Steps:
- To make the meat sauce, heat 2 tbsp olive oil in a frying pan and cook 750g lean beef mince in two batches for about 10 mins until browned all over.
- Finely chop 4 slices of prosciutto from a 90g pack, then stir through the meat mixture.
- Pour over 800g passata or half our basic tomato sauce recipe and 200ml hot beef stock. Add a little grated nutmeg, then season.
- Bring up to the boil, then simmer for 30 mins until the sauce looks rich.
- Heat oven to 180C/fan/160C/gas 4 and lightly oil an ovenproof dish (about 30 x 20cm).
- Spoon one third of the meat sauce into the dish, then cover with some fresh lasagne sheets from a 300g pack. Drizzle over roughly 130g ready-made or homemade white sauce.
- Repeat until you have 3 layers of pasta. Cover with the remaining 390g white sauce, making sure you can't see any pasta poking through.
- Scatter 125g torn mozzarella over the top.
- Arrange the rest of the prosciutto on top. Bake for 45 mins until the top is bubbling and lightly browned.

Steps:
- For the meat sauce: In a stockpot or Dutch oven, combine the beef (do not brown first), tomato sauce, tomato paste, chili powder, sugar, salt, pepper, garlic salt, bay leaves and onion. Add 2 cups water. Mix until combined. Cover and simmer over medium-low heat for 1 1/2 to 2 hours, stirring occasionally. Stir in the vinegar and simmer for another 30 minutes.
- For the lasagna: Preheat the oven to 375 degrees F. Spray a 9-by-13-inch baking dish with nonstick cooking spray and place the dish on a rimmed baking sheet.
- In a medium bowl combine the ricotta, basil, parsley, garlic salt, red pepper flakes, if using, and egg and stir until well blended.
- Spread 2 cups meat sauce across the bottom of the prepared baking dish. Place 4 noodles over the sauce-it is okay if they overlap slightly. Dollop 2/3 cup of the ricotta mixture on the noodles, then spread it in an even layer. Top the ricotta with 4 slices ham, then 4 slices provolone. Sprinkle 1 cup mozzarella over the provolone. Repeat the layering-sauce, noodles, ricotta, ham, provolone, mozzarella-twice more. Top with another layer of noodles, then the Parmesan and the remaining mozzarella.
- Cover the baking dish tightly with foil. Bake until the dish is bubbling and the noodles are cooked (you can test by poking with a sharp knife to make sure the noodles are soft), about 50 minutes. Remove the foil and return to the oven until the cheese is bubbling and golden brown, another 10 to 15 minutes. Let the lasagna rest for 10 minutes, then serve warm.
LASAGNA IN A SKILLET - IN ABOUT 30 MINUTES!
What I love about this recipe, is that it's possible to have lasagna within approx. 30 minutes and only have one pan to wash! It's an easy weeknight recipe to prepare. Comfort food with ease. :) This is an adaption from Cook's Illustrated. *Note: I use preshredded cheeses for quick prep. The 30 minute time is what the original recipe states, and the time it takes me to prepare - however, the time is an approximation and may take a bit longer. Enjoy!

- Take the skillet off the heat source and stir in half of the mozzarella and half of the parmesan. Season with salt and pepper.
- Dot heaping tablespoons of ricotta over the noodles, then sprinkle with remaining mozzarella and parmesan.
- Cover and let stand off heat until the cheeses melt (about 3-5 minutes).

- This recipe has a few steps to complete before you can assemble, but hang in there - the results are worth it!
- You’ll want to start off by draining the ricotta, there’s nothing worse than a watery and runny lasagna. Add ricotta to a fine mesh sieve placed over a medium sized bowl. Let drain for about one to one and a half hours. Once drained, combine the ricotta with eggs, salt and pepper and set aside.
- Next, the zucchini. Pre-heat the oven to 400°F and line two large baking sheets with parchment paper. Place the sliced zucchini in a mixing bowl and scatter with kosher salt, coating all the sides. Wait about ten minutes for some of the moisture to be pulled out and then blot them dry - do not rinse as this will just add moisture back into the zucchini. Zucchini contains a lot of water, salting them prior to roasting will further prevent the lasagna from being too watery. Arrange the zucchini on the prepared baking sheets, place them in the preheated oven for 20 minutes, remove and turn the oven down to 350°F.
- Onto the green onion pesto and pork. To a food processor add green onions, chives, basil, parmesan, pine nuts and salt. Pulse for about 30 seconds or until everything is fairly well chopped. While the motor is running, slowly drizzle in all of the olive oil to create a vibrant rich green pesto. In a large skillet over medium high heat, add ground pork. Break it up with a wooden spoon and stir until it is fully cooked and browned. Remove from heat and drain the pork of any fat. Combine browned pork and pesto and mix until all the pork is nicely coated. Set aside.
