4 boneless skinless chicken breasts
4 tablespoons olive oil
28 ounces rotel
8 ounces cream cheese, cubed
1 cup cream
salt and pepper

Steps:

  • Salt and pepper the chicken, and cook in large skillet in olive oil.
  • Once cooked through, remove chicken, and add rotel. Stir to remove all the bits from the bottom of pan. When the tomatoes are simmering add the cream cheese and cream.
  • Stir until all is melted, and simmering gently. Add chicken back in, and cover. Cook over low for 5 minutes. Serve hot.
  • Great over green beans.

28 ounces crushed tomatoes
1 1/2 teaspoons garlic powder
1/2 teaspoon oregano
1/2 teaspoon onion powder
5 tablespoons olive oil
2 teaspoons sugar substitute
1/3 teaspoon salt
3 garlic cloves
1/2 small red bell pepper
6 boneless skinless chicken breasts
salt and pepper
1 1/2 cups mozzarella cheese

Steps:

  • Put 2 tbsp olive oil in pan. Crush garlic and finely chop bell pepper. Add to pan.
  • Saute slowly till soft. Add crushed tomatoes, seasoning and sweetener. Let sauce simmer 7 minutes. Then add 1 more tbsp olive oil and simmer 3 more minutes.
  • Saute chicken in 2 tbsp olive oil with salt and pepper. Once done place in pan and cover each breast with 1/4 cup cheese.
  • Place in broiler till melted then top with marinara sauce.

1 large onion
4 garlic cloves, chopped fine
1 tablespoon olive oil
8 ounces green chilies
3 (15 ounce) cans tomato sauce
1 (15 ounce) can rotel
1 (15 ounce) can diced fire-roasted tomatoes
1 (14 ounce) can beef broth
3 tablespoons chili powder
2 teaspoons salt
2 tablespoons cumin
3 teaspoons oregano
1 teaspoon pepper
1/2 teaspoon cayenne

Steps:

  • Saute ground beef, onion and garlic in the olive oil until cooked.
  • Add all remaining ingredients to big pot and add beef and onions. Simmer 2-3 hours.
  • Freezes well.

  • Combine lemon juice, olive oil, garlic, oregano and salt in desired quantities.
  • Marinate chicken breasts in seasoning mixture for two hours.
  • Seal in a foil packet and bake at 350 degrees for 20-30 minutes or until chicken is cooked through.

1 cup grated cheese
1 lime

Steps:

  • Puree first three ingredients.
  • Heat olive oil, and add puree, chili powder, cumin and tomato paste. Saute. Stirring constantly for 1 minute. Add broth and simmer for 15 minutes.
  • Add chicken, lime, salt, and pepper. Simmer for 1-2 hours.
