3 - 5 minutes then transfer to a wire rack and cool completely.
  • Enjoy!

Quinoa banana muffins are the perfect breakfast or healthy snack. Easy to make and a great use for leftover quinoa! Gluten free, vegan, dairy free and simple!

3 bananas ($0.66)
2 tbsp. ground flax ($0.14)
1/4 cup water ($0.00)
1 cup almond flour ($1.46)
1/2 cup oat flour ($0.20)
3 tbsp. coconut sugar ($0.21)
1 tsp. baking powder ($0.06)
1.5 cup quinoa, cooked ($0.56)
2 tbsp. peanut butter ($0.25)
1/4 cup coconut flakes, unsweetened ($0.30)
1/4 cup dairy free chocolate chips ($0.31)

Steps:

  • If needed, cook and cool the quinoa. See below for instructions.
  • Preheat the oven to 375. Line a muffin tin with 12 silicone muffin liners (or use the parchment paper liners)
  • Mash the banana with a fork.
  • Add the ground flax and water to the mashed bananas and stir well.
  • Add the almond flour, oat flour, coconut sugar and baking powder to the banana mixture and stir well.
  • Add the cooked, cooled quinoa to the bowl and stir well to incorporate.
  • Add the peanut butter to the batter and stir well, making sure it's fully incorporated and mixed in.
  • Add 3 tbsp. of the shredded coconut and all of the chocolate chips to the batter and stir to distribute.
  • Use a 1/4 cup measuring cup to divide the batter into the muffin liners. If you have leftover batter, try to divide it evenly among the muffins.
  • Top the muffins with a sprinkle of shredded coconut.
  • Bake at 375F for 30 minutes.
  • Take out and allow to cool completely. Remove from liners and enjoy!

1 cup low-fat buttermilk
3 Tbs. flaxseed meal
1 cup raisins
2 cups gluten-free all-purpose baking mix
2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. ground cinnamon
2 large eggs
1/3 cup oil
1/2 cup honey
1/2 cup sugar
1 cup chopped walnut pieces (optional)

Steps:

  • 1. Combine quinoa, buttermilk, and flaxseed meal in medium bowl. Let stand 30 minutes. 2. Place raisins in heat-proof bowl, and cover with boiling water. Let stand 10 to 30 minutes to plump. Drain, and set aside. 3. Preheat oven to 350°F. Line 14 muffin cups with paper liners. 4. Sift together baking mix, baking soda, salt, and cinnamon in large bowl. 5. Beat eggs with whisk in bowl. Whisk in oil, then honey and sugar. Stir in quinoa mixture. Fold in baking mix mixture until just combined. Stir in raisins and walnuts (if using). Fill muffin cups three-quarters full with batter, and bake 20 to 25 minutes, or until browned on top and toothpick inserted in center of 1 muffin comes out clean. Cool before serving. (Muffins have a slight baking soda taste when warm.)

2 1/2 cups all-purpose flour (spooned and leveled)
1 cup packed dark brown sugar
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground nutmeg
1 1/2 teaspoons coarse salt
1 cup golden raisins
6 tablespoons extra-virgin olive oil
2 large eggs
2/3 cup skim milk
3 cups shredded carrots (about 8 carrots)
2 medium ripe bananas, mashed

Steps:

  • Preheat oven to 400 degrees. Line a 12-cup muffin pan with 10 paper liners.
  • In a large bowl, whisk together flour, brown sugar, baking soda, baking powder, nutmeg, and salt until there are no lumps. Stir in 1 3/4 cups oats and raisins. Add oil, eggs, milk, carrots, and banana, and stir until blended, being careful to not overmix.
  • Fill each muffin cup with 3/4 cup batter. Sprinkle remaining 1/4 cup oats over muffins. Bake until a toothpick inserted in center of muffin comes out clean, about 25 minutes. Serve muffins warm or at room temperature.

  • Preheat oven to 350 degrees F (175 degrees C). Grease muffin pan or line with paper muffin liners.
  • In a large bowl, mix together flour, flax seed, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon. Add the milk, eggs, vanilla and oil; mix until just blended. Stir in the carrots, apples, raisins and nuts. Fill prepared muffin cups 2/3 full with batter.
  • Bake at 350 F (175 degrees C) for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

1/4 cup vegetable oil, such as safflower, plus more for pan
2 cups all-purpose flour, plus more for pan
3/4 cup packed dark-brown sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 cup raisins
3/4 cup whole milk
1 large egg
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350 degrees. In a medium saucepan, bring quinoa and 1 cup water to a boil. Reduce to a simmer; cover, and cook until water has been absorbed and quinoa is tender, 11 to 13 minutes.
  • Meanwhile, brush a standard 12-cup muffin pan with oil; dust with flour, tapping out excess. In a medium bowl, whisk together flour, sugar, baking powder, salt, raisins, and 2 cups cooked quinoa; reserve any leftover quinoa for another use.
  • In a small bowl, whisk together oil, milk, egg, and vanilla. Add milk mixture to flour mixture, and stir just until combined; divide batter among prepared muffin cups.
  • Bake until toothpick inserted into the center of a muffin comes out clean, 25 to 30 minutes. Cool muffins in pan, 5 minutes; transfer to a wire rack to cool completely.
